1 (10 oz) bag medium spelt noodles or brown rice fettuccine
1 cup oil
4 eggs, beaten
1 tablespoon salt
1/4 - 1/2 teaspoon black pepper, according to taste

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Cook noodles according to directions. Drain, then return to the pot and allow to cool to room temperature (20 to 30 minutes).
  • Add oil, eggs, and spices to the cooled noodles and mix well. Pour into a 9- x 13-inch pan.
  • Cover and bake at 425 degrees Fahrenheit for one hour.
  • If you would like the top to be crunchy, uncover after one hour and bake 10 to 15 minutes more.

1 (8 ounce) package egg noodles
⅓ cup vegetable oil, divided
1 onion, chopped
3 eggs, beaten
salt and black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon of the vegetable oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is golden brown, 10 to 15 minutes more. Combine the noodles, onion, eggs, remaining vegetable oil, salt, and pepper in a large bowl. Pour mixture into an 8-inch square pan.
  • Bake in the preheated oven until firm, about 35 minutes.

This is a side dish commonly served with roasted chicken for Friday night (Shabbat) dinner. It doesn't have to accompany chicken only, but, as my mother once told us, when she was a child, chicken and noodles were more affordable than other foods. This is a great accompaniment to any meat.

1 (12 ounce) package thin egg noodles
6 onions, diced
⅛ cup vegetable oil for frying
salt and pepper to taste
4 eggs
¼ cup dry bread crumbs
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 baking dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, in medium saucepan, cook onions in oil over medium heat. Season with salt and pepper, and cook until brown and soft.
  • In very large mixing bowl, combine pasta, onions, eggs, bread crumbs and salt and pepper to taste. Mix thoroughly. Pour into baking dish and sprinkle paprika over the top. Sprinkle with oil, if desired, and bake 50 to 60 minutes, until top is crispy and golden.

This is my mom's recipe for a traditional Eastern European nonsweet kugel - or "kigel" which is how my her side of the family pronounced it. (I didn't know kugels could be sweet until I was a teen.) It's easy comfort food.

5 1/2 cups cooked egg noodles
5 eggs, beaten
1 tablespoon schmaltz or 1 tablespoon margarine
salt (if using margarine, you may replace the salt with some powdered chicken soup to add more flavor)

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together.
  • Put in greased or Pam'd 13 inch square pan.
  • Bake about 1 hour or until set.

4 clove(s) garlic, minced
1 large yellow onion, minced

Steps:

  • Heat oven to 350^. Whisk sour cream, cottage cheese,6 Tablespoons of butter and eggs in a bowl; set aside. Bring a 4 qt. pot of slated water to a boil; cook noodles until al dente. Drain; stir into cheese mixture. Season with salt and pepper. Heat remaining butter in a 12-inch cast iron skillet over medium-high heat. Add garlic and onions; cook, stirring , until lightly caramelized, about 8 minutes. Stir in noodles, and bake until browned, about 35-40 minutes.
