CHINESE SALT AND PEPPER CHICKEN WINGS
Chinese Salt and Pepper Chicken is a restaurant takeout favorite and it's easy to make at home. I love this spicy version with Szechuan peppercorns and stir-fried hot chile peppers and garlic.

- In a large bowl, combine the wine, ginger, minced garlic, and salt and stir to mix. Add the chicken and toss to coat. Let marinate for at least 20 minutes or overnight (cover and refrigerate if more than 20 minutes).
- In a large, heavy skillet, heat the oil until it shimmers (about 350°F).
- Remove the chicken from the marinade (discard the marinade) and toss it with the potato starch, coating well.
- Shake excess potato starch off of the chicken pieces and drop them into the hot oil. You can do 5 to 7 pieces of chicken at a time, but don't crowd the skillet. Plan to cook the chicken in 2 or 3 batches. Cook for about 5 minutes, until the bottoms of the chicken pieces are golden brown. Turn the chicken over and cook for about 5 minutes more, until golden brown on the second side. Transfer the cooked chicken pieces to a paper towel-lined plate to drain. Cook the remaining chicken pieces in the same manner.
- Once all of the chicken has been fried, heat a heavy skillet over medium-high heat. Add the butter and let it melt. Once it is sizzling and begins to foam, add the chiles and garlic and cook, stirring frequently, until the chiles begin to brown, 1 to 2 minutes.
- Put the fried chicken on a serving platter and then dump the fried chiles and garlic over the top. Sprinkle with the white pepper and the pepper-salt and serve immediately.

CRISPY BAKED SALT AND PEPPER CHICKEN WINGS
Crispy Baked Salt and Pepper Chicken Wings - these will probably be the simplest and most amazing wings you'll ever make. Generously seasoned with salt and pepper and baked to a crisp perfection!

- Preheat oven to 425 F degrees. Line a baking sheet with parchment paper.
- Place all wings in a medium sized bowl. Drizzle the wings with the olive oil and toss well, making sure each wing is coated with a bit of olive oil.
- Sprinkle the chicken wings with the pepper and salt, and toss well.
- Arrange the wings in a single layer on the prepared baking pan. Bake for about 40 to 45 minutes or until they're golden crisp.
- Sprinkle with more salt and pepper if preferred and garnish with some chopped parsley.
- Serve while warm.

AMAZING SALT AND PEPPER CHICKEN WINGS
Amazing, mind-blowing salt and pepper chicken wings. Green onion, garlic and sesame oil make these the most amazing wings you will ever eat.

- Preheat oven to 450 degrees.
- Combine salt and pepper together in a bowl. Place chicken wings on a lightly oiled baking sheet. Sprinkle the wings with the salt and pepper, then shake on the baking tray to cover completely.
- Bake for 15 minutes then turn and bake for another 15-20 minutes until crispy and cooked through. We like our wings very crispy.
- As soon as the wings are close to being done, heat the sesame oil in a skillet over medium heat then add the garlic and onions. (jalapeno as well if you are adding it in.)
- Cook until the garlic has browned slightly.
- Remove chicken wings from oven and place in a large bowl.
- Toss the chicken wings with the garlic oil until completely coated.
- Place on a serving platter, spooning any leftover garlic oil over the top.
- Serve and enjoy!

HOT-PEPPER WINGS
Steps:
- Season 3 pounds chicken wings with salt and pepper. Bake at 425 degrees F until golden, about 40 minutes. Melt 4 tablespoons butter with a 2-ounce bottle of green hot sauce. Pour over the wings and bake 15 more minutes. Toss the wings with 1/2 cup each chopped cilantro and scallions. Top with sliced pickled jalapenos.

- Put wings in a shallow bowl, sprinkle evenly with 1/2 tbsp. salt, cover, and chill overnight. Drain wings, then dry with paper towels. Bring to room temperature.
- Pour oil to a depth of 2 in. into a wok or high-sided pot and heat over high heat to 375° on a deep-fry thermometer.
- Put cornstarch in a bowl and season with a pinch each of salt and pepper. Add wings and toss to coat, shaking off excess.
- Add wings to hot oil and fry 6 to 10 minutes, until deep golden brown and cooked through. Using a slotted spoon, transfer wings to paper towels to drain briefly. Transfer to a bowl and toss with toasted garlic and more salt and pepper. Serve with Spicy Lime Dipping Sauce.
