Oven-Seared Beef Tenderloin with Herb Pan Sauce image

2 beef tenderloin steaks (1 1/2 inches thick)
¼ teaspoon kosher salt
½ teaspoon coarsely ground pepper
2 tablespoons vegetable oil
1 tablespoon unsalted butter
2 tablespoons finely diced shallots
1 tablespoon deli-style brown mustard
1 cup Swanson® Beef Stock
1 tablespoon Worcestershire sauce
2 tablespoons heavy cream
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Pat the steaks very dry with paper towels; season both sides with salt and pepper. Allow steaks to rest at room temperature for about 30 minutes while the oven pre-heats.
  • Heat a 10-inch cast iron pan over medium-high heat for about one minute. Add the oil to pan and swirl to evenly distribute the oil. Place the steaks in the pan, allowing room between steaks. Cook without moving steaks for 2 minutes. Using tongs, lift the steaks and flip them over. If properly seared the steaks should release easily, without sticking to the pan. Immediately place cast iron pan into the hot oven.
  • Cook steaks until firm and reddish-pink and juicy in the center, about 7 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove skillet from oven and transfer steaks to a warm plate lightly tented with foil. (The internal temperature of the steaks will increase by about 5 degrees while resting.)
  • Melt unsalted butter in the same skillet over low heat; add diced shallots. Cook and stir, releasing the browned bits from the bottom of the pan, about 1 minute. Stir in the deli mustard.
  • Increase the heat to medium-high. Whisk in Swanson® Beef Stock and Worcestershire sauce, continuing to scrape up browned bits from the pan. Bring to a boil and cook until slightly reduced, about 5 minutes.
  • Reduce the heat to medium. Whisk in the cream; simmer until sauce clings to the back of a spoon, about 2 minutes. Stir in the parsley, chives, thyme, and oregano.
  • Spoon the herb sauce over steaks; serve immediately.

1 large onion, chopped

  • Heat a large nonstick skillet over medium heat. In batches, brown steaks, 1-2 minutes on each side. Remove from pan; set aside., In same skillet, heat butter over medium-high heat. This is delicious and quite easy to prepare, I have even made this recipe using pork tenderloin, the sauce recipe can be doubled if desired, make sure to brown the meat on both sides this will contribute to the flavour of the dish and make certain to leave the steak sit out to almost room temperature so plan well ahead --- this is very good!

1 lb sirloin steak (3/4-in thick)
1/4 cup butter, divided
salt & freshly ground black pepper (do not use too much salt)
1 medium onion, finely chopped
3 cups sliced fresh mushrooms (can use a little more)
1/2 teaspoon dried thyme
2 garlic cloves, minced (optional, can use more) (optional)
2 tablespoons flour
1 cup beef stock
1 cup half-and-half cream
1 tablespoon prepared horseradish or 1 tablespoon Dijon mustard

Steps:

  • Season the steak with pepper, then let the steak sit out to almost room temperature, this will help relax the meat fibers and make for a more tender and flavorful steak (just before frying season the steak with a small amount of salt).
  • In a large skillet, melt half the butter over high heat; brown steak on both sides (about 2 minutes per side).
  • Transfer to a plate.
  • Reduce heat to med-high; add remaining butter to skillet.
  • Cook onions, mushrooms and thyme, stirring for 10 minutes, or until liquid is released, and the mushrooms are starting to brown.
  • Add in the garlic (if using) and cook for 2 minutes.
  • Add flour and cook stirring for 1 minute.
  • Gradually stir in beef stock, cream and horseradish.
  • Reduce heat, and simmer, stirring for 5 minutes, or until sauce is thickened.
  • Return steak, and any accumulated juices to pan; simmer for 5 minutes, or until steak is desired doneness.
  • Let steak rest for 5 minutes.
  • Season sauce with more salt and pepper to taste.
  • Slice steak thinly across the grain, and serve with the sauce.

1/2 cup plus 1 tablespoon chopped shallots
1/2 cup dry white wine
2 cups chicken stock or canned low-salt chicken broth
1 cup beef stock or canned beef broth
1 12-ounce russet potato, peeled, grated, drained well
1/2 cup fresh white breadcrumbs made from French bread
2 tablespoons chopped fresh parsley
3 tablespoons olive oil
2 6-ounce beef tenderloin steaks (about 1 inch thick)
1 tablespoon coarse-grained mustard

Steps:

  • Melt 2 tablespoons butter in heavy medium saucepan over medium-high heat. Add 1/2 cup shallots and sauté 4 minutes. Add wine and boil 1 minute. Add both stocks and boil until reduced to 2/3 cup, about 28 minutes. (Sauce can be prepared 1 day ahead. Cool slightly. Cover and refrigerate.)
  • Preheat oven to 200°F. Mix potato, breadcrumbs, 1 tablespoon parsley and remaining 1 tablespoon shallots in medium bowl. Sprinkle with salt and pepper.
  • Heat 2 tablespoons oil in large nonstick skillet over medium heat. Mound potato mixture in skillet in 2 portions, dividing evenly. Using metal spatula, press each into 5-inch oval. Cook until bottom is brown and crisp, about 10 minutes. Turn and cook until second side browns, about 5 minutes. Transfer galettes to baking sheet. Keep warm in oven.
  • Heat 1 tablespoon oil in heavy medium skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add to skillet; cook to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to plate (do not clean skillet). Add sauce to skillet and bring to boil, scraping up browned bits. Mix in mustard. Remove from heat. Add remaining 2 tablespoons butter and whisk just until melted.
  • Place potato galettes on plates. Top each with 1 steak. Spoon sauce over. Sprinkle with remaining 1 tablespoon parsley and serve.
