Sarasota's Shrimp and Scallops With Creamy Risotto image

I love risotto, but honestly, I don't make it that often, but this is really good. At the end I simply stir in some seared scallops, shrimp and some greens for a great flavor. This is not my recipe well, not for the most part. But I got the idea from a small New England restaurant and this is my version and. And I admit, it is pretty basic, but it is always great!

1 cup arborio rice
1 small onion, fine chopped
1/2 cup fennel, thin sliced
1/2 cup white wine
5 cups chicken stock (you may only use 4 1/2, but I always have just a little extra)
1/4 cup cream
3 cups kale, stems removed and chopped fine
1/4 cup fresh parsley, chopped fine
2 tablespoons olive oil
2 tablespoons butter
15 large shrimp (peeled, tails removed)
15 sea scallops
2 tablespoons butter
salt
pepper
1/2 cup parmesan cheese

Steps:

  • Seafood -- Make sure all the seafood is cleaned and room temp or at least out of the refrigerator to take the chill off.
  • Risotto --
  • Step 1: In a large sauce pan, heat the oil to medium heat and add the onion, fennel and cook until tender. It should take 4-5 minutes. Add the rice and cook another couple of minutes until slightly brown and rice absorbs the oil and the flavors of the onion and the fennel. It will take just a couple of minutes. Add in the wine and cook another minute or so until the rice absorbs all the liquid.
  • Step 2: Chicken broth - make sure to heat up your chicken broth in a small sauce pan on the stove so you can add a little at a time.
  • Step 3: Slowly add a little chicken broth to the rice mixture, a little (1 cup) at a time until it is all absorbed. Don't forget to stir. When almost all the liquid is absorbed (about 15 minutes), add in the kale and cook another 5 minutes. Then add in the butter and cream and stir and remove from the heat and cover. I have read that risotto takes exactly so many minutes. Well every time I have made it. Never the same amount of time. So about 20-25 minutes is what I use. Just check it.
  • Seafood -- First, season the scallops with salt and pepper. And then in a medium sauce pan (NO non-stick if possible), heat up the butter to medium high heat. Add the scallops and cook 1-2 minutes per side. Don't move the scallops after you add them to the pan - let them cook. After 1-2 minutes the scallops should easily move and golden brown on one side. Flip and cook the other side. The second side will only take a minute (less time). Remove to a plate while you cook the shrimp. The shrimp again, just 2 maybe 3 minutes if that. Just when they start to curl and they turn pink remove and add to the scallops.
  • Finish -- If the risotto is too thick, just add a little chicken broth. Check for seasoning, salt and pepper; and add in the scallops, shrimp and parsley. Toss well and top with grated parmesan.

Several years ago, I had this great dish from a small "Seafood Shack," a little Hole in the Wall restaurant up in CT. I got some of the ingredients from the waiter, but this is my version. Now they served it in individual casserole dishes, as I do, but this can easily be made in a larger 13x9 casserole dish. It is pretty basic but so comforting. Cod or halibut or haddock, potatoes, and cheese in a creamy sauce with a crunchy topping. One note ... don't use bread crumbs / use cracker crumbs, use milk / not cream, use leeks and gruyere or swiss / not cheddar. Great dish. Now it does cook a while, but doesn't take long to put together. I like to make this and then go ahead and make a vegetable side dish. I like to serve this with some broccoli raab. Nothing else needed.

1 1/4 lbs cod, haddock (just cut in 4-6 pieces) or 1 1/4 lbs even halibut (just cut in 4-6 pieces)
1 lb russet potato, peeled and rough chopped 1-inch bite size pieces
1/2 lb leek, just the white parts
1 medium onion, cut in half and rough chopped
3/4 cup gruyere or 3/4 cup swiss cheese
2 tablespoons sherry wine
3 tablespoons butter
3 tablespoons flour
1 cup milk
salt
pepper
3/4 cup cracker crumb (I use Ritz, NO bread crumbs)
1 1/2 tablespoons butter, melted
1/2 teaspoon paprika
1 tablespoon fresh parsley

Steps:

