CABBAGE STEAKS

Cabbage Steaks image

One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

MEAT AND CABBAGE PASTIES

Meat and Cabbage Pasties image

From Sunset. I think I would add some shredded carrot to this and either potato cubes or rutabaga cubes. Preparation time includes rising time.

Provided by Pesto lover

Categories     Savory Pies

Time 3h

Yield 16 pasties

Number Of Ingredients 16

1 lb lean ground beef
1 lb pork sausage
2 large onions, chopped
2 large garlic cloves, minced
6 cups cabbage, coarsely chopped
1 beef bouillon cube
1 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1/4 ounce dry yeast
2 cups warm water
1/2 cup sugar
1 teaspoon salt
1/2 cup shortening
2 eggs
6 1/2 cups flour, unsifted
3 tablespoons butter, melted

Steps:

  • In large skillet, crumble meat. Stir over med-high heat until meat begins to brown. Push meat to one side of pan and drain fat.
  • Add chopped onions and garlic to the meat. Continue cooking until onion is limp, but not browned.
  • Add cabbage, 1/2 cup water, beef buillon cube, oregano and cumin. Stir.
  • Cover pan, reduce heat and simmer until cabbage is tender and juices have cooked away, about 20 minutes. Add salt and pepper to taste.
  • Dissolve yeast in 1/4 cup of the warm water. Let stand 5 minutes.
  • In large bowl of electric mixer, combine remaining water with salt, sugar, shortening and eggs. Add yeast and two copy of the flour. Beat on medium speed for about 5 minutes, scraping sides of bowl several times.
  • Cover bowl and set in a warm place until mixture is bubbly, about 30-40 minutes. Put bowl back on heavy mixer and add 4 more cups flour, one cup at a time. Or you can do this by hand. Knead until soft and resillient, but not sticky, about 5 minutes, adding remaining flour as needed.
  • Place in greased bowl, turn over, cover and set in warm place until almost doubled, about 1-1 1/2 hours Punch down dough and cut in half. Put one half back in the bowl and cover.
  • Roll the other half of the dough on a lightly floured board into a 12x24 inch rectangle. Cut into 8 pieces, each 4 inches square. Repeat with remaining dough.
  • Place about 1/3 cup of the filling on each square. Bring opposite corners of each square to meet in center. Or, you can make it a triangle and pinch 1/4 inch of edges, with water if necessary, to seal. Press with tines of a fork to get a good seal.
  • With spatula, transfer each to a greased baking sheet, placing about 1 inch apart. Cover lightly with plastic wrap and let stand in warm place about 20 minutes.
  • Unwrap and bake in a 375F oven until golden brown, about 30 minutes.
  • Melt tops with melted butter and then let cool slightly before serving. Can be served at room temperature.

GROUND BEEF AND CABBAGE

Ground Beef and Cabbage image

My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. My mother used to serve this with corn on the cob and cornbread. Very inexpensive and very good as well. Enjoy an Ozark memory...

SAUCY SKEWERED MEAT WITH CABBAGE PATTIES

Saucy Skewered Meat With Cabbage Patties image

An inexpensive and quick dish. The flavors of the meat skewers and the cabbage patties really go well together. This recipe can be dressed up or down, by adding more vegs, or making a kind of hamburger with panini bread (which I used) or pita or toasted bread. If you want more servings, simply double the ingredients. Created for DINING ON A DOLLAR, 2013.

Provided by Zurie

Categories     < 60 Mins

Time 1h

Yield 3-4 serving(s)

Number Of Ingredients 17

20 ounces round steaks, cut into cubes
1/2 cup tomato ketchup
1/2 cup sweet yellow mustard, sauce (runny hotdog mustard, the cheap one)
1 tablespoon soy sauce
5 -6 wooden skewers, soaked in water
1 medium potato, peeled and cut into chunks (or use a large one)
2 -3 teaspoons milk
1 pinch salt
2 cups cabbage, very finely shredded (I used a mandolin)
3 tablespoons green peppers, very finely chopped
1 teaspoon oregano
1 teaspoon flaked sea salt (less if using table salt)
2 teaspoons garlic, finely chopped
3/4 teaspoon coarse black pepper
1 extra large egg
butter (for frying)
oil (for frying)

Steps:

  • Depending on your steak, cut into chunks and leave in a marinade, or use as it is.
  • Mix the ketchup, mustard and soy sauce together. Thread the meat chunks on the skewers, and drench on both sides in the ketchup mixture. Cover, and leave for a while in the fridge.
  • Boil the potato chunks until tender.
  • In the meantime, slice the cabbage. I used 1 baby cabbage because it is easier to work with, and I used a mandolin to slice it really fine.
  • Chop 3 tablespoons green pepper finely (about 1/3 pepper).
  • Drain the potato chunks, add 2 t milk to start with, and mash. Add extra teaspoon milk if too dry.
  • Mix all the vegetables (including the mash) in a large bowl, and mix in the oregano. Add salt to taste: with sea salt flakes you need less than with fine table salt. Mix in the garlic and pepper.
  • Whisk the egg briefly and add. Mix until you have a mixture which just hold together. If really too dry, add a teaspoon of milk.
  • Use a pan, pref non-stick, melt the butter and oil over quite high heat, form 4 large flat patties, and fry. Lower the heat or they will burn.
  • Once the patties slightly hold their shape (they won't be completely firm), turn over with a large spatula. They should be browned at the edges, but not fried to death. Remove and keep warm.
  • The meat skewers: heat your grill to high. Take skewers out of the sauce, put on a grid with a pan beneath them, and grill until done. You need to turn them once or twice.
  • Warm the leftover sauce, and use to spoon over the skewers once done. (Can be done on an outside grill or in a hot oven).
  • Serve the skewers on the patties, with the patties on a pita bread or toasted panini, or on toasted bread or any bread you like, or even as a kind of hamburger.
  • To serve as a main dish, add a tomato-cucumber salsa and corn on the cob -- or similar.
