BASIC SAUTEED CHICKEN BREAST

Categories     Chicken Breast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb boneless skinless chicken breast
1 pinch kosher salt
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon garlic
1/2 cup onion, diced
1/4 cup mushroom, sliced
1 cup chicken broth
2 tablespoons lemon juice

Steps:

  • Begin by trimming the chicken breasts if they need trimming. I use my beloved kitchen scissors and snip off any shaggy bits of fat or gristle.
  • Pat them dry with paper towels (to helps them brown) and sprinkle them with some kosher salt.
  • Heat a very large pan over medium-high heat and add the butter, which should melt and foam, and the olive oil, which should stop the butter from burning. When the fat is all very hot but not turning black (recipes say "when the foam subsides"), add the chicken breasts in one layer. Now leave them alone for 5 or so minutes while the bottom gets nice and crusty and brown.
  • Use tongs or a spatula to flip them over as they brown, and then cook another 4 or so minutes until the bottom is very brown and the chicken is cooked through. You may want to cut a piece open to check, but pressing a cooked breast with your fingertip will give you a feel for its doneness, which will develop over time into the skill of knowing when it's done without cutting it.
  • Pile the chicken on a heat-proof plate and pop it into a 200ºF heated oven while you "deglaze" the pan. Add the garlic, onion and mushrooms until tender. Pour half the broth in and scrape with a spatula to dissolve all the yummy browned bits while the broth bubbles and boils furiously in the hot pan.
  • When the wine has cooked down about halfway, add the broth & juice, turn the heat to high, and cook until the sauce seems syrupy and delicious. Taste it for salt, then drizzle it over the chicken, sprinkle with parsley, and serve. Sometimes, if the chicken has browned but doesn't seem quite cooked through, I leave it in the pan while I make the sauce so that it can simmer in there a bit longer.

SAUTéED CHICKEN BREASTS WITH SHALLOTS AND GARLIC

Sautéed Chicken Breasts With Shallots and Garlic image

I took the recipe from: http://www.reluctantgourmet.com/. This was the first time that I had ever made a reduction sauce. I liked the flavor of the sauce and the next time I would make extra. In terms of cooking the chicken, it was not fully cooked when it left the skillet and it finished cooking in the oven on low while I was making the sauce. I also made this dish with rice. Yummy with the sauce.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 boneless skinless chicken breasts
1 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil (or vegetable oil)
salt and pepper
3 shallots, finely chopped
2 garlic cloves, finely chopped
1/2 cup dry white wine
1 cup homemade chicken stock
3/4 cup heavy cream

Steps:

  • Season the chicken breasts with salt and pepper on both sides.
  • Pre-heat your saute pan (frying pan) until drops of water quickly evaporate. This means the pan is at least 212°F.
  • Heat butter and oil in a heavy bottomed pan over high heat until butter stops foaming and just starts to turn a light brown.
  • Sauté the breasts until they are lightly browned on one side, approximately 3 minutes.
  • Turn breasts over and sauté for another 3 minutes, again until lightly browned. (At this point the meat should be firm to the touch.).
  • Transfer the chicken breasts to a plate, cover with aluminum foil, and keep warm in the oven or toaster oven set at low.
  • Remove the pan from the head source, and add half of the wine to deglaze the pan, stirring to dissolve the flavorful brown particles stuck to the pan.
  • Return pan to the stove and add the shallots and cook until translucent, about 2 minutes.
  • Add the garlic and cook for 1 minute, making sure the garlic doesn't burn. (It makes the dish bitter if it does).
  • Add the remaining wine and reduce (boil) until only a trace of wine is left in the pan.
  • Add the chicken stock and reduce to half the original amount, approximately 6-7 minutes.
  • Add the cream, and again reduce until the sauce is thick enough to coat a spoon.
  • Spoon sauce over cutlets and serve.

TASTY SAUTEED CHICKEN BREASTS

Tasty Sauteed Chicken Breasts image

This recipe is ridiculously easy and simple (almost embarrassed to share). I thought about keeping it to myself but then thought what the heck, this is good! I just threw this together hoping the family would like it. It was a huge hit. It's very simple, very moist but packs great flavor. I served it with basmati rice and bernaise sauce. Even my kids went crazy for it. I call that a winner! The cooking time is based on using thick and meaty breasts. These are less likely to be tough and dry. Reduce the time if using a smaller, thinner breasts.

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 6

3 -4 chicken breasts, boneless, skinless, meaty
1/3 cup flour
1/2 teaspoon sea salt
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
3 -4 tablespoons olive oil, more if needed

Steps:

  • Rinse and pat dry the chicken breasts.
  • Place all the dry ingredients in a large ziploc bag and shake.
  • One at a time, place chicken breasts in the flour mixture. Pat and toss to coat. Shake off any excess flour. Throw away the excess.
  • Heat oil in a skillet over medium heat. Once heated place chicken in the skillet and cook until golden brown, flip and brown the 2nd side.
  • Once all the pieces are browned on both sides, REDUCE the heat to the lowest cooking temperature. Cover & tip the lid to let any excess steam escape. Cook until juices run clear and chicken is no longer pink. Approximately 20- 30 minutes longer.
  • Cooking time will depend on the thickness of the breast. Adjust cooking time accordingly. Do not overcook and dry out.
  • Serve with basmati rice or broad egg noodles and bernaise sauce on the side. Ladle over rice, chicken as desired. If not making homemade sauce, I prefer Knoor brand.
