2 cups Pancake Mix
2 eggs
1 cup Milk
12 oz Breakfast Sausage (cooked)

Steps:

  • Preheat oven to 350F. Grease a 12 cup muffin tin
  • Mix pancake mix, egg and milk in a large bowl with a whisk. Until mixed well.
  • Pour batter about 1/2 full into each muffin hole. Slice the each sausage link into halves or thirds and place the equivilant of 1 sausage in each hole.
  • Bake for approximately 15 minutes until knife inserted comes out clean.

1 (12 ounce) package fresh pork sausage links
1 tablespoon canola oil
2 cups all-purpose flour
1 tablespoon + 1 teaspoon granulated sugar
1 tablespoon baking powder
3/4 teaspoon fine sea salt
2 large eggs
1 1/2 cup whole milk
1/4 cup unsalted butter (melted and cooled)

Steps:

  • Preheat the oven to 350° and have ready both a rimmed sheet pan lined with nonstick aluminum foil and a well-greased, 24-cup mini muffin tin.
  • Place sausage links on a rimmed sheet pan and rub with oil. Bake for 7 minutes. Pull out the pan, give a gentle shake to move the sausages a bit, and return to the oven for an additional 7 minutes. Remove from the heat and allow to cool slightly.
  • Increase the oven temperature to 400°.
  • While the sausages are cooling, make the pancake batter, in a medium-sized mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • In a large mixing bowl, whisk the eggs until foamy. Whisk in the milk and butter. Add the dry ingredients and stir until combined. Do not over-stir. Set aside.
  • Fill mini muffin tins about 2/3's of the way full. Cut the breakfast sausage links into thirds, and insert a piece in the center of each muffin cavity. You will have leftover sausage.
  • Bake at 400° for 12-14 minutes, or until puffed and golden.
  • Remove from the heat and allow to cool slightly. Serve with maple syrup and enjoy.

2 packages (7 ounces each) frozen fully cooked breakfast sausage links
2 cups all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, lightly beaten
2 cups 2% milk
2 tablespoons canola oil
2 tablespoons honey
Maple syrup, optional

Steps:

  • Preheat oven to 350°. Coat 48 mini muffin cups with cooking spray. Microwave sausages according to package directions; drain. Cut into small chunks; divide evenly among muffin cups., Whisk next 6 ingredients. In another bowl, whisk egg, milk, oil and honey until blended. Add to flour mixture; stir just until moistened. Pour batter over sausage chunks in prepared muffin cups., Bake until lightly browned, 15-20 minutes. Cool 5 minutes before removing from pans to wire racks. Serve warm, adding syrup if desired.

1 1/2 cups bisquick
1 tablespoon sugar
1/4 teaspoon cinnamon

Syrup
1 /2 cups Log Cabin original maple syrup
1 tablespoon butter
2 tablespoon heavy whipping cream

Steps:

  • Place about 2″ oil in a sauce pan and heat Place the sausage patties in a medium bowl Break them up so they are no longer formed Form into small balls (I made 18) Place the sausage balls in a large skillet over medium heat and cook for about 15 minutes, turning often Remove and drain on a plate lined with paper towels In a medium bowl, mix together the bisquick ,sugar and cinnamon Whisk in the vanilla, egg and milk until smooth Pick up each cooked sausage ball with a toothpick and dip into the batter, completely covering the sausage with batter Carefully lower them into the oil and fry for about 1- 1½ minutes or until golden brown Remove and drain on a paper towel lined plate Maple Dipping Sauce Pour the maple syrup into a small bowl and add the butter Microwave for about 45 seconds Remove and stir to incorporate the syrup and butter Add the heavy whipping cream and stir

Concocted this recipe the other morning! Was SO GOOD and fun to eat!! Times are very scary right now with my hubby being laid-off, and just wanted to make us a special treat for breakfast. This put smiles back on our faces!! :D

1 lb ground sausage (hot or mild)
1 egg
1 cup flour
1 cup milk
1 teaspoon vanilla
1 tablespoon vegetable oil
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Cook sausage til done in frying pan, breaking up into small pieces as you go. Remove with slotted spoon to a papertowel-lined plate. Make batter.
  • Batter:.
  • In medium bowl, whisk egg til frothy. Whisk in milk, vanilla and oil. In small bowl, whisk well the dry ingredients to mix. Dump the dry ingredients into the wet ingredients and stir all til just moistened but still a little lumpy. Fold in about 2/3 of the cooked sausage. Spray a mini muffin pan with vegetable oil spray. Fill each cup with sausage batter almost all the way to the tops. (I got 20.) Sprinkle each with rest of crumbled cooked sausage. Bake in 350 degree oven til golden. Depending on your oven, 13-15 minutes. You'll be able to see the sides turning a light golden brown. Remove from pan with a spoon and serve with butter and warm maple syrup for dunking! Wah lah! :D Easy peasy and SOOOO Good! :D
  • Apple~Sausage : Add 1/2 up chunky applesauce and decrease milk to 3/4 cup.
  • Fruit : fold in 1 cup frozen berries or diced fruit and omit or decrease sausage.
  • Using my own, "from scratch", pancake batter, the sky's the limit really! Have fun and enjoy!

  • Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Set sausage mixture aside to cool.

½ cup maple syrup
1 teaspoon red pepper flakes, or to taste
½ teaspoon salt
1 cup all-purpose flour
½ tablespoon brown sugar
¼ teaspoon baking powder
¼ teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons sour cream
2 tablespoons unsalted butter, melted
2 teaspoons maple syrup
1 tablespoon olive oil
1 pound bulk regular pork sausage (such as Jimmy Dean®)
13 4-inch bamboo skewers

Steps:

  • Melt butter over medium-low heat in a small saucepan. Stir in maple syrup, red pepper flakes, and salt. Bring to a boil and cook, 3 to 4 minutes. Remove syrup from heat and set aside, stirring occasionally, for at least 30 minutes for flavor to fully develop.
  • Meanwhile, prepare pancakes: whisk flour, sugar, baking powder, and salt together in a large bowl. Whisk buttermilk, egg, sour cream, melted butter, and maple syrup together in a separate bowl.
