Steps:
- Put the water and 1/2 cup of the sugar in a saucepan over medium heat, stirring until dissolved.
- Add the lemon juice and boil until syrupy.
- Remove from the heat and add the orange-flower water.
- Leave to cool.
- Preheat the oven to 350°F
- Blend the ground almonds, orange peel, and cinnamon,and the remaining sugar. Blend together these ingredients.
- Have the phyllo ready, stacked under a damp cloth.
- Brush one sheet of phyllo with olive oil. Cut the oiled sheet into 3 lengthwise strips. Place a small spoonful of filling at the bottom of each strip.
- Fold the sides of the phyllo strips over the filling, then roll the pastry up along the length. Brush inside the end of the pastry with oil and seal it to the roll. Brush with oil and put on a baking sheet.
- Repeat with the remaining pastry and filling. Bake the pastries for 15-20 minutes, until crisp and golden. It will be very flaky.
- Lower the pastries a few at a time into the hot syrup, letting them soak in the syrup for about 3 minutes.
- Remove to a plate and sprinkle generously with sesame seeds. Leave until cold before serving.

PISTACHIO BAKLAVA
The different flavors of the nuts make this baklava really special. I've tried many baklava recipes, but this is the one I keep coming back to.

Steps:
- Preheat oven to 300.
- Chop pistachios in food processor until finely chopped.
- Add walnuts, 2/3 cup sugar, and cinnamon and process until the texture of coarse meal, pulsing out any lumps. Set aside.
- Lightly fit 1 phyllo sheet in the bottom of a lightly greased 13x9 dish, trimming to fit if needed.
- Brush well with melted butter.
- Continue with 7 more sheets, brushing each sheet well with butter.
- If butter hardens, just microwave briefly to soften.
- Scatter a generous 1/3cup nut mixture over phyllo.
- Add 2 more sheets, brushing each well with butter.
- Add another 1/3 cup nut mixture and continue layering until all nut mixture is used, finishing with a layer of remaining phyllo, brushing each sheet with melted butter.
- Place baklava in freezer for 10 minutes for easier cutting.
- Slice in 2" wide diamond-shaped pattern. (or squares if that is easier).
- At this point it my abe wrapped with heavy duty aluminum foil and frozen if desired.
- Set baking dish on middle oven rack and place a shallow pan of water underneath.
- Bake for 2hrs and 10 minutes or until golden brown.
- Frozen baklava can be baked uncovered the same way for 2 and 1/2 - 3hrs. or until golden brown.
- Combine remaining 2/3 cups sugar, 2 cups water, honey and lemon juice in a large saucepan.
- Bring to boil over high heat, reduce to low and simmer uncovered 20 minutes.
- Pour into spouted measuring cup and cool to room temperature.
- Drizzle syrup evenly over baklava.
- Cool to room temperature, cover loosely with foil and let stand overnight before serving.

- In a medium bowl, mix flour, salt and butter until the mixture resembles fine bread crumbs. Pour in water, using more (up to approximately 1/4 cup) if necessary to make a smooth dough. Pat into a ball. Place on a lightly floured surface and knead 10 minutes, or until dough is smooth and elastic. Return to the bowl, cover and set aside.
- Heat oil in a large, deep skillet to 375 degrees F (190 degrees C).
- Melt butter in a medium saucepan over medium high heat. Stir in onion, garlic, green chile peppers and ginger. Cook 5 minutes, or until onions are golden brown. Stir in turmeric, chili powder, ground lamb and salt. Cook until the lamb meat is evenly brown, about 10 minutes. Stir in garam masala and lemon juice. Continue cooking 5 minutes, then remove from heat.
- Divide dough into 15 equal portions. Roll portions into balls, then flatten into 4 inch circles. Cut each circle in half. Dampen edges and form semicircles into cones. Fill cones with equal portions of the lamb meat mixture. Dampen top and bottom edges of cones, and pinch to seal.
- Carefully lower cones into preheated oil a few at a time. Fry until golden brown, 2 to 3 minutes. Drain on paper towels. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch cake pan with parchment paper.
- Unroll 1 tube of crescent roll dough and spread in the bottom of the prepared pan. Seal the seams of the dough to prevent from separation.
- Roll almond paste into a thin sheet, large enough to cover your cake pan. Cut edges with a knife or rolling pizza cutter.
- Combine mascarpone cheese, 1/2 cup white sugar, and egg yolk in the bowl of an electric mixer; mix until thoroughly combined and smooth with no lumps remaining. Spread evenly on top of dough. Place rolled out almond paste on top of cheese mixture.
- Open the remaining tube of crescent dough, unroll it, and put on top of the almond paste. Seal all of the seams and ensure dough covers the entire top of the pan. Whisk egg white and use a pastry brush to spread on the top of the rolled out dough. Spread sliced almonds on top to coat. Lightly sprinkle remaining white sugar evenly on top.
- Bake in the preheated oven until top is golden brown, 25 to 30 minutes. Remove from the oven and allow to cool.
- Meanwhile, mix powdered sugar and water for glaze together in a bowl. Drizzle over the top of the cooled Danish and cut.
