SAVORY HERB CHEESECAKE
"I came across the recipe for this scrumptious appetizer while taking an herb gardening course," says Lee-Ann Hamilton, Louisburg, Kansas. "It was the hit of the buffet at our 'End of Class' party.

Steps:
- In a large bowl, combine the cream cheese, 1 cup sour cream and soup; beat until smooth. Add egg substitute; beat on low just until combined. Add the Romano cheese, basil, thyme, cornstarch, tarragon, garlic and pepper; beat just until blended., Pour into a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 350° for 35-45 minutes or until center is almost set. Turn oven off; leave cheesecake in oven with door ajar for 30 minutes., Remove from oven. Carefully run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Just before serving, spread with remaining sour cream. Garnish with chopped peppers and chives. Serve with crackers or fresh vegetables.

SAVORY CHEESE AND HERB BISCUITS
Steps:
- Heat the oven to 425 F.
- Grease a baking sheet and dust with flour or line it with parchment paper.
- Sift together flour, baking powder, salt, and dry mustard.
- Work the butter into the dry mixture with fingers or a pastry blender. The mixture should resemble coarse meal.
- Add the shredded cheese, Italian seasoning, chopped parsley, and milk.
- Mix together lightly with a fork, just until moistened.
- Turn the dough out onto a floured surface and knead gently a few times, just until smooth. Don't overwork
- Roll out about 3/4-inch thick; cut out rounds or squares and arrange them on the prepared baking sheet.
- If desired, brush the tops with milk.
- Bake in the preheated oven for 15 to 20 minutes, or until browned.

SAVORY CHEESE PALMIERS
Steps:
- Sprinkle work surface with 1 tablespoon grated Parmesan.. Unfold thawed puff pastry sheet on Parmesan. Lightly beat egg with 1 tablespoon of water. Lightly brush puff pastry with egg wash.
- In a medium bowl, combine 2 tablespoons Parmesan, Italian cheese blend, and paprika. Sprinkle over surface of pastry sheet. Lightly press cheese into pastry.
- Fold top and bottom edges of pastry to the center. Next, fold pastry in half from left to right. Now, fold in half top to bottom. Wrap and freeze at least 30 minutes.
- Preheat oven to 400 degrees F. Line baking sheet with parchment paper; set aside.
- Cut 1/8-inch thick slices starting a the shortest edge. Sprinkle "faces" of palmier with remaining parmesan cheese and lay "face" up on prepared baking sheet, two inches apart.
- Bake in preheated oven for 20 minutes. Serve warm or at room temperature.
HERB-CHEESE PALMIERS

- Preheat oven to 375 degrees, with racks in upper and lower thirds. On a lightly floured surface, roll out puff pastry to a 10-by-16-inch rectangle. Brush with olive oil and sprinkle with cheddar, Parmesan, herbs, and salt. Fold dough lengthwise into thirds (like a letter), then fold in half. Refrigerate until slightly firm, about 10 minutes. Cut dough crosswise into 1/4-inch-thick slices (you should have about 38).
- Place slices on 2 large baking sheets. Refrigerate until firm, about 30 minutes. (To store, cover with plastic wrap and refrigerate, up to 1 day.) In a bowl, combine egg yolk with water. Brush tops of palmiers with egg wash. Bake until golden brown, about 25 minutes, rotating sheets halfway through.

- Heat oven to 400°F.
- Mix cream cheese spread, 1/4 cup Parmesan, basil and egg yolk with wire whisk until well blended.
- Flatten each bread slice with rolling pin. Spread 1 side of each slice with 1 rounded Tbsp. cream cheese mixture. Starting at short end, roll up tightly. Brush each roll with butter; roll in remaining Parmesan. Slice each roll into 3 pieces.
- Place pieces, seam-sides down, on greased baking sheet. Bake 12 to 15 min. or until edges are lightly browned. Serve immediately.
