SALMON, PEA AND BACON PASTA

- Cook pasta to al dente according to package directions. Mine boiled for 9 minutes. Drain and set aside. Reserve about 1½ cups of pasta water and set aside.
- In a heavy bottom skillet, add butter and place over medium heat. Add bacon and fry until crispy. Place on paper towel, set aside for later.
- Season salmon filet with salt and pepper. Using the same pan you used to fry bacon, grease and all, add the salmon non-skin side down (if yours has skin on it) and fry until crispy, about 5-8 minutes. Turn over and fry the skin or other side for a few additional minutes until salmon is cooked through. It should flake easily with a fork. Remove salmon, flake with a fork, and set aside.
- Using a paper towel, wipe up any left over grease from the pan. Place it over low heat and add the onions and garlic. Saute for a few minutes. Next add cooked pasta, frozen peas, and about 1 cup of pasta water. Let simmer for just a minute or so until the peas thaw. Next add chopped bacon, flaked salmon, lemon zest, parsley, and salt and pepper to taste. Gently stir. Add more water if pasta seems dry. Top with shaved parmesan cheese and enjoy.
ROAST SALMON WITH PEAS, POTATOES & BACON

- Heat oven to 220C/200C fan/gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. Roast for 20 mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.
- Remove the tin from the oven, push the potatoes and bacon to the sides and lay the salmon in the middle. Brush with remaining oil, season, then return to the oven and cook for 20 mins more until the salmon is just cooked through. Meanwhile, cook the peas in boiling water for 2 mins and drain.
- When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar, stir through the mint and season to taste. Spoon around the salmon and serve.

BAKED SALMON WITH LEMONY ORZO AND BASIL-BACON PEAS
Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking pan with aluminum foil or parchment paper.
- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain.
- Mix garlic powder, 4 leaves basil, and 1/2 teaspoon salt together in a small bowl.
- Place salmon skin side-down on the prepared pan. Brush with 1 tablespoon butter; sprinkle garlic-basil mixture on top.
- Bake in the preheated oven until salmon flakes easily with a fork, about 8 minutes. Remove and let rest.
- Place bacon in a skillet over medium-low heat and cook, stirring often, until crispy, about 4 minutes. Add 1/2 teaspoon salt and peas. Season with pepper. Cook and stir until peas are heated through, 3 to 4 minutes.
- Whisk remaining 3 tablespoons butter, juice from 1 lemon, and remaining 1 teaspoon salt together in a bowl. Pour over the cooked orzo and toss to coat. Season with pepper.
- Divide orzo among 4 plates; top with salmon and place peas on the side. Garnish with the remaining basil. Drizzle remaining lemon juice on top.

Steps:
- Bring a pan of water to the boil and cook the fusilli according to the pack instructions.
- Meanwhile, heat a knob of butter in a saucepan, then add the shallot and cook for 5 mins or until softened.
- Add the peas, salmon, crème fraîche and 50ml water. Crumble in the stock cube.
- Cook for 3-4 mins until cooked through, stir in the chives and some black pepper. Then stir through to coat the pasta. Serve in bowls.
