SASSY TAILGATE SANDWICHES
From Real Women of Philadelphia 2010 Host Caryn Ross: Hawaiian bread rolls provide a subtly sweet contrast to the savory flavors of ham and PHILADELPHIA Chive and Onion Cream Cheese. The sandwiches are melt-in-your-mouth good after they come out of the oven.

Steps:
- Cut all rolls in half. Place roll bottoms in 9x13-inch pan.
- Place equal amounts of ham on each roll bottom. Top with Gruyere.
- On each of the roll tops, spread a generous amount of the cream cheese spread. Return the tops to the bottoms making sandwiches.
- In a separate bowl, mix together the butter, Worcestershire sauce, onion and Parmesan cheese. Pour over your sandwiches and let sit for at least 20 minutes. (You can make these ahead of time and allow to sit in fridge overnight.)
- Place sandwiches, covered in foil, in a preheated 350 degrees F oven. Bake for 20 minutes or until warmed through. Enjoy!

Steps:
- Working in batches, cook pancetta in heavy large skillet over medium heat until brown and crisp, about 6 minutes per batch. Transfer to paper towels to drain. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature.
- Place tomato slices in shallow baking dish. Add basil, olive oil, oregano, and fleur de sel. Sprinkle with ground black pepper and turn to coat. Let stand at least 30 minutes and up to 1 hour.
- Place 6 toasted bread slices on work surface. Divide burrata among bread slices and spread to edges. Top each with 1 tomato slice, then pancetta slices, dividing equally. Top with arugula. Cover with remaining 6 toasted bread slices, and press each slightly to adhere. Cut each sandwich in half and serve.
SARASOTA'S GRILLED SMOKED SALMON BLT WITH AVOCADO
Now I've looked, but there are about 1,000 recipes out there for BLT's with smoked salmon, but none that matched mine, so here it is. Now this combines a fresh aioli, arugula which is a must to me, and a mix of a tomato and onion salsa topped with chopped bacon and avacado, provolone cheese and of course the salmon; all on a chibatta and lightly grilled. Seems like a lot of work, but not really, all in baby steps and worth it.

- Aioli -- Mix the mayo, basil and lemon zest. Chill until ready to assemble the sandwich. (This can be made ahead).
- Bacon -- Saute the bacon in a small pan on medium heat until crispy and brown. Set to the side on a paper plate with a paper towel so it can drain.
- Prepare Vegetables -- Dice up the avocado and toss with the bacon, and set to the side.
- Tomato Salsa -- I dice the tomatoes and the onions fairly fine. Drizzle with 1/2 teaspoon olive oil and 1/2 teaspoon red wine vinegar and toss.
- Stuff and Grill -- I like to use chibatta bread cut lengthwise and lightly scooped out, so you have a little room in the sandwich for the fillings. Lightly toasted on the grill or grill pan or in the oven for just a minute to give it crust so it doesn't soak up all the sauce.
- Spread the aioli on the bottom half, top with half the cheese slices, arugula, then the tomato and onion salsa, salmon, avocado and bacon mix, the other half of the cheese and the top bread layer also slathered with the aioli.
- Grill -- You can grill inside or outside. I like to put my cast iron on top as it grills just to give it a little weight to it as it cooks. It just takes 4-5 minutes per side to get golden brown and the cheese melts. Cut in slices and enjoy!

SARASOTA'S TWISTED DOUBLE LAYER BLT SANDWICH
I can not take too much credit for this. This was a sandwich served at a small little "Hole-In-The-Wall" Bait Shop that also was a "somewhat" Restaurant over in the everglades. The owners were originally from NY and worked in some of the top restaurants and gave it all up for FL life in the everglades. Well if you don't know where this place is, you WON'T find it - there is NO street name (a dirt road), NOT on the map, and it basically has NO name. Seafood, gater, burgers, sandwiches and chicken is about it, no steak, no soup, chili now and then -- but 5 star quality. Well, the day I was there I ordered a BLT. Well when it came out ... it wasn't like any BLT I ever had. It was amazing but so different. Now being a Mom and Pop place in the everglades and 4 picnic tables, I knew I could talk to her and find out the crazy history behind this sandwich. So she sat down and told me the story. She said that is was not her traditional BLT, but she was forced to make some changes. Apparently, their delivery truck broke down so they didn't get their meat or produce. So she decided to improvise. Now, it still had tomatoes, bacon, mayo and lettuce, but this was the result. What a fantastic sandwich. It was served with both regular and sweet potato fries. I had to recreate it.

- Mayo -- Mix the bacon, mayo, avocado, red pepper, and any salt and pepper together and set to the side. Don't mix too much as you still want the avocado to be chunky.
- Tomato -- Mix the tomatoes, some salt and pepper, go easy, shallots and set to the side.
- Bread -- Toast your bread so it will be ready to put everything together.
- Sandwich -- Layer 1: Toasted bread with the bacon, avocado mayo spread on top; Layer 2: Tomato shallot mixture; Layer 3: Lettuce; Layer 4: Toasted bread with the bacon, avocado mayo spread on the bottom. Top with the slice of cheese and put under the broiler on a small baking sheet for 10-20 seconds until the cheese melts. Remove from the broiler immediately; Layer 5: Tomato shallot mixture; Layer 6: lettuce; Layer 7: Toasted bread with the bacon, avocado mayo spread on the bottom.
- Finish -- Secure the 4 corners with tooth picks and cut corner to corner. Now that is a very unique version, but fantastic BLT. Classic flavors with a twist. It is wonderful! Simply ENJOY.

- Cook the bacon. If you are only making a couple of sandwiches fry the bacon in a skillet over medium heat, flip mid way, cook about 5 minutes per side until the bacon has rendered some fat but isn't so crispy it'll crumble when you handle it. Drain cooked bacon on a paper towel lined plate.
- Lightly toast bread in toaster. If you choose to add cheese then you may want to make the BLT like you would a grilled cheese so that the cheese melts. Lightly spread both sides of the bread with plain mayonnaise, add cheese, bacon, tomato and other slice of bread. Fry over medium heat, until a golden brown. Remove from heat and add lettuce.
