30 slices French bread baguette (1/2 inch thick)
1 pound bulk spicy pork sausage
6 large eggs
1/2 teaspoon salt
1/4 teaspoon pepper
4 green onions, thinly sliced
2/3 cup salsa
1/3 cup shredded Monterey Jack cheese
1/2 cup sour cream
Minced fresh cilantro

Steps:

  • Preheat oven to 400°. Arrange bread slices on an ungreased baking sheets; bake until lightly toasted, 6-8 minutes. , In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes. Remove from pan with a slotted spoon; pour off drippings., Whisk together eggs, salt and pepper; stir in green onions. In same pan, cook and stir egg mixture just until thickened and no liquid egg remains; stir in sausage., Spoon salsa over toasts. Top with sausage mixture; sprinkle with cheese. Bake until cheese is melted, 1-2 minutes. Top with sour cream and cilantro.

Although I can't recommend the book, this recipe sounds very similar to something I had in Cortona this past summer. If any of the ingredients sound ambiguous, blame the author! There is no serving size information in the book, so that is a guess on my part.

1 cup highly flavored fresh Italian sausage
7 ounces fresh fresh stracchino cheese (crescenza, or a coarsely grated semi-hard stracchino cheese)
fresh ground black pepper
1 loaf Italian bread, cut into 1/2 inch thick slices toasted in the oven

Steps:

  • Preheat oven to 400 degrees.
  • Squeeze the sausage meat out of the casings and into a mixing bowl. Add the cheese and pepper and mix very thoroughly with a fork.
  • Spread each toast with a generous helping of the sausage and cheese mixture. Place on a cookie sheet.
  • Bake for 5 minutes or until the cheese has melted and the topping is bubbling.
  • Serve piping hot, straight from the oven.

1 red pepper, chopped
1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes
1 tsp. dried oregano leaves
1/4 tsp. garlic powder
1 pkg. (8 oz.) cocktail rye bread

Steps:

  • Heat oven to 350°F.
  • Crumble both meats into large skillet; cook on medium heat until evenly browned, stirring occasionally. Drain meats; return to skillet. Add all remaining ingredients except bread; mix well.
  • Arrange bread slices in single layer on baking sheets; top with meat mixture.
  • Bake 10 to 12 min. or until heated through.
