SKILLET NACHOS
My mom gave me a fundraiser cookbook, and this is the recipe I've used most. My whole family is on board. For toppings, think sour cream, tomatoes, jalapeno and red onion. -Judy Hughes, Waverly, Kansas

Steps:
- In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in tomatoes, corn, rice, water, taco seasoning and salt. Bring to a boil. Reduce heat; simmer, covered, until rice is tender and mixture is slightly thickened, 8-10 minutes., Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted, about 5 minutes. Divide tortilla chips among 6 plates; spoon beef mixture over chips. Serve with toppings as desired.

SKILLET CHILI NACHOS
Whip up our easy beef chili in advance, and you can get this giant pan of nachos on the table in just 20 minutes. It's all about layering the meat with tortilla chips, cheese, and beans.

- Preheat oven to 425 degrees, with rack in upper third.
- Spread 5 cups chips in a 12-inch heavy-bottomed skillet (preferably cast iron). Top with 1 cup chili, then half the beans and 1 cup cheese. Layer with remaining 5 cups chips, 1 cup chili, remaining beans, and 1 cup cheese.
- Bake until cheese is melted and bubbly, 5 to 7 minutes. Top with radishes, jalapenos, and cilantro; serve with sour cream, salsa, and avocado.
LOADED BEEF SKILLET NACHOS
These loaded nachos are ready in 15 minutes, and PACKED with taco-seasoned ground beef, black beans, corn, cilantro, and lots of CHEESE!!

- Preheat oven to 350F.
- To a large skillet, add the optional oil, ground beef, and cook beef over medium-high heat for about 5 minutes, or until cooked through; stir and crumble as it cooks.
- Evenly sprinkle the taco seasoning and stir; set aside.
- To a separate oven-safe skillet, add half the chips, evenly top with half the beef, half the cowboy caviar, and half the cheese.
- Repeat the layering process with the remaining half of the chips, beef, cowboy caviar, and cheese.
- Bake for about 10 minutes, or until cheese is melted.
- Evenly sprinkle with the green onions, cilantro, and serve immediately. Nachos are best warm and fresh.

SKILLET NACHOS
This is a snap to make. To save on chopping time, you can use 1 cup of well-drained canned or frozen (thawed) whole kernel corn instead of the zucchini.

OVEN SKILLET NACHOS
These skillet nachos are full of flavor, cheesy and can be made in less than 20 minutes! They make the perfect appetizer, lunch or dinner!

- Preheat oven to 375°F. Pour a thin layer of enchilada sauce across the bottom of a large skillet. Spread the refried beans on top and add a little salt and pepper if desired. Then sprinkle on a little bit of cheese. I like to use a mix of freshly grated mozzarella and fontina.
- Next, layer on tortilla chips with another layer of cheese (about 3/4 cup). Repeat, so that you have 3 layers of chips. Top the final layer of chips with the remaining cheese. Drizzle 2 to 3 Tablespoons of the enchilada sauce on top. Bake for 10 to 15 minutes, or until the cheese is nice and bubbly hot.
- Top with your favorite toppings, just before serving. My favorites are guacamole and pico de gallo. Serve immediately.