  • Fish -- In a small pot topped with a steamer or colander, add enough water to the bottom so you can steam the fish, but you don't want too much water so when it boils it comes through the steamer or colander. Cook on a low boil. Add the fish and cook the fish for 4-6 minutes until opaque. Remove to cool in a small bowl. Then lightly break up, don't flake, just break up. Just keep in the bowl for right now.
  • Potatoes and Leeks -- Add the potatoes and Leeks to the same steamer or colander and cook 6-8 minutes until tender. Don't over cook, just slightly tender. Remove and add to the bowl with the fish. Reserve 1/2 cup of the water to use in the sauce.
  • Sauce -- Using that same pot, the bottom half only, melt the butter and then stir in the flour and cook for just a minute on medium heat until you have a nice roux or thickening agent. You don't want it to brown. Then add in the milk, reserved water, salt and pepper and cook on medium until the sauce thickens. This should take about 2-3 minutes. Then finish by adding the sherry wine and cheese. Cook on low until the cheese is melted.
  • Topping -- Just mix the cracker crumbs, melted butter and parsley.
  • Casserole -- In a 13x9" pan, spray with Pam or a non stick stick spray and add the fish and potatoes. Then pour the sauce over the casserole and finish with the cracker crumb topping.
  • Bake -- Loosely cover the casserole with aluminum foil and bake in a preheated 350 degree oven for about 35-40 minutes. After 15 minutes remove the foil and continue cooking. Cooking until brown and bubbly.
  • Serve -- A nice side of broccoli raab and you don't need anything else. A perfect cold night dinner.

1 lb sourdough bread, 1 medium load, roughly torn
8 tablespoons unsalted butter, 1 stick, melted, divided
1 cup shredded cheddar cheese
3 teaspoons kosher salt, divided, plus more to taste
4 cups dry white wine, plus 1 tablespoon, divided
1 lb shrimp, 16/20 count, peeled and deveined
1 lb large scallops
1 lb jumbo lump crabmeat
2 cups half & half
3 tablespoons all-purpose flour
1 teaspoon worcestershire sauce
1 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons ketchup
28 oz artichoke heart, 2 cans, drained and chopped
fresh chive, chopped, for garnish
lemon wedge, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Spread the bread in a single layer on a rimmed baking sheet and bake for 10 minutes, until lightly toasted. Let cool to room temperature. Leave the oven on.
  • Add the toasted bread to a food processor and pulse until finely ground. You should have about 4 cups (460 G) of bread crumbs.
  • In a large bowl, combine the bread crumbs, 4 tablespoons of melted butter, the cheddar cheese, and 1 teaspoon of salt and toss to combine. Set aside.
  • In a medium pot, combine 4 cups (960 ml) of white wine and a generous pinch of salt and bring to a boil over medium-high heat. Add the shrimp and cook until bright pink, about 1 minute. Use a spider or slotted spoon to transfer the shrimp to a colander to drain.
  • Return the wine to a boil. Add the scallops and cook until just opaque, about 2 minutes. Transfer the scallops to a colander to drain.
  • Chop the shrimp and scallops into bite-size pieces. Transfer to large bowl, along with the crab and 1 teaspoon of salt. Toss to combine.
  • In a liquid measuring cup or medium bowl, whisk together the half-and-half, 3 tablespoons of melted butter, the flour, Worcestershire sauce, paprika, lemon juice, ketchup, remaining tablespoon of white wine, and remaining teaspoon of salt.
  • Brush the remaining tablespoon of melted butter in a 9 x 13-inch (22 x 33 cm) baking dish.
  • Scatter the artichokes in an even layer over the bottom of the baking dish. Scoop the seafood mixture over the artichokes. Pour the sauce over the seafood. Top with the bread crumb mixture.
  • Bake the casserole for 20-25 minutes, or until bubbling and golden brown.
  • Top with chives and serve with lemon wedges.
  • Enjoy!

