1 cup salsa
2 tablespoons extra-virgin olive oil
1/4 cup honey
1/4 cup tequila
Grilled meat

Steps:

  • Blend salsa with olive oil, honey, and tequila in a food processor. Transfer mixture to a small pot; bring to a boil. Cook until reduced to 1 cup, about 10 minutes. Brush onto grilled meat. To store, let cool and refrigerate.

1 onions white onion, chopped
5 garlic cloves, chopped
1/2 cup unsweetened orange juice, unsweetened sour or 1/3 cup lime juice
1/2 teaspoon oregano
1/2 teaspoon cumin seed
1/4 teaspoon salt
1/2 cup water

Steps:

  • Put onions, garlic, orange juice (or lime juice) and water in a blender.
  • Set blender on "liquify" setting and process. Crush all dry ingredients together and add them to blender.
  • Process for one minute more.
  • Ways to use:.
  • Marinate meat (chicken, beef, pork or fish) for at least one hour in mixture. It is better to marinate meats overnight. Brush meat frequently with the sauce while cooking.

  • Combine all ingredients in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes.

1/2 cup olive oil
8 large cloves garlic, thinly sliced crosswise
2/3 cup fresh sour orange juice (or 1/2 cup fresh lime juice and 3 tablespoons fresh grapefruit juice)
1/3 cup water
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 1/2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped fresh cilantro or flat-leaf parsley

Steps:

  • Heat olive oil in deep saucepan over medium heat. Add garlic, and cook until fragrant and pale golden brown. Do not let brown too much, or else garlic will become bitter.
  • Stir in sour orange juice (or lime juice and grapefruit juice), water, cumin, oregano, salt and pepper. Stand back, because the sauce may spatter. Bring to rolling boil. Correct the seasoning, adding more salt and pepper, if needed. Let cool to room temperature, and then stir in cilantro or parsley. Store in bottle or jar with tight-fitting lid; shake well before serving. Serve with grilled pork, chicken, seafood and vegetables.

I like it in a sandwich with a veggie burger or scrambled eggs, and as a topping for meatloaf. It should be mentioned that this is a fresh 'pico de gallo' style salsa and should be kept refrigerated and used within a few days since it is not preserved.

1 medium onion
2 jalapenos
1 yellow bell pepper
3 tablespoons barbecue sauce
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Use an extremely sharp knife and slice the onion into matchstick sized strips; and the yellow pepper, and jalapeños into rice sized pieces. You may remove the seeds and ribs of the jalapeños if you prefer a milder taste.
  • Mix all ingredients in a bowl and serve.
