"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

1 tablespoon confectioners' sugar
1 tablespoon extra-virgin olive oil
1 tablespoon minced shallot
1 tablespoon white-wine vinegar
1/2 teaspoon finely grated lemon zest, plus 2 teaspoons fresh lemon juice
1/4 teaspoon ground cumin
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 celery stalks, thinly sliced crosswise, plus 1/2 cup leaves
1 head frisee, trimmed
1 Honeycrisp apple, thinly sliced
1/2 cup walnuts, toasted

Steps:

  • Roast the grapes: Preheat oven to 350 degrees. Toss grapes with sugar and oil. Roast on a rimmed baking sheet until just starting to wrinkle and burst, 25 to 30 minutes. Let cool.
  • Meanwhile, make the dressing: Combine shallot, vinegar, lemon zest and juice, and cumin in a bowl. Gradually whisk in oil. Season with salt and pepper.
  • Make the salad: toss grapes (without pan juices) with sliced celery and leaves, frisee, apple, and walnuts. Drizzle salad with dressing, and toss to coat.

I grew up blocks away from the Waldorf Astoria hotel in New York City. I remember walking by the heralded building as a kid and wondering if all the guests inside were eating nothing but Waldorf salad. I imagined the hotel must have needed a lot of grapes, walnuts and mayonnaise! When I first made the salad as a young chef in Larry Forgione's kitchen decades later, I marveled at how good this salad can be when it's treated with care. A small cheffy note: The confectioners' sugar on the grapes brings out more of their vibrant color when you roast them, making for a tasty, delicate balancing act between them and the lettuce on one side and the roasted chicken, crunchy walnuts and mayonnaise-style dressing on the other. I like to mix this salad together at the very last minute so the flavors are all still independently delicious and therefore even better when eaten all together.

1 cup walnut pieces
1 1/2 cups seedless red grapes
1 tablespoon confectioners' sugar
6 tablespoons extra-virgin olive oil
Grated zest and juice of 1 large lemon
3 tablespoons white wine vinegar, plus extra if needed
1 tablespoon Dijon mustard
1 tablespoon granulated sugar
Kosher salt and freshly ground black pepper
2 medium heads Boston lettuce, leaves separated
1 large Granny Smith apple, cored, halved and thinly sliced
4 or 5 small inner celery stalks with leaves (use the very tender yellowish stalks), cut crosswise into 1/2-inch-thick pieces
One 3 1/2-pound fully cooked whole chicken, meat torn into bite-size pieces (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F.
  • Toast the walnuts: Place the walnuts on a rimmed quarter sheet pan and toast them in the oven until they are fragrant and browned, 5 to 8 minutes. Set aside to cool.
  • Roast the grapes: In a medium bowl, toss the grapes with the confectioners' sugar and 1 tablespoon of the olive oil. Arrange the grapes in a single layer on a rimmed sheet pan and bake until their skins start to wrinkle, 12 to 15 minutes. Remove the grapes from the oven and set them aside to cool.
  • Make the dressing: To a blender, add the lemon zest and juice, vinegar, mustard and granulated sugar. Blend until smooth and, with the blender running, slowly and steadily add the remaining 5 tablespoons olive oil. Taste for seasoning, adding more vinegar or salt if needed. If the flavor is too strong or the dressing is too thick (or separates a little), blend in a splash of cool water.
  • Assemble the salad: Arrange the lettuce leaves on a serving platter. Toss the apples and celery ribs with a some of the dressing in a large bowl; set aside. Scatter the chicken over the lettuce, followed by the toasted walnuts, and drizzle with some of the dressing. Scatter the roasted grapes and dressed apples and celery over the top. Drizzle with more dressing and scatter the inner celery leaves over the top.

This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

2 cups diced unpared apples
1 cup diced celery
1 cup sliced red grapes
1 banana, halved lengthwise and thinly sliced
1 cup miniature marshmallow
1/2 cup chopped walnuts
1 tablespoon lemon juice
1 cup mayonnaise
1 tablespoon sugar
2 tablespoons cream or 2 tablespoons half-and-half

Steps:

  • Combine first six ingredients; sprinkle lemon juice on top.
  • Combine gently--best to use your hands to mix.
  • Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
  • Dress the salad with this.
  • Chill before serving.
  • Can be prepared several hours ahead of time if necessary.

