Steps:
- In a medium saucepan, bring the turkey stock to a boil. In a small bowl, dissolve flour in water.
- Gradually whisk into the turkey stock. Season with poultry seasoning, salt, pepper, and celery salt. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, or until thickened.

SAVORY HERB RUB ROASTED TURKEY
The herb rub lends delicious savory flavor to the outside of your turkey, while basting keeps the meat juicy inside. Be sure to reserve the pan juices to make Perfect Turkey Gravy.

- 1. Place oven rack in lowest position. Preheat oven to 325 degrees F. Place roasting rack in shallow roasting pan. Mix sage, paprika, seasoned salt, garlic powder, pepper and nutmeg in small bowl.
- 2. Place turkey, breast-side up, in prepared pan. Sprinkle about 1/2 of the seasoning mixture inside turkey. Stuff with onion and bay leaves. Brush turkey breast with oil. Spread remaining seasoning mixture over entire surface and under skin of turkey. Add 1/2 cup water to pan. Cover turkey loosely with heavy duty foil.
- 3. Roast 1 hour. Remove foil. Roast 2 to 2 1/2 hours longer or until internal temperature reaches 165 degrees F (175 degrees F in thigh), basting occasionally with pan juices. Remove turkey from oven. Let stand 20 minutes. Transfer to platter or carving board to slice. Reserve pan juices to make gravy or to serve with turkey.
COMFORTING TURKEY COBBLER
This takes the best of a pot pie and becomes a cobbler. The rustic look of the topping ensures you don't have to worry about shaping a pie pastry. The vegetables can be changed if desired.

- Melt 1 tablespoon butter in a saucepan over medium heat. Whisk in 1 tablespoon flour to create a paste. Slowly add in water, stirring to incorporate. Stir in 1/2 cup milk and garlic base until mixture begins to bubble. Add turkey, carrots, celery, and onion and heat until warm, about 5 minutes. Mix in oregano, thyme, parsley, salt, and pepper. Remove from the heat and set aside.
- Preheat the oven to 375 degrees F (190 degrees C). Spray an 8x6-inch casserole dish with cooking spray.
- Whisk together 1 cup flour, baking powder, and salt for cobbler topping in a bowl. Cut in 3 tablespoons butter until the mixture resembles coarse meal. Gradually stir in 1/2 cup milk until dough pulls away from the side of the bowl.
- Pour turkey filling into the prepared casserole dish. Drop cobbler topping on top and sprinkle with Italian seasoning and garlic granules.
- Bake in the preheated oven until cobbler topping is golden brown, about 25 minutes.

SAVOURY TURKEY CRUMBLE
My own recipe made with minced turkey. We call it "Thatch"... I have no idea where that name came from! I use Sage and Onion stuffing mix in the topping as it's the family's favourite - but you can try YOUR favourite.

- Place veg & turkey in a flameproof casserole and cook, stirring until grains of meat are brown and separate.
- Mix 1oz of flour into water and stir into meat & veg mix.
- Add stock cubes.
- Cook until thickened, then simmer gently for 10 mins (without a lid).
- Season to taste.
- Mix stuffing, remaining flour and low fat spread until mixed to a crumbly texture (I mash with a long pronged fork).
- Spoon over the meat mixture.
- Sprinkle with the grated cheese & bake 375F/190C (170C fan) for 30 - 35 mins til top is golden.