4 tablespoons butter, divided
3 cups chopped celery
2 cups chopped onion
1 teaspoon salt
¼ teaspoon ground black pepper
1 pound bay scallops, rinsed and patted dry
¾ cup all-purpose flour
5 cups milk
½ cup butter
1 (16 ounce) package shredded Cheddar cheese
12 ounces cooked shrimp
10 ounces cooked and cubed lobster meat
8 ounces cooked crabmeat, flaked

Steps:

  • Melt 3 tablespoons butter in a large Dutch oven over medium heat; stir in celery and onion. Cook and stir until translucent, 5 to 7 minutes. Season with salt and pepper and remove to a bowl. Leave grease in the Dutch oven.
  • At the same time, melt 1 tablespoon butter in a skillet over medium-high heat. Add scallops to the hot skillet in a single layer without crowding. Cook until golden brown and sizzling and opaque all the way through, about 2 minutes per side. Remove from heat.
  • Add flour to the Dutch oven; whisk over medium-low heat until mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk milk into the flour mixture, and bring to a gentle boil. Add Cheddar cheese and remaining 1/2 cup butter. Incorporate celery-onion mixture and simmer until thickened, 5 to 10 minutes.
  • While the mixture is simmering, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Stir scallops, shrimp, lobster, and crabmeat into the Dutch oven, then pour into a 9x13-inch baking dish.
  • Broil in the preheated oven until browned on top, 2 to 3 minutes.

I know there are many squash recipes out there. And, I admit, I am not much of a casserole fan, however, sometimes a good creamy casserole is just want you need. Besides ... my favorites, zucchini and summer squash so what could be bad. Now my absolute must for this dish is Ritz crackers and fresh herbs, and to me, this is what makes the dish. It is a simple easy side dish for any day of the week.

2 1/4 lbs squash, I like mine diced in 1/2-inch cubes (I use a mix of zucchini and yellow or summer squash)
1/2 cup yellow onion, copped
1 teaspoon minced garlic
2 eggs (extra large or jumbo, 3 if medium)
1/2 cup sour cream (no low fat)
1 3/4 cups white cheddar cheese cheese (you can use any kind, I just like the white cheddar with this, 1 1/2 cup for the casserole, 1/4 cup )
1 cup fine cracker crumb (Ritz)
1 large tomatoes, cut in slices (I like a large beefsteak)
2 tablespoons melted butter (no margarine)
1 tablespoon fresh parsley
1/2 teaspoon dried thyme
1 tablespoon olive oil
salt
pepper

Steps:

  • Vegetables -- In a medium saute pan, add the olive oil and bring to medium heat. Add the onion, garlic and squash and saute until both the squash and onion become tender. Don't cook on high, you don't want to brown them, you just want to slowly soften them. It should take around 5 minutes.
  • Sauce -- In a small bowl beat the eggs well and add the sour cream, parsley, cheese, thyme, salt and pepper and mix well.
  • Casserole -- After the vegetables are soft, remove from the heat and stir in the parsley, crackers, butter and then the egg / sour cream mixture.
  • In a medium casserole dish, spray with Pam or any non stick spray and pour in the squash mixture. Top with the remaining cheese and cracker crumbs.
  • Bake -- 425 degrees (middle shelf) for 15 minutes. Top with the tomato slices and a little salt and pepper. Cook another 10 minutes until golden brown and bubbly. ENJOY!

SEAFOOD:
1 pound uncooked medium shrimp, peeled and deveined

1 can (16 ounces) crabmeat, drained, flaked and cartilage removed
5 tablespoons butter, cubed
1/4 cup all-purpose flour
1-1/2 cups half-and-half cream
1 package (8 ounces) cream cheese, cubed
1-1/2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed

1/4 teaspoon pepper
1/4 teaspoon dried thyme
TOPPING:
1-1/2 cups soft bread crumbs

Steps:

  • Preheat oven to 325°. Cook rice according to package directions. Meanwhile, in a large skillet, heat butter over medium-high heat. Add celery, onion and carrot; cook and stir until crisp-tender. Add garlic, salt and pepper; cook 1 minute longer., Add to cooked rice. Stir in parsley and dill. Bring to a boil; cook and stir 2 minutes or until thickened and bubbly. Reduce heat. Stir in cream cheese, dill and seasonings until smooth. Stir into seafood mixture., Pour over rice mixture. Toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, 50-55 minutes or until golden brown. Let stand 10 minutes before serving.

  • Carefully slice the zucchini, potatoes, and carrots very thinly with a mandoline or a sharp knife. Watch your fingers!
  • In a large bowl, combine the eggs, melted butter, and milk, and whisk until combined.
  • Add the nutmeg, basil, thyme, salt, pepper, and flour, and whisk well.
  • Add the sliced veggies to the batter and stir well until the slices are well-coated.
