Steps:
- Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
- Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).
- Remove from the heat and stir in the apple cider vinegar. Taste and add a bit of additional salt and pepper if you like, or a splash more vinegar if you'd like to add more zippy and acidic flavors. Sprinkle with thyme. Serve warm.

Steps:
- 1 Heat 1 tablespoon of the oil over high heat in a very large nonstick skillet with a tight-fitting lid (you may have to do this in 2 batches if your skillet is less than 15 inches across)
- 2 Add the kielbasa pieces and cook, stirring occasionally, until some of the pieces have browned or caramelized on the edges and the sausage is fragrant
- 3 Add the cabbage (on top of the kielbasa), piling it higher than the top of the skillet as needed
- 4 Add the water and cover; cook for about 10 minutes, checking once or twice to stir as the cabbage wilts
- 5 When all of the liquid has evaporated, remove the lid and toss or stir the cabbage so the kielbasa pieces are evenly distributed
- 6 Season with the salt and pepper, mixing well
- 7 Add a drizzle or two of oil, if desired; the mixture should be shiny
- 8 Transfer to a serving platter or individual plates; serve warm

- Heat oil in a large skillet on medium-high heat. Add the sausage and cook, stirring occasionally, until it's nicely browned (7-10 minutes). Turn the heat down to medium once it gets going. Remove the kielbasa from the pan and set aside once it's nice and crisp.
- Add the cabbage to the pan and cook uncovered for 10-15 minutes, stirring fairly often. The cabbage at the bottom of the pan will start to wilt after a few minutes and it will become easier to stir. The onions will also start to lightly brown and become more flavorful.
- Once the cabbage is tender-crisp and cooked to your liking, add the garlic and paprika. Stir until it's combined. Add in the sausage and cook for a couple more minutes until it's heated through. Season with salt & pepper to taste. Serve immediately.

- Prep the cabbage and chop your onion. I just slice the cabbage thin (cut out the core) and chop the onion like usual.
- Add the cabbage to the pan and toss/stir it as best as you can (use 2 spoons or tongs to make it easier). Don't worry, as it cooks the cabbage goes down and it becomes more manageable. Stir/toss it often and let it cook until it's just about as soft as you want it (about 10-15 minutes).
- Add in the paprika and garlic. Cook it for a couple more minutes. If the cabbage starts to brown too quickly, turn the heat down. Some browning is good - it adds extra flavor.

- Dump the onion and garlic in the pan along with the whole grain mustard, salt and pepper. Saute for about 2 minutes.
- Add the cabbage a bit at a time, mixing to coat as you do. Once it is all in the pan, reduce heat to medium and cover to cook cabbage. Cook for about 6-7 minutes, stirring a couple times to evenly cook.
