Steps:
- 1) Preheat oven to 400 degrees. Lay garbanzo beans on a paper towel and gently blot to dry. Add them to a baking sheet and toss with olive oil, garlic powder, onion powder, paprika, salt, and chili powder. Bake for 15-20 minutes until crispy.
- 2) Lay the greens in a shallow bowl and top with sliced peaches, beets, and top with garbanzo beans and goat cheese.
ROASTED BEET, PEACH AND GOAT CHEESE SALAD
This salad is a bit of work, but it's so delicious and always impresses guests. Mache can be hard to find, so you may omit it and just use arugula, but it adds a great nutty flavor if you can find it.

- Preheat oven to 375 degrees F (190 degrees C). Wrap each beet in two layers of aluminum foil, and place onto a baking sheet. Bake in the preheated oven until the beets are tender, about 1 hour and 20 minutes. Allow the beets to cool slightly, then remove the skins. Let the beets cool to room temperature, or refrigerate until cold. Once cooled, thinly slice the beets.
- Place the mache and arugula into a large mixing bowl. Add the sliced beets and peaches; sprinkle with the shallots, pistachios, and goat cheese. In a separate bowl, whisk together the walnut oil, balsamic vinegar, salt, and pepper until emulsified, and pour over the salad mixture. Toss well, and serve.

ROASTED BEET AND PEACH SALAD

- Preheat oven to 400 degrees F.
- Wash and scrub the beets well.
- Place beets on a long piece of tin foil then fold the foil into a packet. Place the foil on a cookie sheet and roast 45 minutes or until tender when poked with a fork. Allow beets to cool 20 minutes. Once cool, peel the skins off using your fingers or a paring knife (they should come off in strips easily).
- Chop the beets and set them aside.
- In a small bowl, whisk together the balsamic vinegar, walnut (or olive) oil, mustard, and honey until completely combined.
- In a large salad bowl, add the mixed greens and toss with desired amount of dressing.
- Add the peach and pluot slices, roasted beets and toss again.
- Serve salad with roasted walnuts and crumbled blue cheese on top!

ROASTED BEETS

- Preheat the oven to 400 degrees.
- Remove the tops and the roots of the beets and peel each one with a vegetable peeler. Cut the beets in 1 1/2-inch chunks. (Small beets can be halved, medium ones cut in quarters, and large beets cut in eighths.)
- Place the cut beets on a baking sheet and toss with the olive oil, thyme leaves, salt, and pepper. Roast for 35 to 40 minutes, turning once or twice with a spatula, until the beets are tender. Remove from the oven and immediately toss with the vinegar and orange juice. Sprinkle with salt and pepper and serve warm.
SIMPLE ROASTED BEETS
Wrap beets in foil before roasting for perfectly tender results.

- Preheat the oven to 425 degrees F.
- Cut off the leafy tops of the beets, leaving about 1/2 inch of stem, and reserve them for another use. Wash the beets well to remove all of the sand.
- Toss the beets with the oil, 1 tablespoon water, 1 teaspoon salt and a few grinds of pepper in a large bowl. Transfer the beets to a large piece of foil, add the herb sprig if using and wrap the foil up into a packet. Put the packet on a baking sheet and roast until fork-tender, 40 to 50 minutes depending on the size of the beets. Carefully open the packet, watching out for steam. Let the beets cool for 5 minutes, then peel while still warm by rubbing off the skins with paper towels.
- Slice and dress the beets as desired and serve.
ROASTED BEETS & PEACHES
Steps:
- Prepare the beets by trimming all but 2 inches of the greens, clean the beets using a brush or clean scrubby sponge. Dry the now-cleaned beets, coat well with oil and season with salt and pepper. Place in a roasting pan with 1 cup champagne. Cover tightly and roast at 375-degrees for 1 hour. Check for doneness with a skewer. Split the peaches in half, remove the pits and rub the flesh of the peach with a slurry of 1/4 cup champagne and honey. Season with salt and roast uncovered until the peach yields to the touch, approximately 20-30 minutes. Combine the roasted peaches and beets and serve warm.
ROASTED BEETS WITH PEARS AND PISTACHIOS
Steps:
- Heat the oven to 400.
- Wash 1 pound beets, wrap each in foil and put on a baking sheet.
- Put 1 pound quartered pears on the baking sheet, and toss with olive oil.
- Roast until a knife pierces the beets with little resistance, 45 to 90 minutes, and the pears are tender and browned (remove when done, before the beets).
- When the beets are cool enough to handle, peel, and cut into chunks; toss them and the pears with chopped pistachios, wine vinegar and olive oil.
- Garnish: Mint.

This recipe from Canadian Living magazine has been in my "recipes to try file" since Nov 2003. I finally did so last night & wish I had done so much sooner. Its so easy & the flavour combination is so good!

Steps:
- Separate garlic cloves from head & peel.
- Place garlic & beets in a sheet of aluminum foil that has been lightly spritzed with cooking spray; roast in preheated 375F oven until tender, about 1 1/2 hours or 1 hour for smaller beets.
- Let beets cool enough to handle & cut into wedges; set garlic & beets aside.
- Heat oil in a large skillet over medium heat; cook tarragon, salt & pepper, stirring constantly, for 2 minutes.
- Add beets & garlic; toss gently to coat & heat through, about 2 minutes.
ROASTED BEETS
Steps:
- Preheat the oven to 375°F. Wash the beets well and put them in a roasting pan, still wet; cover the pan with foil. Bake until soft, about 45 minutes (use a thin-bladed knife to pierce through the foil and into the beets to test for doneness). Remove the beets, then allow them to cool a bit.
- When the beets are cool enough to handle, peel them (the peels will slip off easily), then slice or dice them, as you prefer. Toss with olive oil, salt, and pepper, garnish with the parsley, and serve warm or at room temperature.