This is a refreshing yet filling salad that easily works as a meal. I first made it more than 2 years ago, and then subsequently lost the recipe. Disappointment! Fast forward two years, and it mysteriously shows up tucked into a cookbook that I rarely look at (a healthy vegetarian cookbook. Hah!). And now I'm posting it here so I don't lose one of my favorite salad recipes AGAIN. Hope you enjoy!

1 (2 1/2 lb) rotisserie chicken, I have also used grilled chicken breasts with wonderful results (maybe two large breasts)
1 Red Delicious apple, cored and thinly sliced (peel intact)
1 bunch watercress, washed, dried and tough stems removed or 1 (6 ounce) bag spinach
8 ounces dried capellini
1/3 cup apple cider vinegar
2 tablespoons honey
1 tablespoon honey dijon mustard
1 teaspoon chopped fresh thyme
1/8 teaspoon salt
1/8 teaspoon black pepper
2/3 cup extra virgin olive oil
3/4 cup glazed sesame walnuts (I have a hard time finding these. I usually use glazed almonds)

Steps:

  • Shred chicken into a large salad bowl, discarding skin and bones. Add apple and watercress (I have always used spinach).
  • Break cappellini into thirds. Bring 2 quarts water to a boil. Remove from heat; stir in cappellini. Let stand 5 minutes, stirring to avoid sticking. (Note: I have always used spaghetti since my husband doesn't like cappellini. In that case, cook according to package directions).
  • Dressing: In bowl, whisk vinegar, honey, mustard, thyme, salt and pepper. Slowly whisk in oil.
  • Drain pasta; rinse with cool water, drain. Add to chicken with nuts. Add dressing. Dressed salad can be kept in refrigerator up to 24 hours.

2 cups uncooked orecchiette or small tube pasta (about 6 ounces)
1/4 cup reduced-fat plain yogurt
2 tablespoons mayonnaise
2 tablespoons 2% milk
4 teaspoons Dijon mustard
1/2 teaspoon dried thyme, optional
1 medium apple, chopped
1 tablespoon lemon juice
1/2 pound thick-sliced deli smoked turkey, cut into bite-sized pieces
1 cup quartered fresh strawberries
1 celery rib, sliced
1/4 cup toasted chopped walnuts, optional

Steps:

  • Cook pasta according to package directions. Drain; rinse with cold water and drain well., Meanwhile, in a small bowl, mix yogurt, mayonnaise, milk, mustard and, if desired, thyme until blended. Toss apple with lemon juice., In a large bowl, combine pasta, apple, turkey, strawberries and celery. Add dressing; toss gently to coat. If desired, sprinkle with walnuts. Refrigerate until serving.

Vegetable-oil cooking spray
3 boneless, skinless chicken breasts (about 4 oz each)
4 large celery stalks, chopped
2 Granny Smith apples, peeled, cored and cut into 1/2-inch cubes
1 red bell pepper, cored, seeded, and diced
3/4 cup reduced-fat sour cream
1/2 cup lowfat plain yogurt
1/4 cup golden raisins
1/4 cup chopped walnuts
1 tbsp honey
2 tsp fresh lemon juice
4 cups mesclun

Steps:

  • Coat a medium pan with cooking spray. Heat over medium heat; sear chicken 8 to 10 minutes per side. When chicken reaches 155°F, remove from pan. Let cool; dice. Mix remaining ingredients except greens in a bowl with chicken. Add salt and pepper. Refrigerate 1 hour. Divide greens and chicken among plates.

1 firm but ripe Bosc pear, peeled, cored, diced
1 tart green apple (such as Pippin), peeled, cored, diced
1 cup seedless grapes, halved
1/3 cup chopped dates
1/4 cup pine nuts, toasted

Steps:

  • Mix mayonnaise, yogurt, orange juice, orange peel and Cajun seasoning in small bowl to blend. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Line large bowl with large outer leaves of lettuce. Chop enough remaining leaves into bite-size pieces to measure 6 cups (reserve remaining lettuce for another use). Place chopped lettuce in another large bowl. Using small sharp knife, cut off peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, halved grapes and chopped dates. Add dressing to salad and toss to coat.
  • Transfer salad to leaf-lined bowl. Sprinkle salad with pine nuts and serve.
