SAUTEED FLANK STEAK

- In a mixing bowl, blend the oil, balsamic, salt and pepper. Then pour the marinade over the flank steak in a pan. Allow the steak to marinade for 20 to 30 minutes.
- For the zucchini, heat a shallow saucepan over high heat and bring 4 cups of water to a boil. Reduce the heat and add the zucchini to the water and simmer for 2 minutes. Remove from the water and place in a colander to drain.
- To prepare the steak, heat a large saute pan over high heat until the verge of smoking. Remove the steak from the marinade and remove any excess marinade before cooking. Then reduce the heat and place the steak in the pan. Cook the steak on each side for 4 to 5 minutes, turning to avoid scorching. If the steak begins to crust or brown, reduce the heat. After cooking to desired temperature, remove from the pan and allow the steak to rest.
- To build the plate, add a portion of hot potatoes, steamed zucchini and steak, sliced on bias. Then finish with the veal stock.

- Prepare bearnaise sauce according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until crisp-tender. , In a large skillet, saute crab in butter for 3-4 minutes or until heated through. Add garlic; cook 1 minute longer. Stir in lemon juice; keep warm., Grill steaks, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Top with crab mixture, asparagus and bearnaise sauce. Sprinkle with paprika.

BEEF AND ASPARAGUS WITH OYSTER SAUCE

- Slice 1/2 pound steak across the grain into strips. Marinate for 1/2 hour in 2 Tablespoons soy sauce, 1 teaspoon peanut oil and 1 teaspoon cornstarch. In wok, heat 2 Tablespoons peanut oil. Add ginger and garlic. saute until brown. Remove and discard ginger and garlic. Stir-fry meat for about 2 minutes. Add asparagus, mushrooms and onions. Stir-fry until asparagus turns bright jade green. Stir sauce ingredients together until well blended. Pour over vegetable-meat mixture. Reduce heat. Cook 1 to 2 minutes until sauce is thickened. GRILLED FLANK STEAK WITH GORGONZOLA CREAM SAUCE AND ASPARAGUS

- Melt 1 tablespoon butter in a medium saucepan over medium heat. Add the shallot and cook until tender, about 1 minute. Add the heavy cream and simmer until reduced by half. Whisk in the gorgonzola until it melts. Season with salt and pepper and keep warm.
- Heat a grill pan over medium heat. Brush the steak lightly with 1 tablespoon olive oil and season liberally with salt and pepper. Grill the steak, 4 to 5 minutes per side for medium-rare, turning once. Remove from the heat and cover with foil. Let the steak rest for 5 minutes before slicing.
- Meanwhile, combine the sugar, paprika and onion powder in a small bowl. Reserve 4 teaspoons and store the rest in an airtight container. (Seasoning will keep in the pantry for up to 6 months.) Mix the stick of softened butter with 3 teaspoons of the seasoning in a small bowl; cover and refrigerate.
- Toss the asparagus with the remaining 1 teaspoon barbecue seasoning mix and 1 tablespoon olive oil; add salt and pepper to taste. Cook the asparagus in a grill pan over medium heat until tender, turning once, about 6 minutes total. Reserve 4 stalks for another use.
- Reserve a quarter of the steak for another use; cut the rest into 1/8-inch-thick slices. Top with the gorgonzola cream sauce, reserving about 1/2 cup for another use, and serve with the asparagus and some barbecue butter.
G'S FLANK STEAK MARINADE
This is a marinade for any type of steak, but works well for tougher cuts when left for a couple of days.

- In a shallow bowl, combine soy sauce, brown sugar, lemon juice, olive oil, garlic, onion, ginger and pepper. Coat steak with marinade, cover, and refrigerate for at least 6 hours.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Grill steak for 7 to 8 minutes per side, or to desired doneness.

