HOMEMADE HERB SALT
Yes, the color in this salt will fade within a few weeks, but the herby flavor and aroma will remain intact for much longer. I described this as a finishing salt, meaning it's used to season cooked food at the table; however, it can also be used in place of regular salt in any recipe preparation.

Steps:
- Place 1/2 cup coarse sea salt, rosemary, and lemon thyme in the bowl of a food processor. Pulse, grinding salt until rosemary and thyme have a fine consistency. Add 1 cup sea salt and pulse to combine.
- Pour salt mixture into a shallow baking dish and let air dry for 2 hours. Transfer salt to a glass jar and screw on lid.

SALT SPEKE SILL - SALT DRY HERRING
Salt herring played a major role in the destiny of Europe and was brought to US shores by Scandinavian immigrants. This poor man's food - turned rich man's delicacy - was an all-important part of the diet of the poor in European cities. Two of these fatty fish furnish roughly 600 calories and two and a half ounces of protein, which is just about all the protein a person needs in a day. Overnight soaking not included in preparation time and cooking time is approximate. From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

- Soak herring in cold water overnight; rinse well, drain and cut off heads.
- Preheat broiler and lightly grease broiler pan.
- Place fish on prepared broiler pan and place under broiler to brown lightly.
- Serve with boiled potatoes.

Steps:
- Clean fish. Remove heads. Soak fish in cold water for 10-12 hours, changing water a few times so fish will not be too salty. If you wish, start soaking a few hours before going to bed; change water a few times, then soak overnight. Drain fish on absorbent paper; cut crosswise into 1/2" slices without removing bones and place in a glass jar. Combine dressing ingredients and bring to boiling point. Chill. Pour over herring. Cover and let stand a few days in refrigerator before serving. Always serve this kind of herring from the jar. Taste improves the longer herring is pickled.
