Every time I make this someone wants the recipe. It is great if you have overnight guests. Make it ahead and enjoy the morning with them. Check for doneness by inserting a knife in casserole. If it comes out clean you are ready to serve. This is a great brunch recipe served with biscuits, sweet rolls, and fresh fruit.

3 cups water
1 cup half-and-half
1 teaspoon salt
1 cup stone-ground grits
8 ounces shredded sharp Cheddar cheese
½ cup butter
1 pound bulk pork sausage
3 eggs
½ cup milk
1 orange bell pepper, chopped small
1 red bell pepper, chopped small

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring water, half-and-half, and salt to a boil in a saucepan; slowly whisk in grits. Reduce heat to low and simmer, stirring occasionally, until thick, about 20 minutes. Stir in Cheddar cheese and butter until melted. Cool.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Beat eggs and milk together in a bowl. Stir sausage, egg mixture, orange bell pepper, and red bell pepper into grits mixture. Pour grits mixture into prepared baking dish.
  • Bake in the preheated oven until set, 45 to 60 minutes.

1 pound bulk Italian sausage
1 large sweet onion, chopped
1 medium sweet yellow pepper, chopped
1 medium sweet red pepper, chopped

1-1/2 cups quick-cooking grits
1 cup shredded sharp cheddar cheese
1/2 cup shredded Parmesan cheese
2 tablespoons half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
6 large eggs
Hot pepper sauce, optional

Steps:

  • In a Dutch oven, cook sausage, onion, yellow pepper and red pepper over medium heat until sausage is no longer pink and vegetables are tender, 6-8 minutes, breaking up sausage into crumbles; drain., Meanwhile, in a large saucepan, bring water to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. Stir in cheeses, cream, salt and pepper; keep warm., In a large skillet, heat oil over medium-high heat. Break eggs, 1 at a time, into pan; reduce heat to low. 1-1/2 cups egg substitute
1-1/4 cups whole milk, divided
3 cups water
1/8 teaspoon salt
1 cup quick-cooking grits
3/4 cup shredded reduced-fat cheddar cheese, divided
2 green onions, chopped
1/8 teaspoon pepper

Steps:

  • Crumble sausage into a large skillet; cook over medium heat until no longer pink. Remove to paper towels with a slotted spoon. Whisk egg substitute and 1/4 cup milk; add to same skillet. 1 1/2 cups 1-percent milk
1 1/2 cups water
3/4 cup quick-cooking grits
3/4 cup (3 ounces) shredded reduced-fat sharp cheddar
3 tablespoons minced fresh parsley leaves
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
Dash of ground red pepper
3 egg whites, room temperature
Vegetable cooking spray
2 cups red bell pepper strips

Steps:

  • Preheat oven to 375 degrees F.
  • Cook sausage in a non-stick skillet over medium-high heat until browned, stirring to crumble. Drain and set aside.
  • Combine milk and water in a saucepan; bring to a boil over medium-high heat. Stir in grits; cover, reduce heat and simmer 7 minutes or until thickened, stirring frequently. Combine grits mixture, sausage, cheese, parsley, salt, garlic, and peppers in a large bowl; set aside.
  • Beat egg whites at high speed of a mixer until stiff peaks form. Gently stir 1/4 of the egg whites into grits mixture; gently fold in remaining egg whites. Spoon mixture into a 1 1/2-quart casserole coated with cooking spray. Bake for 25 minutes or until set and lightly browned.
  • Coat a medium nonstick skillet with cooking spray and place over medium-high heat until hot. Add bell pepper, and saute 4 minutes or until tender; serve warm with grits.

Pat: I'm a grits man. Have been my whole life. And it always surprises me when I travel to different parts of the country and taste grits that they are not sweet. In coffee shops and home kitchens throughout Memphis, we stir in sugar to make them sweet. Then we crumble a few sausage patties and stir those in, too. I don't know about you, but I'm a sucker for something hot, sweet, and salty. My aunt Leona from Detroit stirs chopped poached eggs into her sausage and grits! To me, that seems like the ultimate grit combo. Top it with a dash or two of hot sauce, and you can't find a better feel-good breakfast for a Southern boy.

