I make this at the beginning of the cold weather, and have it ready all winter. Vary the flavor of your mix by trying flavored nondairy creamer; I like the cinnamon.

Ingredients

10 cups dry milk powder
4 ¾ cups sifted confectioners' sugar
1 ¾ cups unsweetened cocoa powder
1 ¾ cups powdered non-dairy creamer

Steps:

In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

2 tablespoon(s) cocoa
3 tablespoon(s) sugar
1/4 cup(s) hot water
1 1/2 cup(s) milk
Lots - of tiny marshmallows (optional)

Steps:

Pour cocoa and sugar into a saucepan and slowly add hot water.
Stir until ingredients are blended together. Bring mixture to a boil. Boil over medium heat about 2 mins. Stirring constantly.
Reduce heat and add milk stirring occasionally until mixture is heated thoroughly. DO NOT BOIL.
Remove from heat and stir well. Pour into mugs and add marshmallows if using.
Enjoy and wait for Santa!

Steps:

In two wide-mouth quart jars, layer all of the ingredients. Cover jars. Decorate with fabric and ribbon. To serve, pour into a bowl and stir to combine.

Steps:

In an airtight container, combine all ingredients. Store in a cool, dry place up to 6 months. Yield: 13 cups mix (about 41 servings). , To prepare: Dissolve 4-5 tablespoons mix with 1 cup boiling water; stir well. , For spiced cocoa: Add 1-1/2 teaspoons ground nutmeg plus 1 teaspoon ground cinnamon to 3 cups of the basic cocoa mix. , For mocha cocoa: Add 1/4 cup instant coffee granules to 3 cups of the basic cocoa mix.

4 ounces bittersweet chocolate
marshmallows (to garnish)

Steps:

Combine all the dry ingredients in a large bowl and mix well.
Take the bittersweet chocolate and roughly chop it up to give a chunky but consistent size.
Mix well with a wooden spoon and then store in a dry airtight container.
To make the hot chocolate, simply add 1 cup of water per 1/2 cup of hot cocoa mix.
Heat in a small saucepan over low heat, stirring with a whisk.
Heat until hot, but do not boil, about 6 to 7 minutes.
Serve with marshmallows.
