SAVORY CRACKERS (GLUTEN/CASEIN FREE)
Homemade crackers. My family says that they taste just like "Breton" crackers. Below, I actually used more starch and less flour combination (still totaling 3/4 cup). I also didn't really measure the Italian seasoning or garlic powder.

Steps:
- Preheat oven to 350°F and grease cookie sheet, use parchment, or use a silicone baking mat (that is what I used).
- Mix together flours, gum, soda, salt, seasonings.
- Mix together oil, honey, and stir into flour mix. Add sesame seeds, then milk and vinegar. Start with the 2 tablespoons of milk, and see if you need that splash more.
- Roll out thinly, then use a cookie cutter to make into crackers (I used a small circle, about the size of Ritz).
- Bake for about 12 minutes (they start to brown nicely, then flip and bake for about 4-8 more. Depends how thick you made 'em!
- *Note: there are some I've stored in the freezer, and we haven't re-tried them yet, but I'll update when we do!

- Preheat the oven to 350°F and line a large baking sheet with parchment paper. In a large mixing bowl, combine the sweet potato, oat flour, salt, rosemary, garlic powder, and coconut oil and stir well to create a uniform dough.
- Transfer the dough to the prepared baking sheet and top it with another sheet of parchment paper. Use a rolling pin to roll the dough into a thin layer, about 1 ⁄8 inch thick. The thinner you roll the dough, the crispier your crackers will get, and the faster they will cook. Gently remove the top layer of parchment paper and use a pizza cutter to cut the crackers into 1-inch squares.
- Bake for 15 minutes, then remove the baking sheet from the oven and use a spatula to flip each cracker for even baking (they should split apart easily where you cut them).
- Return the pan to the oven to bake until the crackers are dry and crisp, about 15 minutes more. Be sure to watch the crackers closely toward the end of the baking time, since the edge pieces will cook faster than the center pieces, and the crackers won’t taste as good if they turn dark brown. Remove any pieces by the edge of the pan when they are done and continue cooking the center crackers until they are all dry, checking on them every 3 to 5 minutes. Allow the crackers to cool completely for the crispiest results.
HOMEMADE SAVORY OAT CRACKERS (GLUTEN-FREE) - SALTED PLAINS

- Place a few ice cubes in a small bowl and fill with water (6 tablespoons). This will get your water nice and cold. Set aside.
- Preheat the oven to 400 degrees Fahrenheit. Place a piece of parchment (about 12x16) on a cutting board or pastry board.
- In the bowl of a food processor, place oat flour, brown rice flour, salt, pepper, sugar, and baking powder. If using dried herbs, also add in at this time. Pulse a few times until the ingredients are incorporated. Add the pieces of butter and pulse until mixture becomes a course meal. Add 6 tablespoons of cold water. Pulse until mixture comes together. When ready, the mixture will look and feel like wet sand.
- Turn dough out onto parchment paper. Press down into a rectangle. Cover with another sheet of parchment paper and roll dough into a large rectangle. It should be about 1/16" thick. If it is thicker, you will have more cookie-like crackers. Using a pizza wheel, slice off the uneven ends and then transfer the parchment to a 12x18 cookie sheet. If using fresh herbs, gently press leaves into dough.
