Sautéed Cabbage and Apples image

After a quick sauté in butter and spices, crisp tender apples and cabbage are topped with pomegranate seeds and fresh dill.

3 cups apple (thinly sliced wedges)
3 teaspoons butter (unsalted)
2 teaspoons apple cider vinegar
2 teaspoons light brown sugar
1/2 teaspoon caraway seeds
1/8 teaspoon allspice (ground)
3 cups cabbage (thinly sliced)
salt and pepper
1/4 cup pomegranate seeds
2 tbsp fresh dill (chopped)

Steps:

  • Heat 1 1/2 teaspoons of the butter over medium heat. When the butter melts, add the apples and sauté them for about 5 to 6 minutes or until they start to soften.
  • Add the brown sugar, apple cider vinegar, caraway seeds and ground allspice and sauté for about a minute.
  • Add the cabbage and rest of the butter. Season with salt and pepper. Cook for about 2 minutes, stirring gently. Taste and adjust the seasoning.
  • Serve topped with the pomegranate seeds and fresh dill.

1/2 head red cabbage
1 Granny Smith apple
2 tablespoons butter
1 teaspoon fennel seeds, crushed
Kosher salt and freshly ground black pepper
1/4 cup red wine
Splash apple cider vinegar

Steps:

  • Core and slice the cabbage into thin slices. Slice the cheeks off the apples and cut into thin wedges.
  • In a large saute pan, add the butter and melt over medium heat. Add the cabbage, apples, fennel and salt and pepper, to taste, and saute until the cabbage softens and wilts about 20 minutes. Deglaze with red wine and stir in a splash of cider vinegar. Transfer to a serving bowl and serve.

1/2 red cabbage
3 teaspoons butter
1 onion, chopped
1 granny smith apple
1/2 cup water
2 teaspoons apple cider vinegar
2 tablespoons brown sugar
2 bay leaves

Steps:

  • Remove outside leaves of cabbage.
  • With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
  • In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
  • Add onion to pan and sauté.
  • Add chopped cabbage to pan.
  • Peel apples, chop and add to pan.
  • Combine water with vinegar, add brown sugar and bay leaves and stir.
  • Pour liquid over cabbage mixture.
  • Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

This is a great combination of flavors! It is a healthy recipe that can be made ahead of time to save time. This recipe was crafted by Kurt Gutenbrunner, the chef at Manhattan's Wallsé and Cafe Sabarsky, who willingly offers his secret. MAKE AHEAD: The cabbage and apples can be refrigerated overnight.

3 lbs head green cabbage, halved cored and coarsely shredded (12 cups)
1 cup riesling wine
2 tablespoons fresh lemon juice
1 1/2 tablespoons sugar
1/4 cup extra virgin olive oil
1 large onion, thinly sliced
2 granny smith apples, peeled halved, cored and sliced 1/8 inch thick
salt & freshly ground black pepper

Steps:

  • In a large bowl, toss the cabbage with the wine, lemon juice and sugar. Let marinate for 1 hour, tossing often.
  • In a large deep skillet, heat the olive oil. Add the onion and cook over moderate heat until golden, about 8 minutes. Add the cabbage and its marinade and cook over moderately high heat, tossing, until wilted, about 5 minutes. Cover and cook over moderately low heat, stirring occasionally, until almost tender, about 20 minutes. Add the apples and toss well. Cover and cook, stirring occasionally, until the apples are just tender, about 10 minutes. Season with salt and pepper and serve.

Cabbage is one of my favorite veggies, so I am always looking for good recipes for cabbage, this is a really great one, and all ingredients can be adjusted to suit taste. This can also be made using green cabbage. I have even added a heaping tablespoon of garlic in with the onions. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!

1 medium red cabbage
1/4 cup brown sugar (can use more if desired)
1/4 cup apple cider
salt and black pepper
2 medium onions, coarsley chopped
1 bay leaf (option but good to use)
2 -3 tablespoons bacon fat
2 tablespoons oil
1/3 cup beef stock
4 apples, peeled and julienned
1/4 cup apple butter, plus
2 tablespoons apple butter (or to taste) or 1/4 cup applesauce (or to taste)

Steps:

  • Cut cabbage into quarters, then coarsely shred.
  • In a large frypan, heat oil and bacon fat (or butter if using).
  • Add in onions, and saute until tender (about 5 minutes).
  • Add in shredded cabbage, brown sugar, vinegar, bay leaf (if using) and stock; simmer uncovered for about 20-25 minutes.
  • Cover the pan and cook for about another 30 minutes, stirring occasionally or until cabbage is desired tenderness.
  • Stir in apples and apple butter or apple sauce.

1 tablespoon olive oil
1 head cabbage, halved, cored and thinly sliced
1 shallot, finely chopped
1 tart apple, chopped
1 tablespoon cider vinegar
1/2 cup walnut pieces
2 teaspoons lemon juice

Steps:

  • In a large sauté pan, heat olive oil over medium heat. Add cabbage. Cook until it starts to soften, stirring occasionally, about 5 minutes.
  • Add chopped shallot and stir to distribute. Let cook about a minute.
  • Add apple pieces and stir again. Cook for 3-5 minutes or until apple starts to soften.
  • Add the cider vinegar and walnuts. Stir and cook until heated through.
  • Squeeze a little lemon juice on top. Enjoy!

  • Add the onion and a pinch of salt. Cook for 3 minutes and then add in the shallot. Cook another 3 minutes, stirring. Add in the cabbage and 2 TSP salt. Saute for 5 minutes, stirring occasionally. Add the garlic and cook for another 2-3 minutes, stirring constantly so the garlic does not burn.
  • Remove the cover and add in the apples and cider vinegar. Stir to incorporate. Cover and cook another 10-12 minutes, or until the apples have started to soften.
