Excellent as a side dish or use on steaks or chicken as a sauce. Flavored with butter and dry ranch mix, these are just too easy for as good as they are. Any mushroom will work but Portabellas are outstanding

1 pound sliced mushrooms
1 (1 ounce) package dry ranch salad dressing mix

Steps:

  • Melt the butter over low heat. Mix in dry ranch salad dressing mix. Add mushrooms, and stir to coat. Cook, stirring frequently, until the mushrooms are very tender, at least 30 minutes.

These mushrooms are the quintessential topping for all types of steak. Also excellent over baked potatoes. I have people calling me and asking me for the recipe even years after I have made them for them. They are that good!!

3 tablespoons olive oil
3 tablespoons butter
1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

1 tablespoon vegetable oil
8 ounces mushrooms, of your choice sliced
1/4 cup chopped fresh sage
1/4 teaspoon salt
1/8 teaspoon pepper
1 shallot, minced
1/4 cup white wine
1/2 cup low sodium chicken broth
2 tablespoons soft cream cheese

Steps:

  • In medium saute pan, over medium high heat, heat the oil.
  • Add the sliced mushrooms, sage, shallots, the salt and pepper.
  • Cook until the mushrooms have given up most of their moisture.
  • Add wine and reduce by half.
  • Add broth and cream cheese. Stir and continue cooking until slightly thickened, about 3-5 minutes.

1 1/2 lbs assorted mixed mushrooms, quartered (or sliced, shiitake, baby bella, fresh button)
3 tablespoons butter
1 small onion, chopped
1 tablespoon sherry wine vinegar or 1 tablespoon red wine vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup heavy whipping cream
1 1/2 tablespoons chopped fresh sage
1/4 cup toasted salted pistachio nut, coarsely chopped

Steps:

  • Heat oil in a large skillet over med-high heat; add in mushrooms; cook 10 minutes (do not stir).
  • Add in butter; stir until butter melts; add in onion and next 3 ingredients; cook/stir occasionally, 4 minutes or until onion is tender.
  • Decrease heat to medium; add in cream and sage, stir well.
  • Cook/stir constantly, 1 minute or until cream thickens.
  • Transfer mushrooms to a serving bowl; sprinkle with pistachios.
