AIR FRYER JAMAICAN JERK SALMON AND VEGGIES
How to make jerk salmon in the air fryer with asparagus & baby potatoes

Steps:
- In a bowl or jar, combine all jerk seasonings and mix well to integrate. (Store in a jar to keep DIY spice rub for later use!)
- Brush each salmon filet with oil (optional). Sprinkle jerk seasoning onto each filet.
- To prepare veggies, add baby potatoes and asparagus spears into separate bowls. Drizzle each with oil and toss with seasonings to coat.
- Preheat air fryer to 380°F (195°C).
- Once preheated, add potatoes into air fryer and cook for 5 minutes.
- Next, add asparagus into air fryer and cook for 4 more minutes.
- Finally, place salmon into air fryer on top of asparagus, layering a few lemon slices on top of each filet. Cook for 6 more minutes. (If desired, you can turn down the heat slightly when cooking your salmon, depending on how you like it cooked.)
- While salmon cooks, prepare mango salsa. (See next recipe below.)
- Serve jerk salmon and veggies on a plate, top with mango salsa, and enjoy!

JAMAICAN JERK SALMON AND MANGO PINEAPPLE SALSA
Steps:
- Combine mangoes, pineapple, black beans, onion, cilantro and 1/4 teaspoon salt in a bowl. Combine remaining 1/2 teaspoon salt, allspice, cumin, thyme, cayenne and cinnamon in another bowl; rub over both sides of each fillet. Heat oil in a large nonstick skillet over medium-high heat; cook salmon until cooked through, 5 minutes per side. Serve with salsa.
JAMAICAN JERK BLACKEND SALMON
This is my go to fish dish it has such a flavor and makes you feel like an Island paradise awaits you!

- In a small bowl, all spices together until well combined.
- Coat salmon filet with olive oil. Rub spice mix onto each filet until coated well. Heat grill or skillet on medium heat.
- Put the salmon skin side down and cook for 10 min. Flip over and grill on flesh side for an additional 3-5min. It should be dark brown and salmon will be cook through but not dry. Garnish with lemon.
CARIBBEAN JERK GROUPER
Steps:
- In a large bowl, mix the jerk seasoning, olive oil, garlic, brown sugar, orange juice, and soy sauce. Clean the grouper fillets and remove the bones. Place the fillets in the marinade, then cover the bowl and refrigerate for 2 to 4 hours.
- Preheat a heavy skillet over medium-high heat. Remove the grouper fillets from the marinade and cook for 4 to 5 minutes, until fish is opaque throughout, turning the grouper every minute. Serve immediately.
JAMAICAN JERK CHICKEN AND SEASONING
I was fortunate to receive an old family recipe from a business associate who is from Jamaica for jerk seasoning. We like it so much that I make 2# batches at a time. For those of you not familiar with Jerk, it is a spicy, sweet, tangy and HOT seasoning for grilled meat, pork and chicken particularly. This spice blend recipe will make enough for several batches, but remember, the idea is to put as much on the meat as you can get to stick.

- Combine all but chicken, lime juice and oil in mixing bowl and whisk to mix well.
- Whisk together lime juice and olive oil.
- Rub chicken well with lime/oil mix. Do not marinate.
- Coat chicken with dry seasoning/spice mixture. The idea here is to get as much as possible to stick to the chicken. We store our seasoning in a leftover spice container with large sprinkle holes and use that to season. This is not a rub, so it should not be applied in rub fashion.
- Refrigerate 1-3 hours, then remove from refrigerator and allow to come to near room temperature.
- Prepare grill for direct/indirect grilling.
- Grill chicken over hot direct fire. Don't worry about the black, it's supposed to be there. In fact, 30-40% of the skin should end up black, but it will not be bitter.
- Once seared, remove to the indirect heat area of the grill and cook to 165* internal temperature.
- One quick dance across the direct heat before serving will help crisp it a bit.
- Serve with plenty of napkins.

- In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
- Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
- Preheat an outdoor grill for medium heat.
- Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.
