GRANDMA'S CHICKEN NOODLE SOUP
This is a recipe that was given to me by my grandmother. It is a very savory and tasty soup and I believe that all will like it. If you would like to add even more flavor, try using smoked chicken!!

Steps:
- Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil for 8 minutes, or until tender. Drain, and rinse under cool running water.
- In a large saucepan or Dutch oven, combine broth, salt, and poultry seasoning. Bring to a boil. Stir in celery and onion. Reduce heat, cover, and simmer 15 minutes.
- In a small bowl, mix cornstarch and water together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly. Stir in noodles and chicken, and heat through.

SAVORY SOUR CHICKEN NOODLE SOUP
Steps:
- Cook the egg noodles in 1 quart boiling water until al dente, about 3 minutes. Drain and toss with a small amount of toasted sesame oil to prevent sticking. Set aside.
- Have the stock heating in a pot.
- Heat a large wok over high heat. When the wok begins to smoke, add the peanut oil. Stir-fry the ginger and chile for less than 30 seconds. Add the chicken and let settle for 1 minute before stir-frying. As the chicken begins to brown, add the rice wine and stir-fry until the wine has almost evaporated. Carefully stir in the tofu. Then add in the mushrooms, bamboo shoots and the white parts of the napa cabbage, and stir-fry for 1 minute. Add the hot stock. Bring to a boil, and then reduce to a simmer. Season the soup with the soy sauce, black rice vinegar, salt and ground white pepper. Stir in the green parts of the napa cabbage and continue to simmer for 10 minutes, skimming off any foam that arises.
- Divide the noodles into 4 bowls. Ladle some of the soup over the noodles and garnish with scallions and cilantro.
STEVE'S CHICKEN NOODLE SOUP
Easily made, this is a wonderfully flavorful chicken noodle soup that will cure any common disease and make your guests happy.

Steps:
- In a large skillet over medium heat, cook onions in oil until translucent. Stir in celery, carrot, rosemary, tarragon, thyme and parsley and cook, covered, until vegetables are soft, 5 to 10 minutes.
- Transfer vegetable mixture to a large pot and pour in chicken broth. Simmer over low heat, covered, for 30 minutes.
- Stir in chicken breast pieces and egg noodles and simmer, covered, 30 minutes more. Season with salt and pepper.

SAVORY CHICKEN NOODLE BAKE
A nice casserole dish for a weeknight supper. Homey comfort food at it's best. You can add some extra and/or even different cheeses to this before putting it into the oven.

Steps:
- Preheat oven to 350° & grease a 2 1/2- to 3-quart baking dish.
- In large skillet or saucepan over low heat, melt butter; sauté mushrooms until tender.
- Blend in flour, stirring until smooth and bubbly.
- Gradually add chicken broth, milk, pimiento, and salt and pepper; stir constantly until sauce is thickened.
- Stir in chicken, peas, and 1/2 cup of Parmesan cheese.
- Spoon the mixture into the prepared baking dish; sprinkle some Parmesan cheese over top.
- Bake chicken noodle casserole 20 to 25 minutes, until hot and bubbly.

- Place whole rinsed chicken in a large stock pot with a lid. Fill 3/4 full with water. Add 1 cup chopped onion, 1 cup chopped celery, 3-4 chicken bullion cubes.
- Reduce heat and cover pot. Cook on medium-low heat for 1 1/2 hours until chicken is completely cooked and legs are pulling away from the body of the chicken. Add water as needed and check occasionally during cooking process.
- Pull frozen noodles out of freezer and leave to thaw while chicken is cooling. Allow chicken to cool for 1 hour. DO NOT THROW AWAY CHICKEN STOCK.
