EASY BEEF OVEN ROAST

Steps:
- Season roast. Place in shallow roasting pan. Insert oven-safe meat thermometer into center of roast avoiding fat or bone.
- Oven-Sear by placing uncovered roast in preheated 450°F (230°C) oven for 10 minutes.
- **Reduce heat to 275°F (140°C); cook uncovered to desired doneness, removing from oven when 5°F (3°C) below finished temperature. (Bone-in roast can take 30 to 45 minutes less.)
- Cover with foil and let stand for at least 15 minutes before carving into thin slices.
- **Not around to turn it down? Skip Step 2 and roast at a constant 275°F (140°C). This is especially good for less tender cuts and smaller roasts (less than 1 kg/2lb). Allow approximately 15% longer cook time.
- A rack in the pan promotes even cooking.
- Roast without a lid for best browning.
- Use a thermometer to know when your Oven Roast is done the way you like it.
- Let roast stand at least 15 minutes after cooking to let juices settle.
- Carve Oven roasts in thin slices across the grain.
THE BEST BEEF STROGANOFF
We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

Steps:
- Bring a large pot of salted water to a boil.
- Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
- Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
- Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
- Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
- Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
- Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.
OVEN-ROASTED WEEKEND BEEF
The recipe for the beef is based on a simple and not terribly expensive roast of beef, crusted in a sort of dry rub that is rather more tropical than what you find in most parts of New England, save those inhabited by the great John (Doc) Willoughby, who was the executive editor of Gourmet until that magazine's demise. Willoughby has championed the intersection of American winter and Caribbean spices for years. This Willoughby-ish mixture - salt and pepper, coriander and cumin, brown sugar and paprika - is wonderful on fire-cooked beef, of course, but it's still excellent when used in an oven until it goes tight and deepest brown over the meat.

- Preheat the oven to 350 degrees (or light a charcoal fire on one side of a large kettle grill, using a small pillow's worth of briquettes). Line a baking sheet with aluminum foil.
- Combine the dry ingredients in a large bowl. Place the roast in the bowl and rub the spices all over the meat, pressing down so they adhere.
- Place the roast on the baking sheet and cook for 45 minutes to an hour, until the meat registers an internal temperature of 130 to 135 degrees for medium-rare. Remove from the oven and let sit, loosely tented under foil, for 15 minutes before slicing. (Alternately, when the coals are covered with a fine ash, place the roast on the side of the grill opposite the fire. Cover, cracking the vent open a little, and cook for 40 to 50 minutes, or until the meat has reached an internal temperature of 130 to 135 degrees for medium-rare. Remove from the fire and let sit, loosely tented under foil, for 15 minutes before slicing.)
OFF-OVEN ROAST BEEF

- Remove roast from refrigerator. Preheat oven to 500 degrees.
- In a small bowl, mix together salt, pepper, garlic, olive oil and red-pepper flakes to create a kind of paste. Rub this all over the roast. Place beef in a roasting pan or cast-iron skillet, fat-side up, and put in oven. Cook undisturbed for 5 minutes per pound.
- Turn off oven. Do not open oven door. Leave roast to continue cooking, undisturbed, for two hours.
- After two hours, remove roast from oven. Slice and serve alongside, ideally, a watercress salad, some skillet-fried potatoes and a small tureen of Henry Bain sauce.

OVERNIGHT ROAST BEEF

- Preheat oven to 350*F Put sirloin in roasting pan. Pour remaining ingredients over top. Cover roast with a lid or foil. Roast in oven for 3 hours. Remove meat from gray and cool for 30 minutes. Cover both meat and gravy well and refrigerate overnight. The next day skim fat from gravy. Preheat oven to 350*F Slice meat into thick slices - thickness depends on your preference. SUNDAY NIGHT ROAST BEEF AND GRAVY WITH EASY RICE

- Preheat the oven to 275 degrees F.
- Season the meat on all sides with the Essence, salt, and pepper. Heat the oil in a large Dutch oven and brown on all sides, about 4 minutes per side. Remove the roast from the pan and add the onion slices and thyme sprigs. Place the roast on top of the onions, fat side up. Add the beef broth to the pan and place in the oven, uncovered. Roast until the beef is tender and registers an internal temperature of 130 to 135 degrees F, about 1 1/2 to 2 hours.
- Transfer the roast to a platter or cutting board and let rest for 15 minutes before carving.
- Meanwhile, use a slotted spoon to discard the onions and thyme sprigs. Place the Dutch oven over medium-high heat to heat the beef drippings. Combine the cornstarch and water in a small bowl until dissolved. Add the cornstarch mixture to the beef drippings and bring to a boil. Cook, stirring constantly, until slightly thickened, 2 to 3 minutes. Remove from the heat and carefully transfer to a gravy boat or decorative bowl.
- Carve the beef thinly and arrange the slices on large plates with rice on the side. Drizzle gravy over each portion and serve alongside of the Easy Rice.

- In a 2-quart saucepan, combine the rice, water, butter and salt, and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until all the liquid is absorbed, about 20 minutes. Remove the pan from the heat and let sit, covered, for 10 minutes. Uncover and fluff the rice with a fork before serving.

My husband begs for this in the fall and winter. The whole family loves the smell of this cooking while watching Sunday Football games :) Versatile as far as the veggies go...Leave the potatoes out and make some mashed potatoes on the side...great with the rich brown gravy!

- Preheat oven to 350*.
- Place roast in large roasting pan or baking dish.
- Arrange vegetables around roast.
- Sprinkle meat and vegetables generously with basil, dried garlic, garlic powder, salt and pepper.
- Place in oven and allow to cook for about 15 minutes.
- Add water to pan about 1/2 inch to an inch up.
- About every 20 minutes or when water is diminishing and turning darker, add a little more water so it doesn't steam away completely.
- You can pour this over the roast if if is getting too dry on top.
- Allow to cook 20-30 minutes per pound or until your desired doneness and when veggies are tender.
- Remove roast to carving platter and remove veggies with a slotted spoon to their own serving dish.
- To make gravy, either prepare gravy mix as directed on package but use liquid from pan as substition for all of some of the water indicated.
- OR, in a sauce pan, whisk together 1/4 cup of pan drippings and 1/4 cup flour until smooth.
- Heat over low heat until mixture starts to bubble.
- Add 2 cups of water or a combination of water/dripping adding to 2 cups very slowly to flour mixture.
- Simmer 5 minutes, remove from heat and add 1 tsp.
- (or more) of Gravy Master.
- Stir in some salt and pepper to taste and serve with sliced beef.
- Slice beef after it has sat for about 15 minutes to retain juices.
