Soft and chewy Pumpkin Cookies are the quintessential Fall cookie! They are not cakey at all - they are dense and chewy and they stay soft for days! Brown butter and warm spices make these cookies absolutely irresistible.

Number Of Ingredients 12

½ cup 113g unsalted butter
¾ cup 165g light brown sugar, packed
1 egg yolk
1 tsp pure vanilla extract
¼ cup 60ml pumpkin puree
2 tsp 10ml honey
1 ¼ cups 180g all purpose flour
1 tsp pumpkin pie spice
½ tsp baking soda
heaped ¼ tsp salt
3 tbsp granulated sugar
1 tsp tsp cinnamon

Steps:

  • First, brown the butter. Place butter in a saucepan over medium heat until melted and then continue to cook while stirring occasionally until butter begins to bubble and crackle as the moisture boils off. Keep cooking with frequent stirring until it turns a deep golden color. A dense foam will form at the surface when it is nearly ready. Pour it out into a clean bowl and let it cool for 10-15 minutes.
  • Add brown sugar to the cooled brown butter and whisk to blend. It will look like clumpy wet sand. Add egg yolk and vanilla and whisk until it is smooth and glossy. Add pumpkin puree and honey and whisk to incorporate.
  • Add baking soda, salt and pumpkin pie spice to the wet ingredients and whisk to blend well. Add the flour and use a rubber spatula fold it in until just combined.
  • Cover the bowl and refrigerate for 30 minutes to an hour.
  • Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
  • Mix together the sugar and cinnamon in a small bowl. Scoop up mounds of dough and roll into smooth balls about 1 ¼ inch diameter. Drop them into the cinnamon sugar mixture and toss to coat. Place them onto the baking sheet, spaced about 2 inches apart from each other and flatten slightly. Bake for 9-12 minutes or until the edges are browned and the center looks puffed and slightly cracked.
  • Allow them to rest on the baking sheet for a 2 minutes, then transfer to a cooling rack.

8 ounces butter, softened
1 cup white sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup pumpkin puree
1 cup rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup raisins
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together butter, white sugar and brown sugar until fluffy. Beat in egg, vanilla and pumpkin.
  • In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir into pumpkin mixture.
  • Drop cookies by the heaping teaspoonful on to cookie sheets covered with parchment paper. Bake 12 to 15 minutes or until slightly browned around edges.
  • Remove from oven and place on cooling racks. Frost with your favorite powdered sugar glaze or leave plain.

4 cups all-purpose flour
2 cups old-fashioned oats
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 ½ cups unsalted butter, softened
2 cups firmly packed brown sugar
1 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 (16 ounce) can solid-pack pumpkin (such as Libby's®)
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 cookie sheets.
  • Combine flour, oats, baking soda, cinnamon, and salt in a bowl.
  • Cream butter in a large bowl with an electric mixer. Gradually add brown and white sugars; beat until light and fluffy. Mix in egg and vanilla extract until well combined. Add flour mixture in 3 batches, alternating with pumpkin, mixing well after each addition. Stir in chocolate chips.
  • Drop medium spoonfuls of dough 2 inches apart onto the prepared baking sheets and spread into pumpkin shapes.
  • Bake in the preheated oven until cookies are slightly firm and lightly browned, 20 to 25 minutes; do not overbake. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

  • Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until no brown sugar lumps remain. Whisk in the vanilla and blotted pumpkin until smooth. Set aside.
  • Whisk the flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice together in a large bowl. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough will be very soft. Fold in 1/2 cup semi-sweet chocolate chips. The chips may not stick to the dough because of the melted butter, but do your best to combine them. Cover the dough and chill for 30 minutes or up to 3 days. Chilling the dough is imperative for this recipe.
  • Remove dough from the refrigerator. Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats.
  • Roll the dough into balls, about 1.5 Tablespoons of dough each. Using the back of a spoon, slightly flatten the tops of the dough balls. (Without doing so, the cookies may not spread.)

  • In this recipe, it’s best to use pumpkin that has had some moisture removed. Blot the pumpkin with paper towels to rid excess moisture. No need to squeeze it completely dry. I usually place it in a paper towel lined bowl and let the paper towel soak up some moisture. A clean kitchen towel works too, but the pumpkin can stain. After ridding some moisture, you’ll have a little less than 1 and 1/2 cups of pumpkin– I usually have about 1 and 1/3 cups (315g). Using anywhere between 1.33 – 1.5 cups of pumpkin is fine. Set aside until step 4. Or cover and refrigerate for up to 1 day. It can be cold when you add it to the dough.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Whisk the flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and ginger together in a large bowl. Set aside.
  • Using a hand mixer or a stand mixer fitted with paddle attachment, cream the softened butter and both sugars together on medium speed until smooth, about 2 minutes. Add the egg and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the maple syrup, vanilla, and blotted pumpkin and mix on high until combined. Mixture will look a little curdled– that’s ok.
