Steps:
- Cut ribs into serving-size pieces; sprinkle with pepper. Place in a 5- or 6-qt. slow cooker. Combine the remaining ingredients; pour over ribs. Cook, covered, on low until meat is tender, 6-8 hours. Serve with sauce.

SASSY SAMBAL BBQ RIBS

- Line a rimmed baking sheet with foil or parchment. For the rub: Combine the sugar, paprika, and salt, and use the mixture to sprinkle the ribs all over, front and back. Place on the baking sheet and let rest at at room temperature. Preheat oven to 325F Pour the beer under the ribs, cover with foil, sealing it to the edge of the baking sheet, and carefully place in the oven. Bake for 90 minutes, until tender. Remove from the oven and chill until ready to barbecue. For the Sauce: Put the oil into a medium saucepan over medium heat. When the oil ripples, add the onion and pepper. Cook for 3 - 4 minutes until the onions are translucent. Add the ketchup, samba, brown sugar, teriyaki baste and glaze, and cider vinegar. Simmer for 15 minutes until the sugars dissolved and the sauce thickens slightly. To grill. Brush the sauce liberally over the ribs, and place on the grill away from the heat. Cover the grill and cook for 10 to 15 minutes, until the ribs are tender and the sauce has baked onto the ribs. Serve with additional sauce on the side.
SYLVIA'S WORLD FAMOUS TALKED ABOUT SPARERIBS

- Rub salt, black pepper, and red pepper into ribs. Place in deep baking dish, cover, and refrigerate overnight.
- Preheat oven to 375 degrees F. Pour vinegar over the ribs and bake 1 1/2 hours. Rotate ribs 2 or 3 times during cooking.
- Remove ribs from baking dish and place in a single layer on baking sheets. Bake at 350 degrees for 1 hour.
- Cut slabs between bones into individual ribs and place in a baking dish. Spoon sauce over them to coat lightly. Cover pan with aluminum foil and bake until heated through- about 20 minutes. Serve with original sauce on the side.
BBQ RIBS "SNAKE METHOD"

- Prepare and preheat your smoker to 300 degrees F. (See Cook's Note.)
- For the glaze: In a large saucepan, whisk together the brown sugar and pickle juice. Heat over medium-high heat, stirring, until the sugar has completely dissolved, about 5 minutes, then remove the pan from the heat to cool.
- For the rub and ribs: Combine the salt, pepper, celery seed and coriander in a small bowl; set aside.
- Slide a butter knife under a corner of the thin white membrane on the bone side of the spareribs to free it from the meat. Using a dry towel for grip, peel off the entire membrane and discard it. Pat the ribs dry with paper towels and season on both sides with the rub.
- When the temperature in the smoker reaches 300 degrees F and the smoke is running clear, add the ribs bone-side down. After 1 1/2 hours, test the ribs for doneness by flipping a rack and pressing the meat between the bones. If the meat pulls away from the bones, it's done. If not, continue smoking until it does, about 30 minutes more.
- When the ribs are done, gently brush them with the glaze, being careful not to remove the beautiful bark that forms on the exterior of the meat. Cut between the bones and serve with a side of your favorite sauce .

