2 cups low-fat cottage cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 eggs, beaten
½ cup grated Parmesan cheese
1 pinch garlic powder, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cottage cheese, spinach, eggs, and Parmesan cheese together in a bowl; pour into an 8-inch square baking dish and smooth into an even layer.
  • Bake in preheated oven until the cheese is bubbling along the edges, 20 to 30 minutes. Season with garlic powder, salt, and pepper.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine cottage cheese, Swiss cheese, eggs, onion, bread crumbs and spinach. Transfer to an 8x8 inch baking dish.

Here's what you need: paneer, yellow bell pepper, red bell pepper, red onion, salt, paprika, black pepper, coriander powder, ginger garlic paste, olive oil, chili flake, fresh cilantro leaf, whole wheat flour, olive oil, salt, water

Number Of Ingredients 16

1 package paneer
½ yellow bell pepper, finely chopped
½ red bell pepper, finely chopped
½ red onion, finely chopped
salt, to taste
½ teaspoon paprika
½ teaspoon black pepper
½ teaspoon coriander powder
1 teaspoon ginger garlic paste
2 tablespoons olive oil
chili flake, to taste
fresh cilantro leaf, for garnish, finely chopped
1 ½ cups whole wheat flour
3 teaspoons olive oil
salt, to taste
water

Steps:

  • In a large mixing bowl, mix the whole wheat flour, salt, and olive oil. Add water as per requirement and knead until soft round dough is formed. Cover the dough and let sit for 30-45 minutes.
  • Preheat the oven to 400°F for about 15 minutes before rolling out the dough.
  • In the meantime, heat 2 tbsp olive oil in a shallow pan. Add onions and cook.
  • Gradually add the 2 varieties of bell peppers and salt and mix. Then add the paneer, paprika , black pepper and coriander powder.
  • Mix for a few minutes until all ingredients are well combined.
  • Divide the dough into 4 small balls and roll each of them into a 6-8 inch circle. Make sure to save some dough for making the handles of the basket.
  • Grease the rolled dough on both sides with olive oil.
  • Using a greased muffin tray, place the dough circles into the tray cavities, creating mini-baskets. Bake for 5-7 mins or until the baskets have become crispy and turned golden brown.
  • Use the remaining dough to make the handles of the basket by rolling them into a semicircle and cooking them in a skillet until golden brown.
  • Once the baskets are baked, take them out of the oven and let them cool for a few minutes. Slowly remove the baskets from the cavities and fill with vegetable and paneer filling.
  • Once filled, take the handles and carefully place atop the filling to complete the baskets.
  • Garnish with some chili flakes and cilantro leaves and serve hot.

1/3 cup sugar
1/3 cup cream cheese (light, not whipped type)
1/4 cup melted butter
1 tablespoon grated orange rind
2 tablespoons fresh orange juice
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
1 cup sliced strawberry
1 cup raspberries
1 cup blueberries
1/4 cup red currant jelly
1 tablespoon fresh orange juice

Steps:

  • Cake------------.
  • Preheat oven to 350 degrees.
  • Place all ingredients for cake in food processor.
  • Pulse together until batter forms.
  • Spoon into buttered 8 inch square cake pan.
  • Bake for 45 to 50 minutes or until cake tester inserted in centre comes out clean.
  • Topping------------.
  • Combine berries.
  • Melt red currant jelly with orange juice.
  • Let cool slightly, stir into berries.
  • Top cake with berry mixture and cut into squares to serve.
  • Variation------------.
  • If you don't have a food processor, you can use a blender to combine the ingredients for this cake.
  • Process the eggs, cottage cheese and cream cheese until smoth, then add the remaining cake ingredients and process until combined.
  • Proceed as directed above.
  • (An electric mixer is not recommended for preparing this recipe as it changes the texture of the cake).
