Extra-virgin olive oil
3 links hot Italian sausage, removed from the casing and crumbled
1 red bell pepper, 1/4-inch dice
1 yellow bell pepper, 1/4-inch dice
1 cup grated Parmigiano-Reggiano
12 eggs, beaten with 1/4 cup water
Salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
  • In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

7 eggs
1 c milk
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground cayenne pepper
1 can(s) creamed style corn (15 oz.)
1/2 lb ground sausage
1/4 c onions, chopped
1/4 c bell pepper, chopped
1/4 c shredded cheddar cheese
2 Tbsp butter, melted
1/4 c fresh basil or 1 tsp dried basil
BREAD CRUMB TOPPING
2/3 c seasoned bread crumbs
1/3 c shredded cheddar cheese
2 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. In skillet brown sausage, peppers and onions together.
  • 2. In a large bowl, whisk together eggs, milk, salt, pepper, and cayenne.
  • 3. Add corn, cheese, basil, and melted butter. Stir in sausage mixture.
  • 4. Pour into a buttered 9X13 inch baking dish.
  • 5. For the topping: stir all ingredients together and sprinkle on top of frittata.
  • 6. Bake 40 minutes. Let stand 10 minutes before slicing.

1 tablespoon olive oil
8 ounces sweet Italian sausage, casings removed and broken into small pieces
1 medium red bell pepper, diced
1 small onion, diced
1 tablespoon chopped fresh rosemary
12 large eggs
1/3 cup heavy cream
1 cup shredded Italian blend cheese
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. Add the sausage and cook, stirring occasionally and breaking up the pieces with a wooden spoon, until no longer pink in the middle and cooked through, 6 to 7 minutes. Use a slotted spoon to remove the sausage to a plate. Add the pepper and onion to the skillet and cook, stirring occasionally, until softened, 5 to 6 minutes. Stir in the rosemary and cook until just fragrant, about 1 minute.
  • Meanwhile, whisk the eggs, cream, cheese, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until combined. Remove the skillet from the heat and add the sausage. Pour the egg mixture on top and gently stir to incorporate the fillings. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes.
  • Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

1/4 tsp. salt
1/4 tsp. fresh-ground pepper
6 oz. Breakfast Sausage
1/2 c. red bell pepper
1/2 c. fresh corn kernels
1/4 c. green onion
2 plum tomatoes
1/4 c. Parmesan cheese

Steps:

  • Heat oven to 350 degrees F. Combine the eggs, 2 tablespoons water, salt, and pepper in a medium bowl and set aside. Crumble the sausage and brown in a 12-inch ovenproof nonstick skillet over medium-high heat until just cooked through -- about 5 minutes. Remove the sausage from the pan, set aside, and keep warm. Reduce heat to medium and heat 1 tablespoon of the sausage fat. Add the red pepper and corn to the pan and cook for 4 minutes. Return the sausage to the pan, add the green onion, and cook for one more minute. Pour in the egg mixture and stir to combine. Reduce heat to medium-low and cook until the eggs begin to set -- about 7 minutes. Sprinkle in the tomatoes and cheese and transfer the pan to the heated oven. Bake for 5 minutes, change the oven setting to broil, and continue to cook until browned -- 2 to 4 minutes more. Serve immediately.

4 tablespoons extra-virgin olive oil
1 cup chopped onion
1 pound hot Italian sausage, casings removed
1 tablespoon chopped garlic
1 tablespoon chopped fresh oregano
1 cup chopped roasted red peppers
8 large eggs
1/4 cup heavy whipping cream
1 cup crumbled feta cheese
Pinch of smoked salt
Freshly ground black pepper
1 bunch fresh chives, chopped
1 lemon, zested and juiced
1 cup sour cream
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • For the frittata: Preheat the oven to 325 degrees F.
  • In a large ovenproof saute pan over high heat, add the olive oil, onions, sausage, garlic and oregano, stirring frequently to break up the clumps. Add the roasted peppers and cook about 10 minutes.
  • In a large bowl, whisk together the eggs, cream, feta cheese, smoked salt and pepper. Pour the mixture into the saute pan and bake until the eggs are set and golden brown and the frittata pulls away from the sides slightly, about 35 minutes. Remove the frittata from the oven and let cool about 10 minutes.
  • For the sauce: In a small bowl, combine the chives, lemon zest and juice, sour cream and olive oil. Season with salt and pepper.
  • Cut the frittata into pieces and serve with dollop of the sour cream sauce.

  • Cook, scrambling the mixture, until almost set; top with the mozzarella cheese.
  • Broil, leaving the oven door slightly open, until set in the center, about 5 minutes.
