1 pinch kosher salt
3 sticks unsalted butter, cut into 1/2 in (1.24 cm) and frozen for 15 minutes
¾ cup water, ice water, plus more as needed
1 large egg, with 1 tablespoon water
2 tablespoons unsalted butter
3 lb Granny Smith applesGranny Smith apples, peeled and sliced into ¼-inch (6 mm) wedges
3 lb honeycrisp apple, peeled and sliced into ¼-inch (6 mm) wedges
1 lemon
1 ½ cups brown sugar
1 teaspoon kosher salt
1 tablespoon pumpkin pie spice
1 ½ teaspoons vanilla bean paste
¼ cup cornstarch
3 tablespoons water
1 cup apple cider
1 ½ cups granulated sugar
⅓ cup water
1 tablespoon light corn syrup
¾ cup heavy cream, room temperature
½ teaspoon kosher salt
pecan, candied chopped, for garnish

Steps:

  • Make the pie dough: In a large bowl, mix together the flour and salt. Add the butter and toss to coat each cube with the flour, then smash each piece of butter with your fingers.
  • Add the ice water, 1-2 tablespoons at a time, and continue to toss until the dough holds together when pressed between your hands. You may not need all of the water, but if the dough is too dry, add more, 1 teaspoon at a time, as needed. The dough should not be very tacky or sticky.
  • Turn the dough onto a clean surface. Work into 2 discs and cover with plastic wrap. Refrigerate for at least 1 hour.
  • Make the filling: Melt the butter in a large Dutch oven over medium heat. Add the apples, lemon juice, brown sugar, salt, pumpkin pie spice, and vanilla bean paste. Stir to coat the apples well and cook until they start to soften and release their juices and the sugar dissolves, 5-7 minutes.
  • In a small bowl, whisk together the cornstarch and water. Pour the slurry over the apples, increase the heat to high, and cook until the juices are boiling and thickened, 3-4 minutes.
  • Remove the pot from the heat and let the filling cool to room temperature, about 30 minutes.
  • Make the apple cider syrup: Add the apple cider to a small saucepan over medium heat. Bring to boil and cook until reduced to 2 tablespoons with the consistency of maple syrup, about 10 minutes. Remove the pot from the heat and let the syrup cool to room temperature.
  • Assemble the pie: On a floured surface, roll a disc of pie dough into a 12-inch (30 cm) round, about ¼ inch (6 mm) thick. Transfer to a 9-inch (22 cm) deep dish pie plate.
  • Add the apple filling to the crust, along with any accumulated juices from the bottom of the bowl. Drizzle the apple cider syrup on top. Refrigerate while you roll out the other dough.
  • Roll out the remaining dough disc to a 12-inch (30 cm) round. Drape over the pie, then pinch the edges together. Trim any excess dough around the edges, then roll the edges under all the way around the pie. Use the knuckle of an index finger on one hand and your index finger and thumb on the other hand to make large crimps around the edges.
  • Brush the dough all over with the egg wash. Use a paring knife to cut a few vents in the top to allow steam to escape.
  • Transfer the assembled pie to the freezer for 20 minutes, until firm.
  • Preheat the oven to 350°F (200°C). Line a baking sheet with aluminum foil.
  • Place the pie dish on the prepared baking sheet, then transfer to the oven and bake for 80-90 minutes, covering with foil halfway through. Cook until the juices are bubbling and the crust is golden brown. Remove the pie from the oven and let cool for at least 1 hour.
  • Meanwhile, make the salted caramel: Add the sugar, water, and corn syrup to a large saucepan over medium-high heat. Bring to a low boil and cook until the sugar dissolves and mixture starts to turn a light copper color, about 10 minutes.
  • Remove the pot from the heat and stir in the cream and salt until incorporated. If the caramel seems too thin, return to medium low heat and boil until thickened to your desired consistency, 1-2 minutes. Transfer the caramel to a heat-proof liquid measuring cup and let cool to room temperature, 30-60 minutes.

½ cup granulated sugar

Steps:

  • Peel the apples and place them in a large bowl with enough water to cover. Squeeze lemon juice in the water to prevent the apples from browning. Working with 1 apple at a time, cut around the core, discarding the core and removing the "cheeks." Slice the cheeks very thin.
  • In a large bowl, combine the granulated sugar, brown sugar, cinnamon and nutmeg. Stir to combine. Add the sliced apples, stir to coat, and let sit for 30 minutes.
  • Line a pie dough in a 9-inch (23-cm) cast-iron pan, and prick the dough with a fork all around. Chill in the fridge until very firm, 20-30 minutes.
  • Working in batches, remove the apples from the cinnamon-sugar mixture by taking a handful at a time and carefully squeezing them with your hands to remove the excess moisture. Place the drained apples in a separate large bowl, reserving the liquid to make the caramel sauce.
  • Preheat the oven to 375˚F (190˚C).
  • Working from the outside in, line the apple slices on the pie dough by overlapping each slice to create a rose shape. Roll up 1 apple slice tightly and place it in the center, creating a bud shape. Cover the pan with foil and bake for 30 minutes. Uncover and bake for 10 minutes more, or until golden brown. Remove from the oven and let cool for 10 minutes.
  • In a saucepan, bring the reserved cinnamon-sugar liquid to a boil. Once the liquid is reduced by half, 10-15 minutes, add the heavy cream and stir well.

