MICHELLE'S SOFT SUGAR COOKIES
These sugar cookies have won raves from all who have tried them. They are soft and have a light and delicate flavor. They're great for Christmastime cut outs.

Steps:
- Cream the margarine and add the sugar gradually. Beat until light and fluffy. Add eggs one at time, mixing well after each addition.
- Stir in the vanilla. Add the flour, cream of tartar, baking soda and salt gradually to the creamed mixture, stirring in by hand. Cover and chill dough overnight.
- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- Roll dough out on a floured surface to 1/8 to 1/4 inch thick and cut into your favorite shapes. Place cookies onto the prepared baking sheets.
- Bake at 375 degrees F (190 degrees C) for 6 to 8 minutes or until cookie has a golden appearance.

SALTLESS SUGAR COOKIES THAT ROCK
Sugar cookies with a twist! I made up this recipe for thanksgiving. I can't have salt so I always have to come up with creative ways to make things. The whole family loved these, there were none left to spare.

Steps:
- preheat the oven to 350 degrees.
- Mix flour,sugar,baking powder,and other dry ingredients together.
- make sure the butter is soft or heat it up and add to the dry ingredients, and mix it all together.
- once you get a good dough together, add your food coloring and mix it in[or if you want add the drops of food coloring to the butter if you head it up and mix that all together it will make mixing the food color easy].
- then make little balls/shapes or anything you want really, and place them on your nonstick cookie sheet.
- takes about 10-20 minutes for the cookies to get done.
- you can also decorate them at the end with food coloring, if you use q-tips you can even draw on them with the food coloring.

SALTY OATMEAL CHOCOLATE CHUNK COOKIES
Steps:
- Preheat the oven to 375 degrees F. Line 3 sheet pans with parchment paper.
- In an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar on medium-high speed for 3 minutes, until light and fluffy. Scrape down the bowl with a rubber spatula. On low speed, add the vanilla, then the eggs, one at a time. Scrape down the bowl again.
- Meanwhile, sift the flour, baking soda, and salt into a medium bowl. Mix in the oats. With the mixer on low, slowly add the flour mixture to the butter-sugar mixture. Don't overbeat it! With a rubber spatula, stir in the chocolate and cranberries until the dough is well mixed. With a 1 3/4-inch ice cream scoop (or two spoons), scoop round balls of dough onto the prepared sheet pans. Sprinkle lightly with fleur de sel. Bake for 10 to 12 minutes, until nicely browned. Serve warm or at room temperature.
CHOCOLATE CHIP COOKIES WITH SALT
I made these cookies for my son's class at school as part of France's annual week of taste, or semaine du gout. The idea was to show how sweet and salty flavors complement each other.

- Preheat the oven to 375°. Line two baking sheets with parchment paper.
- Sift together onto a piece of waxed paper the flour, the soda, and one half teaspoon of the salt.
- In a large bowl, whisk together the butter and the sugar until it is light and pale yellow. Whisk in the eggs one at a time until thoroughly blended. Whisk in the vanilla, then stir in the flour just until it is blended.
- Stir in the chocolate chips or pieces and mix until they are evenly distributed throughout the dough.
- Drop the dough by tablespoons full onto the prepared baking sheets. Sprinkle each with a generous pinch of sea salt. Bake in the center of the oven until the cookies are golden, about 12 minutes. Remove from the oven and let sit on the baking sheets for about 4 minutes to allow the cookies, which are fragile, to firm up, then slide them onto a cooling rack.

FABULOUS SHAMROCK SUGAR COOKIES
These are fantastic cookies to have for celebrating St. Patricks Day in style! If you don't have a shamrock cookie cutter then draw a shamrock onto a piece of thick card, cut out & use as a template. You can make these ahead of time & freeze (un-iced). Time to make doesn't include chilling time. The kids love to help out in the kitchen when we make these.

- Mix flour, baking soda, cream of tartar and nutmeg; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in egg and vanilla. Gradually stir in flour mixture until well mixed. Refrigerate dough about 1 hour or until firm.
- Preheat oven to 375°F Roll out dough on lightly floured surface* to 1/8-inch thickness. Cut out dough with shamrock cookie cutter. Place on greased baking sheets.
- Bake 8 to 10 minutes or until lightly brown. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
- For the Icing, mix green food color and milk. Add confectioners' sugar, stirring until color is evenly distributed and icing is smooth.
- To decorate cookies, hold cookie by its edge and dip top of cookie into icing. (Or spoon the icing onto cookie using a teaspoon.) Place glazed cookies on wire rack set over foil-covered baking sheet to dry.
- I like the 3 decorations styles:
- 1- cover the whole top surface in green icing.
- 2 - cover the whole top surface in white icing then pipe green as an outline.
- 3 - Cover the whole top surface with white icing & cover with candy sprinkles (allow the icing to set for a few minutes before adding the sprinkles so they don't absorb moisture & leach their colour).

- To make the Malted Cookie Dough, in a large bowl, cream together the butter, granulated sugar, brown sugar, and salt with a wooden spoon until a light paste forms.
- Add the heavy cream, molasses, corn syrup, and vanilla and stir until smooth.
- Sift in the toasted flour and malt powder, then mix until there are no lumps.
- Fold in the chocolate until evenly distributed.
- Spread the cookie dough evenly in a parchment-lined baking dish until it's about ½-inch (1 cm) thick, then freeze until solid, about 1 hour.
- Cut the cookie dough into ½-inch (1 cm) cubes and freeze for later use. It keeps up to 1 month.
- To make the Molasses Vanilla Ice Cream Base, combine the sugar, dry milk powder, salt, and xanthan gum in a small bowl, and stir well.
- In a medium pot over medium heat, combine the milk, corn syrup, and molasses, whisking until combined. Add the sugar mixture and whisk vigorously until there are no lumps. Cook for 2-3 minutes, until the sugar is dissolved, then remove the pot from the heat.

- Transfer to an airtight container and store in the fridge for up to 1 week.
- Pour the ice cream base into an ice cream maker and turn on the machine. Churn just until it has the texture of soft serve, 25-35 minutes, depending on the machine.
- Fold in half of the cookie dough cubes until well-distributed.
- Alternate spooning layers of the ice cream and a few generous dollops of the fudge into a loaf pan.
- Cover with plastic wrap and store in the coldest part of your freezer for at least 6 hours before scooping and serving. The ice cream will keep up to 6 months.
