MARION'S SANTA FE ALMOND SLAW
This salad consists of green cabbage, onions, cilantro, tomatoes, bacon bits, almonds, and sesame oil. This is a favorite of everyone I make it for, and they ask me to bring it to every gathering they invite me to. It's yummy!

Steps:
- In a large bowl, mix the cabbage, green onions, cilantro, and tomato.
- In a skillet over medium heat, cook and stir the sesame oil, black pepper, and chili pepper until heated through. Mix in the bacon bits and almonds. Cook and stir about 5 minutes, until almonds are lightly browned. Remove from heat, and toss with the cabbage mixture. Serve immediately.

SANTA FE COLESLAW
This slaw has jicama, corn, cilantro and chipotles. From Sunset Mag July 2008. Found it when I was cleaning out my recipe book. I can't wait to try it...Let me know how you like it! I think I'm gonna grill my corn.

BAJA CABBAGE SLAW
Steps:
- Remove the outer leaves of the cabbage. Cut a V-shaped wedge around the tough inner core and remove the core and discard. Halve the cabbage to make 2 quarter sections. With a large, sharp knife, slice each section crosswise into a thin julienne (about 1/8 inch thick) or julienne with a hand-held Japanese mandoline. Transfer the julienned cabbage to a large bowl. In a bowl, mix together the mayonnaise, lime juice, and Tabasco. Toss the mayonnaise mixture with the cabbage, refrigerate, and use within a few hours.

- Place green beans in a small saucepan and cover with water. Bring to a boil; cover and cook for 3-5 minutes or until crisp-tender. Drain and immediately place beans in ice water. Drain and pat dry. , For dressing, in a small bowl, combine the cilantro, sour cream, lime juice, vinegar, garlic, cumin, salt and cayenne. , In a large bowl, combine the green beans, corn, pinto beans, black beans, red pepper, onion, chilies and olives. Sprinkle with cheese. Pour dressing over salad; toss gently to coat. Cover and refrigerate until serving.