¼ cup vodka
1 cup cold water

1 cup granulated sugar
½ cup unsalted butter
½ cup heavy cream
apple pie filling
6 apples granny smith apples
¼ cup fresh lemon juice
5 dashes angostura bitters
¼ cup granulated sugar
2 tablespoons arrowroot powder
1 teaspoon ground cinnamon
¼ teaspoon ground allspice
1 pinch freshly grated nutmeg
1 egg egg, Beat Egg with Water
1 sprinkle raw sugar
1 tablespoon water, Beat with Egg

Steps:

  • Make the pie dough: In a large bowl, combine the flour, sugar, and salt. Add the butter cubes and toss to coat. Use a bench scraper to cut the butter into the flour until the butter is broken down to lima bean-sized cubes.
  • In a small bowl or liquid measuring cup, stir together the vodka, water, and ice.
  • Sprinkle ¼ cup of the liquid over the flour mixture and use a bench scraper or your hands to incorporate until the dough begins to come together. Sprinkle in ¼ cup more liquid and continue mixing. If the dough isn't coming together, sprinkle the dry bits with more small drops of the liquid as necessary; the dough will look shaggy. Fold the dough over itself to bring it together until all of the flour is incorporated. Discard the remaining liquid.
  • Turn the dough onto a clean surface and use the bench scraper to divide it into 2 equal pieces. Shape each piece into a flat disc and wrap in plastic wrap. Refrigerate for at least 30 minutes, but preferably overnight, before rolling out.
  • Make the caramel: In a small saucepan, combine the water and sugar and cook over medium heat, without stirring, until golden brown in color, about 10 minutes.
  • Remove the pot from the heat, add the butter, and whisk to combine. Return the pot to the heat and pour in the cream (be careful; the mixture will bubble). Whisk well to combine, then remove the pot from the heat and set aside to cool.
  • Make the apple filling: Peel the apples and cut in half, then remove the cores and cut the halves into quarters. Transfer to a large bowl and add the lemon juice and Angostura bitters. Toss to coat the apples.
  • In a small bowl, mix together the sugar, arrowroot, cinnamon, allspice, and nutmeg. Sprinkle the dry ingredients over the apples and use your hands to toss until evenly coated.

2 ¼ teaspoons kosher salt
1 ½ cups cold unsalted butter, cut into 1/2-inch cubes
½ cup ice cold water, divided
1 cup white sugar
6 tablespoons salted butter, cut into 1/2-inch pieces, at room temperature
½ cup heavy cream, at room temperature
1 ½ teaspoons sea salt
10 medium Granny Smith apples - peeled, cored, and sliced
½ cup white sugar
¼ cup all-purpose flour
2 tablespoons fresh lemon juice
1 tablespoon cornstarch
1 ½ teaspoons ground cinnamon
¼ teaspoon kosher salt
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 large egg, beaten
1 tablespoon turbinado sugar

Steps:

  • Prepare the pie crust: Whisk flour and salt together in a large bowl. Add butter and toss until butter pieces are completely separated and coated with flour mixture.   • Working with one dough disk at a time on a surface lightly dusted with flour, roll each disk into a 1/8-inch thick circle that measures 12 inches in diameter. Place one dough circle in a 9-inch pie pan and gently press dough into the corners and sides of the pan.
  • Stir together apples and reduced apple liquid in large bowl; arrange apple mixture in the pie crust, and drizzle with 1/2 cup of the caramel sauce. Place remaining dough circle over apple mixture and press into apple mixture and into edges of pan. Using your fingers, fold edges under and crimp to seal. Brush top and edges of dough with egg and sprinkle with turbinado sugar. Cut eight 1-inch slits in dough with a sharp paring knife to allow steam to escape. Place pie on a rimmed sheet pan.
  • Bake in the preheated oven until top is light golden in color, about 20 minutes. Without removing the pie, reduce oven temperature to 375 degrees F (190 degrees C), and continue baking until dough is deep golden brown and the filling is starting to bubble, about 25 minutes. Gently cover pie with aluminum foil, and continue baking until a knife inserted removes mostly clean, about 25 minutes.
  • Remove pie from oven and transfer to a wire rack to cool completely, about 2 hours. Serve pie with remaining caramel sauce, if desired.