- To make the ribs easier to handle, cut each slab between the middle bones into 2 equal pieces.
- Rub the salt, black pepper, and red pepper into both sides of the ribs.
- Place the ribs in a deep baking dish, cover them, and refrigerate overnight. Preheat the oven to 450F.
- Pour the vinegar over the ribs and bake 1 1/2 hours.
- Rotate the ribs two or three times during baking and spoon some of the pan juices over them.
- Remove the ribs from the baking dish and place in a single layer on baking sheets.
- (Line the baking sheets with aluminum foil for easy cleanup.) Bake at 450 F for 1 hour.
- The ribs should be tender and well browned.
- This much can be done up to a day in advance. Cool the ribs, cover tightly, and refrigerate. Bring to room temperature for about 1 hour before continuing.
- To finish the ribs, preheat the oven to 400 F.
- Cut the slabs between the bones into individual ribs.
- Place the ribs in a baking dish large enough to hold them comfortably.
- Spoon enough of the barbecue sauce over them to coat lightly.
- Cover the pan with aluminum foil and bake until heated through, about 20 minutes. Serve with additional barbecue sauce on the side.
- BARBECUE SAUCE Ruth developed this recipe because she found most barbecue sauces too vinegary or bitter, and it's the secret to our popular ribs.
- Simple to prepare and absolutely delicious, once made and strained it keeps for quite a while, at least a month.
- Combine all the ingredients in a heavy pot and heat just till hot. Don't bring to a boil or the sauce will turn dark and become thin.
- Cool the sauce to room temperature, strain it, and store it in a tightly covered jar in the refrigerator.

THE EASIEST WAY TO MAKE GREAT BBQ RIBS RECIPE BY TASTY

- Make the smoke bombs: Add the wood chips to a bowl and cover with water. Let soak for 1 hour, then drain. Place 1 cup of the damp wood chips on a piece of aluminum foil and fold into a packet. Poke multiple holes in the top with a toothpick or fork. Repeat with the remaining wood chips, creating 4 packets total.
- Make the sauce: Add the ketchup, brown sugar, molasses, apple cider vinegar, Worcestershire, salt, pepper, and smoked paprika to a small pot over medium heat, whisking to combine. Once the sauce begins to boil, reduce heat to low and simmer for 15 minutes. Remove from the heat and let cool to room temperature.
- Make the rub: In a medium bowl, whisk together the brown sugar, salt, pepper, cumin, onion powder, paprika, cayenne, ground mustard, and garlic powder.
- On a large cutting board, pat the ribs dry with paper towels. If necessary, remove the membrane on the bone-side of the ribs by using a paring knife to gently loosen and pulling it up in one sheet.
- Generously season the ribs all over with the dry rub.
- Wrap the ribs in aluminum foil until completely covered.
- Preheat the grill to 300°F (150°C) with the lid closed.
- Place the foil-wrapped ribs over indirect heat and close the lid. Cook for 2½ hours, until the meat is tender and starting to pull away from the bone, flipping every 30 minutes.
- Remove the ribs from the grill and let rest for 10 minutes. Meanwhile, carefully remove the grates and place the smoke bombs over the flames. Close the lid and let smoke build up for 10 minutes.
- Unwrap the ribs and discard the foil.
- Baste one side of the ribs with the sauce and place directly on the grill, sauce side down. Baste the other side, now facing up. Continue to flip and baste every 5 minutes for 15 minutes total.
- Remove the ribs from the grill and serve with extra barbecue sauce.
- Enjoy!

- Whisk together all the rub ingredients in a small bowl.
- Spread the rub evenly over the pork ribs and place on a wire rack set over a baking sheet with meat side up. Cover with plastic wrap and refrigerate overnight.
- For the BBQ sauce, heat oil in a large pot or dutch oven over medium-high heat. Add poblano chile, red onion, garlic, ginger, and a pinch of salt, then cook until onions begin to soften.
- Add the remaining sauce ingredients and bring the mixture to a simmer.
- Turn the heat down to medium-low and cook at an active simmer until the mixture is reduced to about 2 cups (470 ml), about 30-45 minutes.
- Once reduced, cool slightly then transfer mixture to a blender. Puree until smooth.
- Preheat oven to 275˚F (140˚C).
- Uncover the ribs. Spread 1 cup (290g) of the BBQ sauce over each rack of ribs.
- Keeping them raised over the baking sheet on the wire rack. Pour water into the bottom of the baking sheet.
- Bake in a preheated oven for 3-3 ½ hours.
- Remove ribs from oven and preheat the broiler to high.
- Broil the ribs for 5-10 minutes to finish, until the sauce caramelizes.
- Cut into individual ribs.
- Enjoy!
