This was a spur of the moment recipe I made to use the ham bone left from Easter. It's really easy and tastes great on a cold evening!

1 (8 ounce) package 15-bean soup mix
1 ham bone
3 cups cubed fully cooked ham
2 cups chicken broth
2 cups water
1 onion, chopped
3 carrots, chopped
1 (15.5 ounce) can great Northern beans, drained and rinsed
2 cloves garlic, finely chopped
1 teaspoon freshly ground black pepper
½ teaspoon salt
1 bay leaf

Steps:

Place 15-bean soup mix in a large bowl and cover with several inches of cool water; soak in refrigerator 8 hours to overnight. Drain and rinse.
Place 15-bean soup mix, ham bone, cooked ham, chicken broth, water, onion, carrots, great Northern beans, garlic, black pepper, salt, and bay leaf in a slow cooker; stir to combine. Cook on Low for 8 to 10 hours.

12 ounces dry 18 bean soup mix
1 onion, chopped
4 cups chicken broth
3 garlic cloves, minced
2 carrots, chopped
3 celery, chopped
1 tablespoon dried basil
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 large ham hock
14 ounces tomatoes, undrained
1 bay leaf
1 tablespoon lemon juice (optional)

Steps:

Sort and wash beans; place in crockpot. Cover with water to 2 inches above beans; cover and let stand 8 hours or overnight. Drain beans.
Combine rest of ingredients.
Cook on high for 2 hours then lower the heat to low and cook for 4 hours (or cook for 8 hours on low).
Remove ham hock and let cool for 15 minutes. Remove the bay leaf. Take a stick blender and puree some or all of the soup. Chop the ham in bite size pieces and add back to the soup.
Taste for seasoning and correct at this point.

Rinse and drain the beans. Pick through and remove any unwanted bits of debris. Place in a 6-quart or larger slow cooker.
In a skillet over medium heat, heat the olive oil. Once the oil is hot (but not yet smoking), add the onion, carrots, and celery. Cook, stirring often, until the vegetables are crisp-tender and the onion is turning translucent, about 6 minutes. Add the garlic and cook for 30 seconds, just until fragrant. Transfer to the slow cooker with the beans.
To the slow cooker, add the ham bone (or diced or shredded ham), stock, 2 cups water, tomatoes, potatoes, bay leaf, smoked paprika, chili powder, black pepper, and rosemary or thyme. Cook on high for 4 to 5 hours or low for 7 to 8 hours, or until the beans are tender.
Once the soup is cooked, remove and discard the bay leaf and rosemary or thyme (the herb leaves will mostly have fallen off, so it will likely just be the stems left to remove, which is perfect). If using a hambone, remove it from the soup and shred or chop any meat left on it, then stir the meat back into the pot. Stir in the red wine vinegar and peas. If you like a thinner soup, add additional water until you reach your desired consistency.