1-1/3 cups sugar plus 2 tablespoons sugar, divided
2/3 cup heavy whipping cream

3 pounds (6 to 7) baking apples, peeled, cored, and cut into 1/2-inch slices

2 tablespoons lemon juice (from 1 lemon)
3/4 teaspoon coarse salt, plus more for top

  • Bake until crust is golden on bottom and juices are bubbling in center, 1 hour and 20 minutes to 1 hour and 30 minutes. If browning too quickly, tent top or edges with foil. Let cool completely on a wire rack, about 4 hours. Serve slices with vanilla ice cream drizzled with remaining caramel (reheated in pan over low heat or in microwave) and sprinkled with flaky salt.

2 granny smith apples, sliced into 1/4 in (6 mm) wedges
1 tablespoon lemon juice
unsalted butter, for greasing
1 cup sugar
6 tablespoons unsalted butter, room temperature
½ cup heavy cream, room temperature
1 teaspoon vanilla extract
¼ teaspoon flaky sea salt

Steps:

  • Prepare the cinnamon roll dough and filling according to the recipe instructions.
  • Add the apples and lemon juice to a medium microwave-safe bowl. Microwave in 20-second increments, until the apples are softened and limp.
  • Preheat the oven to 350°F (180°C). Grease a 9 x 13-inch (22x33 cm) baking dish with butter.
  • Roll the dough into a large rectangle about ½-inch (1.24 cm) thick. Straighten the corners with a bench scraper to make sure they are sharp and even.
  • Spread the filling evenly over the dough, then arrange the apple slices on top, leaving about ¼ inch (6 mm) between each slice. Try to keep your slices in straight rows, it's okay if the tips of the apple slices touch or overlap.
  • Starting from a short end, roll the dough into a log and pinch the seam closed. Place the log seam-side down and trim off the uneven ends. Using unflavored dental floss or a sharp knife, cut the log into even pieces, each about 1½ inches (3 ½ cm) thick. Place the rolls in the prepared baking dish, cover with a kitchen towel, and set in a warm place for 35-45 minutes, until expanded in volume by about 50%. If not baking immediately, skip this step, cover with plastic wrap and freeze for up to 3 months.
  • Bake the cinnamon rolls for 25-30 minutes, or until golden brown. Remove from the oven and let cool for at least 10 minutes.
  • While the cinnamon rolls bake, make the salted caramel sauce: Add the sugar to a small saucepan and cook over medium heat, swirling the pan occasionally but not stirring, until it starts to turn amber brown, 5-6 minutes.
  • Add the butter and stir in until incorporated, 1-2 minutes..
  • Slowly drizzle in the cream and whisk to combine. Boil for 1 minute, then remove from the heat and stir in the vanilla and flaky salt. Let cool and thicken slightly before using.
  • Pour the salted caramel sauce over the cinnamon rolls, then serve.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1 cup old-fashioned oats
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
3/4 cup butter, melted
1 package (8 oz) cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla
6 large apples, peeled, cut into 1-inch chunks (about 8 cups)
3/4 cup salted caramel topping
Ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, stir together cookie mix, oats, 1/4 cup of the brown sugar and 1 teaspoon of the cinnamon. Add melted butter; mix until crumbly. Set aside.
  • In small bowl, beat cream cheese, granulated sugar and vanilla until smooth. Set aside.
  • In large bowl, toss apples with remaining 1/4 cup brown sugar and remaining 1 teaspoon cinnamon. Distribute apples evenly in baking dish.
  • Spoon tablespoonfuls of cream cheese mixture randomly over apples. Sprinkle with cookie mixture.
  • Bake 35 to 40 minutes or until crumble topping is golden brown and apples are tender. Serve warm drizzled with salted caramel topping. Cover and refrigerate any remaining dessert.

3 tablespoons lemon juice
¼ cup all-purpose flour
⅔ cup granulated sugar
2 ½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 premade pie crusts, thawed if frozen
1 large egg, beaten
¾ cup heavy cream
¾ cup light brown sugar
2 tablespoons honey
3 tablespoons unsalted butter
sea salt, for garnish

Steps:

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the apple slices, lemon juice, flour, sugar, cinnamon, and nutmeg. Toss until the apples are well coated.
  • Lay 1 of the pie crusts in a 9-inch (23-cm) pie dish. Add the apple slices to the bottom of the crust. Place the other pie crust over the apple slices.
  • Trim any extra dough from the edges. Press the rounded edge of spoon facedown around the edge, making shallow indentations to crimp the crusts together.
  • Cut 4 slits in the top of the pie for ventilation, then brush with the beaten egg.
  • Bake the pie for 50-60 minutes, or until the crust is golden brown and no grey-ish or undercooked pastry remains. Let cool completely.
  • In a medium saucepan, combine the heavy cream, brown sugar, and honey. Cook over medium heat until the sugar is dissolved, about 2 minutes.
  • Whisk in the butter and bring to a boil.
  • Reduce the heat to low and simmer for 15 minutes, stirring occasionally, until the caramel reaches a thick consistency.
  • Let the caramel sauce cool for 5 minutes, then pour over the pie. Sprinkle with flaky sea salt.
  • Slice and serve.
