Peas and Carrots image

For a quick and easy side dish, make three-ingredient peas and carrots. Simply seasoned with butter, salt, and pepper, it's a crowd-pleaser.

1 (16-ounce) package baby carrots
1 (16-ounce) package frozen baby peas
3 tablespoons butter
Salt (to taste)
Black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Rinse the carrots, drain them, and place in a medium saucepan.
  • Cover the carrots with cold water. Bring to a boil over high heat. Boil for 2 minutes, then turn off the heat. Let the carrots stand in the hot water for another 3 minutes.
  • Test a carrot. If it's tender, continue with the recipe. If not, let stand 2 to 4 minutes longer in the hot water.
  • When the carrots are tender, add the frozen peas to the saucepan and put the pan back on high heat. Cook for 2 minutes.
  • When the peas are hot, drain the vegetables well and return to the saucepan.
  • Add the butter. Toss the vegetables in the pan over medium heat to melt and coat. Season the peas and carrots to taste with salt and pepper.
  • Serve immediately and enjoy.

Quarter 1 1/2 pounds carrots lengthwise and toss with 2 tablespoons olive oil, 1 teaspoon ground cumin, 1/2 teaspoon each ground coriander and ground ginger, and salt to taste. Spread on the hot baking sheet and roast 20 minutes; stir in 1 cup thawed frozen peas and roast 4 more minutes. Toss with chopped parsley and lime juice.

Add orange juice, sugar, and butter, swirling skillet to coat carrots and peas, and cook until liquid is reduced to a syrupy glaze, about 30 seconds. Season with salt and pepper.

  • Peel and trim the carrots and slice them thin.
  • Place the carrots in a saucepan and cover with salted water. Bring to a boil and simmer for 1 minute. Add the snow peas. Return to a boil and cook for 1 minute. Drain.
  • In a nonstick skillet, melt the butter and add the olive oil. Add the sesame seeds. Cook, stirring until lightly browned; add the carrots and the snow peas, the cumin and the scallions. Check for seasoning, and saute, stirring, for 1 minute.

1 cup butter
2 tablespoons brown sugar
2 tablespoons honey
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 tablespoon chopped fresh parsley, or as needed

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add pears; cover and steam until tender, 5 to 10 minutes. Transfer pears to a bowl. Add carrots to steamer, cover, and cook until tender, about 10 minutes; add carrots to bowl with pears.
  • Heat butter in a saucepan over medium heat; stir in brown sugar, honey, cinnamon, and nutmeg. Bring to a simmer, stirring occasionally, until sugar has melted and glaze is slightly reduced, 5 to 10 minutes.
