MIGA SANDWICH WITH AVOCADO



Miga Sandwich with Avocado image

My mother-in-law is Argentinian, and at every reunion, party or birthday she always serves miga sandwiches. They're very practical because they can be prepared hours in advance and cut into small pieces. Miga sandwiches are an Argentinean staple prepared with slices of bread called pan de miga. They're simple combinations of butter or mayonnaise, ham and cheese. Beyond this traditional recipe, there are endless variations of fillings for all tastes: lettuce, tomato, egg, hearts of palm, olives, corn and whatever cold cuts you can think of! Today I'm giving the traditional Miga a bit of Mexican flair with avocados! If you have a family get-together, like a graduation or birthday, try them out; I'm sure they'll impress and delight your guests. Besides, they'll look appetizing and festive on your table.

6 large slices of pan de miga bread
1/2 cup mayonnaise
24 slices cooked ham
24 slices sandwich cheese
5 avocados sliced
1 head of lettuce, washed

Steps:

  • Make sure you remove the crusts from your slices of bread.
  • Spread the mayo on a large slice of pan de miga bread. Add 4 slices of cheese and 4 slices of ham, completely covering the slice of bread.
  • Spread mayo on another slice of bread and place it over the ham and cheese. Spread more mayo on the other side (the top of the sandwich) and add a few leaves of lettuce and slices of avocado.
  • Spread mayo on a third slice of bread and close the sandwich. Repeat with the remaining slices of bread to prepare the rest of the sandwiches.
  • Softly compress your sandwiches on a tray and cover them in plastic wrap. Refrigerate for 2 hours.
  • Remove from the fridge and cut them diagonally in half, and each half again so that ou have small triangular sandwiches. Serve and enjoy!

6 eggs
12 slices Argentine migas bread (sliced white bread, a couple days old, crusts removed can be used)
4 tablespoons mayonnaise
3 tablespoons very soft Roquefort
Hot pepper sauce
Salt and pepper

Steps:

  • In a 2-quart pot, place the eggs. Cover with water by 2 inches and salt the water liberally. Bring the water to a boil and then cover, turn off the heat, and let sit for 8 minutes.
  • Grate the hard boiled eggs on a cheese grater. In a small bowl, combine the eggs, mayonnaise, and cheese. Adjust the seasoning of the egg mixture with hot sauce, salt, and pepper, to taste. Layer bread with egg mixture and serve as double decker sandwiches.
