- Stir in tomato, water, lemon juice and seasonings.
- Place pork chop in baking dish and spoon vegetable mixture over top.
- Bake at 350 until pork chop is done.

- Cook rice according to package directions. Meanwhile, in a large nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides; remove from pan., Add onion to drippings; cook and stir until tender. Stir in tomatoes, broth, parsley and seasonings; bring to a boil. Return pork to pan. Reduce heat; simmer, covered, until a thermometer inserted in pork reads 145°, 6-8 minutes., Remove pork to a serving plate; keep warm. In a small bowl, mix flour and water until smooth; stir into sauce. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes. Spoon over pork; serve with rice.

SAUCY PORK CHOPS
I got this recipe out of a cookbook that uses 5 ingredients or less. It's the simplest way to make tender, tasty pork chops. I always hated pork chops growing up, only ever eating a dried out, fried, and breaded chop. I refuse to make them this way. These are delicious and the sauce is very good over the rice.

Steps:
- Add half of the ketchup and Worcestershire sauce in a ziplock bag with the pork chops.
- Set in refridgerator for 15-45 minutes.
- Mix remaining ingredients in bowl.
- Place pork chops and marinating liquid in an ungreased 13"x9" baking pan.
- Top with sauce mixture.
- Cover and bake one hour at 350 degrees.
- Serve over rice.

- Sprinkle pork chops with garlic powder, salt and pepper. In a large skillet, brown chops in oil on both sides; drain. , In a small bowl, combine the ketchup, brown sugar and liquid smoke if desired. Pour half of the sauce into a 3-qt. slow cooker. Top with pork chops and remaining sauce. Cover and cook on low for 4-5 hours or until meat is tender.

- Preheat oven to 350º F.
- Preheat a large heavy skillet, and add the oil. Brown onions, garlic. rosemary , raisins and mushrooms in skillet, and remove to a dish.
- Brown pork chops five minutes on each side. Transfer the chops to a rectangular baking dish or use same skillet if oven proof. Put the sauteed onion mixture on top.
- Combine honey, seasonings and mustard and spread over chops. Pour on grape juice. Add raisins.
- Bake uncovered for 45 minutes, basting occasionally. Cool slightly and slice into thin strips.
- Simmer pan juices until they reduce and thicken to desired consistency. Transfer slices to a serving dish and pour over pan juices.

SAUCY PORK CHOP FOR ONE (OR MORE)
Living single makes it hard for those of us who are used to cooking for a family of four. I invested in a new magazine called Cooking for 2 and LOVE IT! The recipes are for one or two folks and no leftovers to crowd my fridge. I like this one because the pork chop is not rubbery or tough to eat and the sauce can be easily multiplied to serve several people.

- Season chop with pepper; place in a small nonstick skillet.
- In a small bowl, combine all ingredients except 1 tablespoons water and cornstarch. Pour over pork. Bring to a boil. Reduce heat; cover and simmer 20-25 minute or until meat thermometer reads 160 degrees. Remove pork chop and keep warm.
- Stir together cornstarch and 1 tablespoons water and stir into the pan juices. Bring to a boil and cook 1 minute or until thickened. Pour over pork.

MOM'S SAUCY PORK CHOPS
As you can see from the title this was my Mom's recipe. It makes a wonderful sauce that even kids like. We used to scrape the dish to get the last little bit of it on our chops. I always wondered what would happen if you doubled the sauce ingredients and tossed in a little bit of rice. If you try it, please let me know:)

- Mix catsup, Worcestershire sauce and soup together.
- Pour mixture over chops.
- Cover dish with foil.
