MEXICAN RICE AND BEANS

Steps:
- Heat the oil in a large Dutch oven. Add the garlic, green onions and jalapeno and cook for 3 to 4 minutes. Reduce the heat to low and add the rice. Cook, stirring to make sure the rice doesn't burn, about 3 minutes. Add the chicken broth, cumin, salt, pepper, turmeric, beans, diced tomatoes and diced tomatoes and green chiles and stir together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the rice is not quite done, about 15 minutes.
- Meanwhile, preheat the oven to 350 degrees F.
- Top the rice and beans with the cheese, then bake with the lid off until the cheese is melted and the rice is fully cooked, about 15 minutes more. Top with chopped cilantro before serving.

Steps:
- In a large skillet over medium heat, combine first 6 ingredients, bringing the mixture to a boil. Reduce heat and simmer uncovered for 5 minutes. Stir in beans.
- Spread 1/3 of the bean mixture over the bottom of a 13x9-inch pan. Top that with half of the tortillas, overlapping as necessary and half of the cheese. Add another 1/3 of the bean mixture, then remaining tortillas and bean mixture.
- Cover and bake at 350°F for 30 minutes or until heated through. Sprinkle with remaining cheese and let stand for 10 minutes. Garnish with shredded lettuce and chopped tomatoes.
- Serve by topping with the sliced avocado or guacamole.

Steps:
- Preheat oven to 350 degrees.
- Cook rotini according to package directions. Drain.
- In large saucepan heat oil. Saute onion and celery until tender.
- Add hamburger, garlic, pepper, red pepper flakes, italian seasoning, and seasoned salt. Brown.
- Add mushrooms. Cook until soft.
- Add tomato sauce, corn, and sugar. Reduce heat and simmer for 5-10 minute.
- In medium bowl combine cream cheese, cottage cheese, and sour cream.
- Layer in greased 9 x 13 pan. Add half of rotini noodles. Add half of cheese mixture, add half of meat mixture. Repeat. End in meat mixture.
- Top with shredded cheese and sprinkle with parsley flakes.
- Bake uncovered for 30 minute.
