SAVORY MASHED SWEET POTATOES
These savory mashed sweet potatoes are ready in less than 25 minutes, making them a great addition to your weeknight routine, or a last-minute party or potluck side. Naturally sweet on their own, sweet potatoes pair perfectly with savory flavors such as chopped fresh thyme, salt, and pepper. Serve these mashed sweet potatoes as a side to proteins such as chicken, turkey, or pork, and you've got an easy meal ready in a flash. Also, unlike sweet potato casseroles, or buttery mashed potatoes, this side gives you all the comfort without all the calories. You can enjoy this creamy side for less than 205 calories per serving and pack in 4 grams of fiber.

- Place sweet potatoes in a large saucepan; cover with water to 2 inches above potatoes. Bring to a boil over high; reduce heat to medium-low, and simmer until tender, about 18 minutes. Remove from heat. Drain and return potatoes to saucepan.
- Combine butter and olive oil in a small skillet over medium; cook until browned and fragrant, about 3 minutes. Remove from heat; stir in thyme.
- Add milk, salt, and pepper to sweet potatoes; mash with a potato masher to desired consistency. Drizzle with butter mixture; gently stir once or twice. Garnish with thyme leaves.

- Cook lima beans according to package instructions. While beans are cooking, mince garlic and in a small saucepan cook in butter over moderately low heat, stirring, until pale golden.
- Drain beans in a large sieve and transfer to a food processor. Add garlic mixture, milk, nutmeg, and salt and pepper to taste and purée until smooth.

- Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1″. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
- Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
- Promptly add almost all of the green onion and parsley, reserving a small amount of each for garnish. Add the garlic, and stir to combine. Then stir in most of the sour cream (reserve roughly 1 tablespoon for garnish), all of the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt (I usually add another 1/4 to 1/2 teaspoon) and freshly ground black pepper.
- Transfer the mashed potatoes to a serving bowl and swirl the reserved sour cream onto the top with a spoon. Sprinkle with the reserved green onion and parsley, drizzle the top lightly with olive oil, and finish with a sprinkle of pepper.

- Steam or boil the sweet potatoes until it is easy to slide a thin knife in and out, about 15 minutes.
- If boiling, drain the potatoes over a colander. If steaming, remove the potatoes and drain the water from the pot.
- Return the potatoes to the pot set over medium-low heat. Mash the potatoes for 20-30 seconds – just until excess liquid has cooked off. (This will remove any residual water in the pot and on the potatoes.) Remove the pot from the heat and mash the potatoes until a chunky consistency is achieved.
