4 tablespoons dry roasted peanuts
1 tablespoon unsalted butter
4 bananas, peeled and halved lengthwise
2 cups Neapolitan ice cream
1/2 cup warm hot fudge sauce
1 cup whipped topping

Steps:

  • Place the peanuts in a plastic bag, seal, and crush with a heavy-bottomed skillet. Melt butter in a large skillet over medium-low heat. Add bananas and saute for 1 minute on each side, just until golden. Transfer bananas to 4 shallow dessert bowls and top with ice cream, warm hot fudge sauce, whipped topping, and peanuts.

1/4 cup light-brown sugar
2 1/2 pounds ripe bananas, peeled and cut into 3/4-inch slices
1/4 cup bourbon

Steps:

  • Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat. Add 2 tablespoons sugar; stir until the sugar melts, 1 to 2 minutes. Add half the banana slices; let sit, shaking pan occasionally, until bananas are lightly golden on bottom, 1 1/2 to 2 minutes. Turn bananas over; cook 1 minute more. Remove from heat; add 2 tablespoons bourbon. Cook 30 seconds to cook off alcohol. Transfer to single layer on plate to cool. Repeat with remaining ingredients. Cool before filling Banana Cake.

2 tablespoons butter
4 bananas, peeled and sliced in 1/2 crosswise and then lengthwise
1 orange, juiced
2 tablespoons sugar
Dash salt
Tangy-Sweet Cream, recipe follows
4 tablespoons sour cream
2 tablespoons light brown sugar
1 teaspoon finely grated orange zest
1/4 teaspoon ground cinnamon

Steps:

  • In a large saute pan, add the butter and melt it over medium-high heat. Add the bananas and saute until they begin to caramelize. Add the orange juice, sugar and salt and cook an additional 1 to 2 minutes. The bananas should be nicely browned, and the orange juice and sugar will have formed a glaze. (If needed, add a tablespoon of water.) Serve on a dessert plate with a tablespoon of Tangy-Sweet Cream.;
  • In a medium bowl, mix all the ingredients until creamy and smooth.

I believe this is an old Helen Corbitt recipe. It is an excellent, easy dessert and complements so many things.

4 large bananas (firmly ripe or slightly underripe)
2 tablespoons sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons unsalted butter

Steps:

  • Cut bananas crosswise into 1/4" slices.
  • Toss slices in a bowl with the sugar, cinnamon and lemon juice.
  • Heat saute pan over medium-high heat, add butter.
  • When butter is bubbly, add the bananas.
  • Holding the pan by the handle, toss the bananas every 10 seconds or so for 2-3 minutes until tender.
  • (The slices should hold their shape and be carmelized) Serve on a warm plate-- good with ice cream or angel food cake or by itself!

Steps:

  • Heat 1 tablespoon butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté half of bananas, cut sides down first, turning over once, until golden, 1 1/2 to 2 minutes total. Transfer with a slotted spatula to 2 dessert bowls. Heat 1 tablespoon butter and sauté remaining bananas in same manner, transferring to 2 more bowls.
  • Melt remaining 2 tablespoons butter in skillet over moderate heat, then add brown sugar, cream, cardamom, and a pinch of salt and simmer, stirring occasionally, until sauce is slightly thickened, about 2 minutes. Remove from heat and stir in lime juice.
  • Spoon sauce over bananas and ice cream.

1 vanilla bean, split
6 ripe bananas, sliced 1/8 inch thick
1/2 cup packed dark brown sugar
1 cup heavy cream
3 tablespoons granulated sugar
1 cup sour cream

Steps:

  • Melt butter in large saute pan. Add vanilla bean and stir until the vanilla bean seeds begin to appear in the butter.
  • Add the bananas and stir about one minute. Add brown sugar and toss gently until bananas are evenly coated and sugar has melted, about 3 minutes. Remove vanilla bean and cool. This may be done early in the day. Do not refrigerate.
  • An hour or so before serving, whip the cream with the granulated sugar until firm peaks form. Beat in the sour cream just enough to combine.

⅓ cup all-purpose flour
¼ teaspoon salt
3 eggs, beaten
2 cups milk
½ teaspoon vanilla extract
2 tablespoons butter, softened
2 bananas, peeled and sliced
½ (12 ounce) package vanilla wafer cookies

Steps:

  • In medium saucepan combine sugar, flour, and salt. Add eggs and stir well. Stir in milk, and cook over low heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling slightly. Stir in vanilla and butter until smooth.
  • Layer pudding with bananas and vanilla wafers in a serving dish. Chill at least one hour in refrigerator before serving.

1 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
3 cups 2% milk
2 large eggs, lightly beaten, room temperature
3 tablespoons butter
1-1/2 teaspoons vanilla extract
2 large firm bananas
1 cup heavy whipping cream, whipped

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., In a large saucepan, combine sugar, cornstarch, salt and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Stir a small amount of hot filling into eggs; return all to pan. Bring to a gentle boil; cook and stir 2 minutes longer., Remove from heat. Gently stir in butter and vanilla. Press plastic wrap onto surface of custard; refrigerate, covered, 30 minutes., Spread half of the custard into crust. Slice bananas; arrange over filling. Pour remaining custard over bananas. Spread with whipped cream. Refrigerate 6 hours or overnight.
