DEEP-DISH SAUSAGE PIZZA

Number Of Ingredients 23

1 cup lukewarm water (about 110 degrees F; see Cook's Note)
1 packet active dry yeast
2 tablespoons sugar
3 1/4 cups all-purpose flour, plus more as needed (see Cook's Note)
1 tablespoon kosher salt
4 tablespoons unsalted butter, melted
1 teaspoon extra-virgin olive oil
1 teaspoon extra-virgin olive oil
2 tablespoons finely diced yellow onion (about 1/4 small onion)
1 teaspoon minced garlic (about 1 large garlic clove)
1 tablespoon tomato paste
1/4 teaspoon dried oregano
Pinch crushed red pepper
1/2 teaspoon kosher salt
One 14.5-ounce can stewed tomatoes
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
12 ounces sweet Italian sausage, casings removed
12 ounces hot Italian sausage, casings removed
2 cups freshly shredded low-moisture mozzarella (about 8 ounces)
1 cup freshly shredded soft Asiago cheese (about 4 ounces)
All-purpose flour, for dusting
6 large basil leaves, torn, for garnish

Steps:

  • For the pizza dough: Whisk together the lukewarm water, yeast and sugar in a small bowl. Let sit for 5 minutes, until the yeast begins to bubble and foam.
  • Add the flour and kosher salt to a stand mixer fitted with the dough hook and mix until just combined. With the mixer off, add the yeast mixture. Turn the mixer back on and knead, gradually increasing the speed from low to medium, until the flour and yeast are combined and the dough looks shaggy. Turn the mixer off again and add the melted butter. Mix, slowly increasing the speed to medium, until the dough holds together and the butter is completely incorporated, about 30 seconds. With the mixer on the lowest speed, knead the dough for 3 minutes. If the dough moves too high up the hook and is no longer being kneaded, turn the mixer off and push the dough back down.
  • Coat a large bowl with the olive oil. Remove the dough from the stand mixer, form into a ball and place in the greased bowl. (The dough will feel tacky when it comes out of the mixer but should come out in one piece. If necessary, knead additional flour into the dough, 1 tablespoon at a time, until the desired consistency is reached.) Cover with a towel and let rise in a warm place for 1 hour or until doubled in size.
  • For the marinara sauce: Heat the olive oil over medium heat in a medium saucepot. Add the onions and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds, until fragrant but not browned. Stir in the tomato paste, oregano, crushed red pepper and salt; cook for 30 seconds. Pour in the stewed tomatoes, breaking up any large pieces. Bring the sauce to a boil, then reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and stir in the butter. Adjust the seasoning with salt to taste. Let cool. (Makes 1 1/4 cups.)
  • For the sausage pizza: Adjust an oven rack to the middle position and preheat the oven to 400 degrees F.
  • Heat the olive oil in a large skillet over medium-high heat. When hot, add the sweet Italian sausage and hot Italian sausage and cook until browned, breaking up the sausage into small pieces. Remove to a paper-towel-lined baking sheet to drain.
  • Combine the mozzarella and Asiago in a bowl and reserve in the refrigerator.
  • Place the proofed pizza dough on a lightly-floured work surface. Dust the top of the dough with flour and roll into a 14-inch round, about 1/4-inch thick. Roll the dough onto the rolling pin and transfer to a 10-inch nonstick springform pan. As evenly as possible, unroll the dough over the springform pan and guide the dough into the pan, pressing it evenly into the bottom and working it gently all the way into the edges. Next, lift the sides of the dough up and press against the sides of the pan, making sure the dough doesn't fold over itself at any point. The dough should come 2 inches up the sides of the pan.
  • Add half of the cheese to the bottom of the crust, top with half of the sausage and then cover the sausage with the marinara sauce. Add the remaining cheese, followed by the rest of the sausage. Fold the top of the pizza dough over so that it sits evenly on top of the filling.
  • Place the pizza on a baking sheet and bake for 20 minutes. Rotate, cover with foil, and bake an additional 20 minutes. Remove the pizza from the oven when the crust is a deep golden brown and the cheese is melted. Let rest for 15 minutes before removing the sides of the springform pan. Serve with torn basil scattered over the top.

1 package (1 pound) spaghetti
4 large eggs, lightly beaten
2/3 cup grated Parmesan cheese
1 cup chopped onion
1/4 cup butter, cubed
2 cups sour cream
2 teaspoons Italian seasoning
2 pounds bulk pork sausage
2 cups water
1 can (12 ounces) tomato paste
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese

Steps:

  • Cook spaghetti according to package directions; drain and place in a large bowl. Add eggs and Parmesan cheese. Transfer to three greased 9-in. pie plates; press mixture onto the bottom and up the sides to form a crust. Set aside. , In a large saucepan, saute onion in butter until tender. Remove from the heat; stir in sour cream and Italian seasoning. Spoon into the crusts. , In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in water and tomato paste. Simmer, uncovered, for 5-10 minutes or until thickened. Spoon over sour cream mixture. Sprinkle with mozzarella and cheddar cheeses. , Cover and freeze two pies for up to 1 month. Cover and bake third pie at 350° for 35-40 minutes or until heated through. , To use frozen pies: Completely thaw in the refrigerator. Remove from the refrigerator 30 minutes before baking. 3 pounds bulk Italian sausages
3 (15-ounce) cartons ricotta cheese
2 cups grated mozzarella cheese
1/2 cup grated Romano cheese
3 eggs, lightly beaten
1/4 cup dried parsley flakes
1 teaspoon fresh ground pepper
1 teaspoon salt
1 teaspoon fresh, minced rosemary
2 teaspoons fresh, minced basil
2 teaspoons fresh, minced garlic