Number Of Ingredients 8

1 tablespoon vegetable oil or bacon fat
Two 4-ounce sausage patties
1 cup quick-cooking grits
2 tablespoons butter
2 tablespoons sugar
1/2 teaspoon salt
Hot sauce (optional)
2 poached eggs (optional)

Steps:

  • Bring 4 cups water to a boil in a medium saucepan. Meanwhile, heat the oil or bacon fat in a medium skillet over medium-high heat. Add the sausage patties and fry until they are browned and no longer pink in the middle, about 3 minutes on each side. Transfer the sausage to a plate lined with paper towels to drain.
  • When the water is boiling, stir in the grits, butter, sugar, and salt, reduce the heat to medium-low, and cook, stirring occasionally, until thickened, about 4 minutes.
  • Crumble the sausage patties into the grits. Serve the grits topped with a dash or two of hot sauce, and chopped poached eggs, if desired.

5 cups water
2 teaspoons salt
1 cup uncooked quick-cooking grits
1 cup shredded sharp Cheddar cheese (4 oz)
4 oz cream cheese, cut into small cubes
1/4 teaspoon black pepper
6 eggs
Salt and pepper
2 tablespoons chopped fresh chives

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 10-inch skillet, cook sausage over medium heat until cooked through and no longer pink. Drain well.
  • In 3-quart saucepan, heat water to boiling over medium-high heat. Stir in salt. Stir in grits with whisk, stirring to ensure lumps have been removed. Reduce heat to simmer. Cover; cook 6 to 8 minutes, stirring occasionally. Add Cheddar cheese, cream cheese and pepper to grits. Stir until cheeses have melted. Stir in crumbled drained sausage; mix well. Pour into baking dish.
  • Bake 15 minutes. Remove from oven, and carefully make 6 indentions in grits using back of large ladle or spoon. Crack 1 egg into each indention. Sprinkle eggs with salt and pepper.
  • Bake 12 to 15 minutes or until whites and yolks are firmly set. Garnish with chives.

1 cup uncooked grits
1 lb bulk breakfast sausage (if you need to use links, finely dice the cooked links)
1 cup onion, diced
2 (4 1/2 ounce) cans green chilies, drained and chopped
1/2 cup butter
2 eggs, slightly beaten
2 cups cheddar cheese, shredded
10 drops Tabasco sauce
1 teaspoon sweet paprika
1/4 cup fresh parsley, chopped

Steps:

  • Preheat the oven to 325°F.
  • Cook the grits in 4 cups of salted water until done (follow package directions) Saute the sausage and onions, breaking the sausage into small pieces.
  • Drain the grease from the sausage and onions.
  • Add the chilies, butter, eggs, cheese and Tabasco to the cooked grits.
  • Combine the sausage and onions with the grits mixture.
  • Pour everything into a 9"x 13" casserole and garnish with the paprika and parsley.
  • The mixture can be refrigerated for up to two days before baking (bring to room temperature before baking to use the same bake time).
  • Bake at 325°F for one (1) hour.
  • This also freezes well.

1/2 cup quick-cooking grits
4 cups grated cheddar cheese

1 cup milk
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
2 lbs sausage, cooked, drained and crumbled (we use hot Jimmy Dean hot variety)

Steps:

  • Bring water and salt to boil. Stir in grits. Return to boil, reduce heat, then cook for 4 minutes.
  • In large bowl combine grits and cheese and stir until cheese is melted.
  • Stir in cold milk, thyme, and garlic powder. Mix well.
  • Stir in eggs, mixing well.
  • Stir in sausage.
  • Pour in 13 X 9 inch pan. Cover and refrigerate overnight.
  • Remove from refrigerator and let stand 15 minutes. Bake at 350 degrees for 50-55 minutes.
