This is one of my favorite cookie recipes that has been passed down to me from my Grandmother. Friends and family love them-- they are so addictive!

½ cup butter
¾ cup white sugar
1 egg, beaten
1 cup quick cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
  • Drop teaspoonfuls of dough onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

Number Of Ingredients 12

1 cup (2 sticks) butter, do not sub
1 cup sugar
2/3 cup flour, sifted
1/2 tsp. salt
2 cups quick cooking oats
1/4 cup milk
OPTIONAL CREAM FILLING:
1/2 cup unsalted butter
4 cups powdered sugar
1 dash salt
3 Tbl. bailey's irish cream
1 Tbl. milk, more if needed

Steps:

  • 1. Heat oven to 375°. Melt butter in saucepan; stir in remaining ingredients, mixing well. Drop by 1/2 teaspoonful about 3 inches apart on a greased and floured cookie sheet. Spread thinly. Bake for 5-7 minutes and WATCH CAREFULLY! Let stand a few minutes before removing from pan. *These can also be rolled and filled. If they cool too much, pop back in the oven to just soften.
  • 2. Cream filling: Cream butter until very light and fluffy. Add salt, and slowly add confectioners sugar. Do not run the mixer above low, or the sugar will spray all over your kitchen. Add a couple of spoonfuls at a time until it has all been absorbed into the butter. Add Bailey's and milk until pipeable consistency is achieved. Spoon into pastry bag and pipe into lace cookie rolls. (Add into each end.) Ends can further be dipped or sprinkled with candy jimmies if desired.

1 cup chopped pecans
1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1 egg
1/2 cup butter, melted
1 teaspoon vanilla extract
Pecan halves

Steps:

  • In a food processor, combine chopped pecans and sugar; cover and process until nuts are ground. Transfer to a small bowl; add flour, baking powder and salt. In a bowl beat egg; add butter and vanilla. Stir into pecan mixture. , Drop by teaspoonfuls about 3 in. apart onto lightly greased foil-lined baking sheets. Place a pecan half in the center of each cookie. Bake at 325° for 8-10 minutes or until golden brown and lacy. Allow cookies to cool completely before carefully removing from foil.

Lacey Cookies are the prettiest cookies that are surprisingly easy to make. Drizzle or coat in chocolate to make them extra divine!

Number Of Ingredients 8

2 ounces pecans, 57g
4 tablespoons unsalted butter, 2oz, 57g
1/2 cup granulated sugar
2 tablespoons liquid honey, 30ml
1/4 cup all-purpose flour, 1.5oz
pinch of salt
1 teaspoon pure vanilla extract
1/2 cup chocolate chips, any kind, semisweet used here

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat and set aside. In a food processor, process the pecans until finely ground. You should end up with 1/2 cup of ground pecans. Set aside. In a medium saucepan, combine the butter, sugar and honey over medium heat. Cook, stirring, until the butter is melted and the sugar is dissolved. Bring just to a boil and then remove from the heat. Stir in the ground pecans, flour, salt and vanilla until just combined. Let the batter cool for 4-5 minutes. Drop by the teaspoonful onto the prepared baking sheet, leaving at least 3 inches between the cookies. You should have 6-8 per baking sheet. Bake for 10-12 minutes, or until they are evenly browned. Let cool on the baking sheet for several minutes until they start to firm up and then transfer the cookies to a wire rack to cool completely. In a small bowl, melt the chocolate chips in the microwave at 50% power, stirring after every 30 seconds until almost completely melted. Continue stirring until the chocolate is totally melted and then drizzle it over the cooled cookies. Let the chocolate set and then store the cookies in an airtight container at room temperature for 3-5 days.

This is a delicious sandwich cookie. My mom's recipe originally called for a layer of semisweet chocolate in between 2 lace cookies, but I decided to try Nutella® instead and love the result! Store in an airtight container so cookies stay crispy.

1 cup butter, melted
1 cup white sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups quick-cooking oats
1 cup ground pecans
1 teaspoon baking powder
1 (13 ounce) jar chocolate-hazelnut spread (such as Nutella®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with silicone baking mats or aluminum foil, shiny side down.
  • Beat melted butter, white sugar, and brown sugar together using an electric mixer in a large bowl. Add eggs one at a time, beating after each addition. Beat in vanilla extract. Stir oats, pecans, and baking powder into the batter.
  • Drop batter onto the prepared sheets, 1 teaspoon at a time, spaced 3 inches apart; batter will spread out very thinly while baking.
  • Bake in the preheated oven, watching very carefully, until edges just start to brown, 6 to 8 minutes. Keep cookies on the baking sheets; they will finish baking as they cool and harden. Cool completely before removing from the baking sheets, at least 10 minutes.
  • Choose 2 cookies that are the same size. Spread chocolate-hazelnut spread very thinly on 1 cookie and sandwich the other on top. Continue until all the cookies are paired and filled.

These are such tasty cookies, I really do love them, and they are so good with a cup of vanilla tea!!

1/2 cup unsalted butter
1/2 cup packed golden brown sugar
2 tablespoons heavy cream
1 tablespoon light corn syrup
1/2 teaspoon vanilla
3/4 cup quick-cooking irish oatmeal
1/4 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • Using electric mixer and paddle attachment, beat first 5 ingredients in large bowl until light and fluffy. Add oatmeal, flour and salt. Beat just until soft dough forms. Transfer dough to waxed paper; shape dough into ball. Refrigerate until firm, about 30 minutes.
  • Preheat oven to 350°F Line baking sheet with parchment paper. Using 1 tablespoons dough for each, shape dough into twelve balls. Place 3 balls on prepared baking sheet, spacing evenly apart. Flatten dough balls with your palms. Bake until golden brown and "lacy", about 10 minutes. Cool cookies on baking sheet until firm, about 2 minutes. Using metal spatula, transfer cookies to rack and cool completely. Repeat with remaining dough balls,.

I got this from my finish work pal Riina, we got them at work one day and they were so tasty that i requested the recipe. I came come and started baking right away. DH loved them too so they are a real winner in our family.

2 cups rolled oats
150 g butter, softened
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon baking powder
2 teaspoons flour

Steps:

  • Blend together oats and butter.
  • Stir the remaining ingredients together and add.
  • You might need to add a little more flour or a tsp of water.
  • Drop cookies on sheet and bake at 180°C (350°F) for 10 to 15 minutes.
  • Note: You can also use only 50 grams butter and use cold brewed coffee to give the cookies a different taste. I also have made a chocolate version by folding in 1/2 chocolate chips.

(If desired, turn the cookies upside down on the sheets and, working quickly, roll them into cylinders on the sheets. If the cookies become too hard to roll, return them to the oven for a few seconds and let them soften.) Transfer the cookies to a rack and let them cool completely.