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine rolls and add parsley flakes, dried basil, dried rosemary, garlic powder, onion powder and pepper. Knead seasonings into dough until equally distributed. Divide dough into two pieces. The larger piece should be slightly less than two thirds of the dough. Roll the larger piece into an 18x15-inch rectangle and the smaller piece into a 9x13-inch rectangle. Cover with plastic wrap and let rest. Brown the sausage and drain. Combine the sausage with all the remaining ingredients and mix well. This is an old Italian family recipe that has been handed down for three generations. Recipe makes 2-10" pies.

3 lbs bulk sweet Italian sausage
3 lbs ricotta cheese
7 eggs
8 tablespoons grated parmesan cheese
1 lb grated mozzarella cheese
1/3 cup fresh parsley, chopped
5 cups all-purpose flour
1/2 cup margarine, room temperature
8 eggs
1 egg, beaten

Steps:

  • To make filling-.
  • In a large pan, brown sausage meat until no longer pink. Place in colander and rinse with water to remove excess fat. Drain well and cool.
  • In a large bowl, mix ricotta and eggs until well blended. Add grated cheese, mozzarella and parsley. Add cooled sausage meat. Mix well and set aside while making crust.
  • To make crust-.
  • Mix flour, margarine and 8 eggs until dough is formed. Knead a few minutes until dough is smooth and elastic. Divide dough into four pieces. Roll out each piece large enough to fit a 10" pie plate. Fill pie shells with sausage filling and cover with top crust. Seal top and bottom crust with beaten egg; pinch and seal crust. Brush top of pies with beaten egg and bake at 350F for 50 minutes. Pie should be deep golden brown.
  • This pie tastes best served at room temperature or chilled. (Do not re-heat in microwave, pie becomes watery).

1 (9 inch) deep dish pie shells, partially baked and cooled

Steps:

  • Preheat the oven to 375°.
  • In a heavy skillet over medium heat, crumble the sausage with a fork.
  • Sauté the sausage until completely cooked.
  • Drain off the fat, remove the sausage, and set aside.
  • Melt the butter in another skillet over medium heat.
  • Sauté the onions in the butter until tender.
  • Add the milk and heat until steam rises, but do not boil the milk.
  • Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.

This version of baked ziti omits the usual ricotta cheese (or its substitutes) and adds Italian sausage, with very satisfying results!

1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package shredded Italian cheese blend
1 (16 ounce) package ziti pasta
3 tablespoons olive oil, or more to taste
1 pound bulk Italian sausage
¼ teaspoon baking soda
1 cup diced onion
3 cloves garlic, diced
5 cups lower-sodium pasta sauce
⅓ cup sliced black olives
1 tablespoon whole fennel seeds
2 teaspoons Italian seasoning
1 teaspoon anchovy paste
½ teaspoon ground black pepper
¼ teaspoon crushed red pepper flakes
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 4-quart rectangular baking dish with nonstick spray. Combine mozzarella and Italian blend cheeses in a bowl and place in the refrigerator.
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • At the same time, heat 3 tablespoons oil in a Dutch oven over medium-high heat. Add sausage and break up into morsels. Sprinkle baking soda onto sausage, then add onion and garlic. Cook and stir, continuing to break up any clumps as it cooks, until browned and crumbly, 5 to 7 minutes. Pour off and discard any grease.
  • Add pasta sauce, olives, fennel seeds, Italian seasoning, anchovy paste, black pepper, and red pepper flakes. Add up to 3 tablespoons more oil if desired, and continue stirring until mixture comes to a boil. Reduce heat and simmer, stirring regularly, until thickened, 5 to 10 minutes. Remove from the heat and stir in ziti.
  • Spread 1/2 of the sauced ziti into the prepared baking dish and sprinkle 1/2 of the shredded cheese mixture evenly on top. Spoon or ladle the rest of the ziti evenly on top without disturbing the layers underneath; it's okay to have some ziti partially exposed as they will brown handsomely and deliciously as they bake. Sprinkle remaining shredded cheese mixture on top and sprinkle Parmesan across the surface.
  • Bake, uncovered, in the preheated oven until bubbly, 20 to 25 minutes. Remove from the oven and let rest for 15 minutes before serving.

1 onion, diced
2 tablespoons butter or margarine
1 pound fresh mushrooms, sliced
8 ounces cream cheese, softened
1 egg, well beaten

Steps:

  • Spray counter lightly with non-stick cooking spray. Roll loaf or combined rolls into a 15-inch circle. Cover with plastic wrap and let rest. Brown sausage and onions; drain. Saute mushrooms in butter; drain. Combine cream cheese, sausage mixture and egg. Stir in mushrooms and set aside. Remove wrap from dough and place in a sprayed 12 inch deep dish pizza pan, covering bottom and sides. Spoon the filling on to the dough. Cover with plastic wrap and let rise 15-20 minutes. Remove wrap. Bake at 35°¡F 25-30 minutes or until well browned.
