SAMOAN PANIKEKE

Samoan Panikeke image

My brothers and I used to eat this when we were younger. They're a lot like doughnuts but with the added fun of topping them with your favorite toppings. After a while of not having these, I started making them on my own for my family, and I enjoy them as much today as I did back then!

Time 40m

Yield 12

Number Of Ingredients 7

3 ½ cups all-purpose flour
1 ⅓ cups white sugar
2 teaspoons baking powder
2 very ripe bananas, mashed
1 tablespoon vanilla extract
1 ½ cups water
6 cups vegetable oil for frying

Steps:

  • Combine the flour, sugar, and baking powder in a bowl until thoroughly mixed, and stir in the bananas, vanilla extract, and water to make a smooth, sticky dough.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). The oil should be deep enough to completely cover the panikekes while frying, or at last 3 inches deep.
  • Scoop up a scant 1/4 cup of batter with a large spoon, and use another spoon to push it off into the oil. Fry in small batches of 4 or 5 until they float to the top and turn golden brown, about 3 minutes, then flip them to fry the other side. Remove from the fryer and let drain on paper towels.

HOMEMADE SAMOA COOKIES

Homemade Samoa Cookies image

Experimenting with shortbread cookie recipes, I found a way to create a cookie the not only gives you a melt-in-your-mouth texture, but also retains its shape and doesn't crumble when you pick it up. I ended up making these for Easter weekend to give out as gifts. So far the cookies haven't made it past the 2 hour mark after being opened and left up on a table for consumption. Hope you love these as much as my friends and family do! Enjoy!

Number Of Ingredients 10

2 cups butter, softened
1 cup white sugar
1 teaspoon salt
4 cups all-purpose flour, divided
1 large egg, lightly beaten
2 tablespoons vanilla extract
1 teaspoon milk
4 cups sweetened flaked coconut
22 ounces caramels (such as Kraft® Caramel Bits)
1 pound chocolate (such as CandiQuick®)

Steps:

  • Beat butter, white sugar, and salt together in a bowl; add 2 cups flour and stir. Beat 1 cup flour into butter mixture; mix until a sticky dough forms.

  • Melt caramel bits in a microwave-safe bowl, stirring every 30 seconds, until melted and smooth, about 2 minutes. Stir coconut into caramel. Press a spoonful of caramel-coconut mixture into the top of each cookie.
  • Melt chocolate in a microwave-safe bowl, stirring every 30 seconds, until melted and smooth, about 60 seconds. Dip the base of each cookie into melted chocolate and place dipped cookies on parchment paper until chocolate sets. Drizzle chocolate over the top of each cookie.

Provided by Tasty

Categories     Bakery Goods

Number Of Ingredients 13

1 cup butter
½ cup sugar
2 cups flour, more for dusting
¼ teaspoon baking powder
¼ teaspoon salt
2 tablespoons milk
½ teaspoon vanilla extract
2 cups soft caramel
¼ teaspoon salt
3 tablespoons heavy cream
½ teaspoon vanilla extract
3 cups toasted coconut
1 cup chocolate, melted

Steps:

  • Cream butter and sugar in a mixing bowl.

SAMOA TARTLETS

Samoa Tartlets image

A new twist on a Girl Scout Samoa cookie classic! Keep an eye on the cookies as they easily get burnt. Also, I melted the chocolate in a double boiler and added a teaspoon each on top of the cookie, followed by the coconut. I used the sweetened coconut and dark brown sugar as an alternative. It tasted good!

Provided by jhalaks

Categories     Desserts     Pies     Tarts

Time 45m

Yield 12

Number Of Ingredients 9

1 tablespoon butter, or as needed
1 cup toasted shredded coconut, plus more for garnish
⅓ cup all-purpose flour
2 tablespoons firmly packed light brown sugar
¼ teaspoon salt
3 tablespoons cold unsalted butter, cut into pieces
5 ounces semisweet chocolate, finely chopped
1 quart coconut ice cream
¾ cup warm dulce de leche

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups with 1 tablespoon butter.
  • Pulse 1/4 cup coconut, flour, brown sugar, and salt together in a food processor until just-combined. Add cold butter pieces to coconut mixture and pulse until mixture resembles wet sand. Spoon 1 heaping tablespoon of coconut mixture into each prepared muffin cup and press into cup to create a crust.
  • Bake in the preheated oven until crusts are golden, 5 to 7 minutes. Remove from oven, turn off oven, sprinkle chopped chocolate into each crust, and return to the oven until chocolate melts, 3 to 5 minutes.
  • Divide remaining coconut between crusts. Freeze in the muffin cups until set, about 15 minutes. Gently remove each crust from the muffin cup with a thin spatula. Place a scoop of ice cream in each crust, drizzle dulce de leche over the top, and garnish with coconut.

  • Palusami (Main Dish with Corned Beef and Coconut Milk) If you’re looking for a filling, “stick to your ribs” main dish, consider palusami. It’s a baked dish that combines the rich, savory flavors of corned beef, sauteed onions, minced garlic, and soy sauce with the sweetness of coconut milk and the earthiness of spinach.
  • Fa’alifu Fa’i (Green Banana in Savory Coconut Sauce) This island favorite isn’t too difficult to make. Start by boiling green bananas for about 10 minutes and making a sauce with coconut cream, water, crushed onions, and salt.
  • Coconut Rice. Coconut rice is a Samoan staple that’s served with most meals. It’s super easy to make, requiring only three ingredients and about 30 minutes to cook.
  • Samoan Chicken and Coconut Rice. Samoan chicken is best when cooked in a Dutch oven. It has a thick, bold taste thanks to the dark soy sauce, garlic, onions, and ginger.
  • Pani Popo (Samoan Coconut Rolls) These delicious dinner rolls are another staple of Samoan fare, and they definitely find that perfect sweet/savory balance.
  • Sapa Sui (Samoan Chop Suey) Recipe. This dish puts a Samoan twist on the traditional chop suey recipe. The recipe calls for chicken, but you can add a different protein if you want, or you can leave out the meat altogether and make it vegetarian-friendly.
  • Panikeke (Samoan Pancakes) This recipe is straightforward and easy to follow. Once you’re comfortable with it, you may want to add other ingredients – cinnamon, nuts, fruit, etc.
  • Kale Moa (Samoan Chicken Curry) Once finished, the consistency of this dish is almost like a thick, hearty stew. For that reason, I like to serve it over rice when it’s time to eat.
  • Boiled Taro With Coconut Milk. Boiled taro is a bit like boiled sweet potatoes. You’ll make it with coconut milk, which makes it sweet, and add in enough salt to give it that sweet and salty combo that never fails to delight the taste buds.
  • Samoan Watermelon Drink. This fruity drink requires less than10 ingredients and less than 10 minutes to fix. It combines all the tasty tropical flavors of coconut, watermelon, and pineapple with the tang of lemon juice.
