I had to make something QUICK for a Mexican themed birthday party, so I threw this together and got RAVE reviews. Some ate it separately most though added it to their burrito and/or fajita mixin's...As usual, I rarely measure, so these measurements are appproximate and by memory...sorry! TRY to make the night before, but it's still good when made on the fly!

1 (15.25 ounce) can sweet corn, drained
1 orange bell pepper, chopped
1 jalapeno pepper, seeded and minced
1 red onion, chopped
1 tablespoon chopped fresh cilantro, or more to taste
1 tablespoon fresh lime juice, or to taste
½ teaspoon crushed red pepper
1 teaspoon honey
salt and black pepper to taste

Steps:

  • Stir the corn, orange bell pepper, jalapeno pepper, red onion, cilantro, lime juice, crushed red pepper, honey, salt, and pepper together in a bowl. Chill until ready to serve.

3 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
5 green onions, thinly sliced
1 medium sweet red pepper, finely chopped
1 jalapeno pepper, finely chopped
1/3 cup rice vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 to 1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
Dash cayenne pepper
2/3 cup minced fresh cilantro

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, whisk the vinegar, oil, mustard, salt, pepper sauce, pepper and cayenne. Stir in cilantro. Drizzle over corn mixture and toss to coat., Chill until serving. Serve with your favorite snack chips or grilled meats.

This is a great tasting corn. IT's easier than canning corn. It's like cream corn from the can only better....... I got this from a canning site.

16 cups raw corn, cut from cob
1 cup sugar
1 quart water
4 teaspoons salt

Steps:

  • Mix all ingredients together.
  • Bring to boil.
  • Reduce heat.
  • Let simmer 15 minute.
  • Remove from heat.
  • Let cool overnight to absorb liquid.
  • Box or bag.
  • Label.
  • Freeze.

We all use frozen vegetables now and then. Peas and corn I use often and always have on hand. I love these on the grill, but you can also do them right in the oven which makes for NO clean up. Some herb butter (right from the grocery store) and pepper jack cheese for a great 15 minute side dish and NO dishes. To me ... corn goes with anything, just enjoy it.

Number Of Ingredients 5

4 cups frozen corn (I have used both canned or frozen, and have used both yellow a white shoepeg corn as well)
3 scallions, chopped fine
2 tablespoons herb butter (many brands available, I find mine in the dairy aisle with all the others butter. But you can always)
3/4 cup monterey jack pepper cheese, shredded
1/4 cup chicken broth

Steps:

  • Foil Pouch -- Use a large sheet of foil about 18" long and spray the inside with Pam or any non stick spray. Pour the corn in the center and top with the scallions and lightly toss. Cut the butter into small pieces and top on the corn and finish with the broth and the cheese. Fold up your foil pouch really well.
  • Grill -- Either outside grill or in the oven 375 degrees or medium high heat on the grill. It takes about 10-15 minutes. I flip usually once during cooking.
  • ENJOY this no fuss, inexpensive, easy, quick side dish.