- Combine oyster and soy sauces along with sesame oil, sugar and cornflour in a small bowl.
- Set aside.
- Heat 1 tablespoon of the peanut oil in a wok.
- Swirl to coat.
- Add half the beef and stir fry until browned.
- Remove and set aside.
- Repeat with the remaining peanut oil and beef and remove and set aside.
- Add garlic, ginger and chilli to the wok.
- Cook for 30 seconds.
- Add onion and capsicum and stir fry for 1 minute.
- Return the beef to the pan along with the combined sauces.
- Stir to warm through.
- Serve immediately with rice.
MARINATED FLANK STEAK
A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

- In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
- Preheat grill for medium-high heat.
- Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.

- Pat steak dry with paper towels. Slice meat crosswise as thinly as possible and place in a medium bowl. Add cornstarch, 1 Tbsp. soy sauce, and 1 Tbsp. oil and toss with tongs to coat meat.
- Toss asparagus, sugar snap peas, ginger, and three-fourths of scallions in another medium bowl.
- Stir oyster sauce, mirin, vinegar, and remaining 1 Tbsp. soy sauce in a measuring glass or small bowl to combine.
- Heat 2 Tbsp. oil in a large skillet, preferably stainless steel, over medium-high. Cook vegetable mixture, shaking skillet often to move them around, just until asparagus is tender but still retains a hint of crunch, about 3 minutes. Return vegetables to bowl.
- Heat remaining 1 Tbsp. oil in skillet over medium-high. Add steak, arranging slices in a single layer, and cook, undisturbed, until undersides are browned, about 3 minutes. Using a thin metal spatula, scrape bottom of skillet and loosen meat. Add cooked vegetables and sauce to skillet and cook, tossing constantly, until meat is cooked through and sauce is thick and bubbling, about 2 minutes. Let cool slightly; season lightly with salt.
- Serve stir-fry over rice, topped with remaining scallions.
CHINESE BEEF AND ASPARAGUS WITH BLACK BEAN SAUCE
The second of my three favorite Chinese recipes, adapted from The Frugal Gourmet. Since I don't like CRISP asparagus that tastes like grass to me, I make below the suggestion that you steam the asparagus briefly. I serve this over rice but it'd be good over noodles too.

- Prepare the asparagus by washing, breaking the stem at the "natural" break point and slice diagonally into 1/2 to 1 inch pieces.
- (OPTIONAL: Steam the asparagus pieces for 3-4 minutes.) Put aside.
- Combine the marinade ingredients in a small bowl (soy sauce, ginger, sherry and cornstarch) then add the sliced meat. Mix well and let sit for about 15 minutes, stirring occasionally if you wish.
- Head a wok or large frying pan, add the oil. When it is is just beginning to smoke, add the meat, laying each piece on one side in the pan, Do not turn but cook over high heat for a moment, until the one side begins to brown. Toss-stir the meat for a moment and remove from the pan, allowing the oil to drain back into the pan. You may want to do this in two batches to keep the meat sizzling.
- Heat the pan to hot again and add the garlic. Stir-fry for a minute then add the rinsed, chopped black beans and stirfry another bit. Add the asparagus, toss with the vegetables then add the other T of soy sauce and the pinches of sugar and salt. Stirfy until the asparagus is done to your liking (probably about 5 minutes if you didn't steam it first; less if you did).
- Add the meat and its drippings and the chicken broth. Stir to make a sauce, then serve.
SAUTEED FLANK STEAK WITH ASPARAGUS IN OYSTER SAUCE

- In medium bowl, combine steak strips with ground peppercorns; mix well. Sauce: In small bow combine oyster sauce, soy sauce, stock and cornstarch; mix well and set aside. Other Ingredients: Heat wok over medium-high heat for 1 minute or until lightly smoking. Add vegetable oil and tilt to coat pan. Add ginger, garlic and onion; stir fry 1 minute or until fragrant. Add beef; cook, stirring to separate pieces,d about 2 minutes. Push beef mixture to outer area of wok; add asparagus; stir and cook asparagus for 1 minute, then mix in beef and stir fry whole mixture for 1 minute. Add sauce mixture; cook for 15 to 30 seconds or until thickened, stirring constantly. Transfer to a platter and serve immediately. Makes 4 servings.
