1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

1 cup chopped carrots
1/2 cup chopped onion
1 tablespoon butter
1 cup reduced-sodium chicken broth or vegetable broth
1/3 cup uncooked long grain rice
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium yellow summer squash, chopped
1 medium zucchini, chopped

Steps:

  • In a large saucepan coated with cooking spray, cook carrots and onion in butter until tender. Stir in the broth, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 13 minutes., Stir in yellow squash and zucchini. Cover and simmer 6-10 minutes longer or until rice and vegetables are tender.

The seafood is so good here in Florida, and shrimp is at the top of our list of favorites. Shrimp and wild rice make a delicious combination, and this dish is special enough to serve to company.

2-1/3 cups water
4 tablespoons butter, divided
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 package (6 ounces) long grain and wild rice mix
1 pound uncooked shrimp, peeled and deveined
2 tablespoons chopped green pepper
2 tablespoons chopped green onions

Steps:

  • In a large saucepan, combine the water, 1 tablespoon butter, lemon juice, Worcestershire sauce, mustard and pepper. Bring to a boil over medium heat. Add rice with seasoning packet; return to a boil. Reduce heat; cover and simmer for 25-30 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in another large skillet, cook the shrimp, green pepper and onions over medium heat in remaining butter. Cook and stir for 7-9 minutes or until shrimp turn pink. Add rice; heat through.

2 cups uncooked rice
2 tablespoons olive oil
3 small yellow squash, about 5 inches, sliced
1 lb shrimp, deveined and tails remove
1/2 small onion, sliced, chopped
1/2 cup margarine
1 tablespoon garlic salt, to taste
1 teaspoon cayenne pepper, to taste
1/2 tablespoon paprika, to taste
2 garlic cloves, cut in half
1/2 tablespoon McCormick's Montreal Brand steak seasoning, to taste
1/2 tablespoon lemon pepper

Steps:

  • Prepare rice.
  • Add olive oil and butter to high heated pan.
  • Add all ingredients to pan, cover, reduce heat to medium low.
  • Cook 10 minutes, or to desired tenderness of squash.
  • Let sit for 5 minutes to blend flavors, serve over rice.

8 ounces uncooked large shrimp, peeled, deveined
1 zucchini, sliced into rounds
1 teaspoon garam masala seasoning
1 tablespoon butter
1 tablespoon chopped fresh cilantro
2 teaspoons fresh lemon juice
1 6.3-ounce package garlic and herb rice pilaf, cooked according to package instructions

Steps:

  • Toss first 3 ingredients in bowl to blend. Sprinkle with salt and pepper. Melt butter in medium skillet over medium-high heat. Remove zucchini from bowl; sauté until slightly browned, about 1 minute. Add shrimp; sauté until opaque in center, about 2 minutes. Remove from heat. Stir in cilantro and lemon juice. Season with salt and pepper.
  • Divide rice between 2 plates. Spoon shrimp and zucchini over rice.

This shrimp in garlic cream sauce is one of my favorite recipes.

1 tablespoon olive oil
½ cup diced onion
½ cup diced celery
1 clove garlic, minced
1 cup uncooked jasmine rice
1 cup chicken stock
½ cup butter
1 clove garlic, minced
2 pounds small raw shrimp, peeled and deveined
½ cup fresh lemon juice
½ cup sherry
1 tablespoon hot sauce (such as Tabasco®)
1 cup heavy cream
salt and ground black pepper to taste
1 pinch paprika

Steps:

  • Heat olive oil in a pan over medium heat. Saute onion, celery, and garlic until soft, about 5 minutes. Add rice and cook, stirring frequently, until toasted, about 5 minutes. Pour in chicken stock and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Do not lift the lid.
  • Melt butter in a large skillet over medium heat. Add garlic and cook, stirring frequently, until aromatic, 1 to 2 minutes. Add shrimp, lemon juice, sherry, and hot sauce. Cook until shrimp turn pink, 2 to 3 minutes. Stir in cream and heat through, but do not bring to a boil. Season with salt and pepper.
  • Spoon the shrimp cream sauce over the rice. Sprinkle with paprika and serve.

Spaghetti Squash Sauteed With Shrimp image

Yummy, healthier version of spaghetti! Shrimp and colorful peppers and onions add a summer feel to this dish my mother and I created one night. Quick with microwave, but if you prefer an oven, bake the squash halves at 350 for about an hour or until soft. Capers would make a good addition to this! Spaghetti sauce has great basic taste so it could be a healthier base to any pasta dish. Serves four for a delicious dinner or a side could serve 8-10.

1 medium spaghetti squash, cut in half
1 lb shrimp, without heads, deveined
1 garlic clove, mashed in garlic press (I used more, but start with 1)
1 red bell pepper
6 green onions
1 colored pepper (I used an orange-yellow one, whatever suits you)
2 -4 tablespoons butter
salt and pepper

Steps:

  • Place squash halves open side down on a microwave safe plate with seeds still in and microwave on high for 7-10 minutes, or until soft.
  • While squash is in microwave, chop the bell pepper, onions, and colored pepper.
  • Melt butter in a medium skillet over medium-high heat and saute garlic.
  • Add shrimp, onions, and both peppers and saute until shrimp are cooked.
  • Take squash out of microwave, remove seeds, and scrape out squash with a fork, creating "spaghetti.".
  • Transfer shrimp mixture to a bowl and place a plate over it to keep it hot.
  • Using the same pan the shrimp were cooked in, saute squash for a minute with a little butter and add salt and pepper.
  • Serve spaghetti, top with shrimp, and enjoy!
