CAESAR PORK CHOPS
I am always looking for new and delicious ways to prepare pork chops. These are delicious, easy to put together and use things that are in most people's pantries. A real family pleaser. Serve with rice pilaf and a green vegetable.

Steps:
- Heat oven to 375*F. Spray a 12 X 8 inch glass baking dish with cooking spray.
- In pie pan or shallow dish, mix flour and Italian seasoning. Pour dressing into another pie pan or shallow dish.
- Coat both sides of each pork chop with the flour mixture; dip into dressing, coating both sides well. Place in baking dish. Sprinkle with cheese. Discard any remaining flour and dressing.
- Bake uncovered, 35 to 40 minutes or until pork is no longer pink in center.

- 1. Heat oven to 375. Spray 2 quart glass baking dish with non stick cooking spray. In shallow dish, combine flour & Italian seasoning; mix well. Pour salad dressing into another shallow dish. Dip both sides of chops into flour mixture, coating well. Dip in salad dressing, coating well. Place in sprayed baking dish. Sprinkle with grated Parmesan cheese. Bake 35-40 minutes or until no longer pink in center.
PORK CHOPS IN MUSTARD SAUCE
I adopted this recipe and prepared these with rice and veggies for complete meal. We loved the flavor of the sauce, and found that it didn't need the pinch of sugar. In the future, we would add some chicken broth with the beer to make more sauce for our rice, noodles or other side dishes. The original chef wrote: "I found the recipe years ago in one of my cookbooks. The original requires equal parts of sherry and chicken stock. Since I had neither and love the taste of beer when cooking pork, I just added it instead plus a pinch of sugar. YUMM"

- melt butter in a pan and saute onion.
- set onions aside.
- mix flour, salt and pepper and cover the meat with it.
- brown the meat and add the onion and beer.
- leave to simmer covered for 30min.
- put meat on a plate and stir mustard and sugar into the sauce.
- pour over the chops and serve.

Steps:
- Put oven rack in middle position and preheat oven to 325°F.
- Heat a dry 12-inch heavy skillet over moderately high heat until hot. Pat pork dry and sprinkle with salt and pepper. Add oil to hot skillet, swirling to coat, then brown chops, turning over once, about 8 minutes total. Transfer to a shallow baking pan, reserving skillet, and bake, uncovered, until cooked through, about 5 minutes. Let stand, loosely covered with foil, 5 minutes.
- Meanwhile, pour off fat from skillet, then cook shallots in butter over moderate heat, stirring, until softened, 3 to 5 minutes. Add broth and any juices from baking pan and boil, scraping up any brown bits, 2 minutes. Add mustard and cream and return to a boil, then add lemon juice and simmer until sauce is slightly thickened, about 3 minutes.

Steps:
- Preheat the oven to 325 degrees.
- Dry the pork chops on paper towels.
- Heat the fat or oil in the casserole until it is moderately hot, then brown the chops, 2 or 3 at a time, on each side for 3 to 4 minutes. As they are browned transfer them to a side dish.
- Season with salt, pepper, and 1/4 teaspoons thyme if they have not been previously marinated.
- Pour the fat out of the casserole and add the butter and garlic if using.
- Return the chops to the casserole, overlapping slightly, and baste them with the butter.
- Cover and heat the casserole until the meat is sizzling, then set in lower third of preheated oven for 25 to 30 minutes.
- Turn and baste the chops once or twice.
- Remove chops to serving platter.
- Remove all but 2 Tb. of fat from the casserole and add in the white wine.
- Boil rapidly, scraping up coagulated cooking juices until you have about 1/2 cup of concentrated sauce. Pour sauce over chops.

- Take the pork chops out of the fridge and let rest at room temp for at least 15min while you prep the rest of the ingredients. Pat the chops dry with paper towels, then season generously on both sides with kosher salt and ground black pepper.
- Pour 2 tablespoons olive oil in a large cast iron skillet and warm over high heat until shimmering. Add the pork chops, being careful not to crowd the pan. Let sear on the first side for about 3-5 minutes, until the pork forms a nice crust and releases itself from the pan. (If the pork is still stuck to the pan, it’s not done yet!)
- Flip the chops & repeat until they release from the pan again. Insert an instant read thermometer (the Thermapen is my favorite), into the center of the thickest part of the chop. Once they hit 145 degrees Fahrenheit, they’re done! Use tongs to remove the pork chops to a plate.
- Reduce the heat to medium-low and add the shallot to the pan. Cook for a minute or two, stirring often, until softened. Add the garlic and thyme, and cook about 1 minute more until fragrant.

- Heat oven to 400 degrees. Spray a foil-lined baking sheet with a rack with cooking spray. Set aside.
- Pour salad dressing into a shallow bowl. Mix parmesan cheese and breadcrumbs in a separate bowl.
- Dip pork chops in salad dressing and then coat well in the crumb mixture. Place on the rack. Sprinkle with more parmesan cheese if desired. I usually do! I can't help myself.
