Sawdust Salad image

A rich, creamy salad that can be used as a dessert when served in stemmed glasses. The preparation process appears lengthy but the results are well worth it!

1 (3 ounce) package lemon gelatin
1 (3 ounce) package orange gelatin
2 cups boiling water
1 1/2 cups cold water
1 cup banana, diced
1/2 cup pecan pieces, toasted
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 1/2 cups miniature marshmallows
3 tablespoons all-purpose flour
1/2 cup sugar
1 egg, slightly beaten
2 teaspoons butter
2 cups whipped topping
1/2 cup grated cheddar cheese

Steps:

  • Prepare 11"x7" serving dish by spraying lightly with Pam.
  • TOP LAYER:.
  • Dissolve gelatin in small medium mixing bowl in boiling water.
  • Add cold water and chill until syrupy.
  • MIDDLE LAYER:.
  • Add bananas, nuts and drained pineapple to chilled gelatin mixture and pour into serving dish.
  • Sprinkle marshmallows over top of mixture and gently push them down into gelatin.
  • Refrigerate until congealed.
  • THIRD LAYER:.
  • Mix flour and sugar in saucepan.
  • Add reserved pineapple juice, egg and lemon juice.
  • Begin cooking over medium heat, stirring constantly to prevent sticking.
  • Continue cooking until the mixture becomes so thick that it will follow the spoon around the pan like a paste, and becomes transparent.
  • Remove from heat and add butter.
  • Chill thoroughly.
  • TOP LAYER:.
  • Fold whipped topping into cooled cooked mixture.
  • Spread over the congealed salad and sprinkle with grated cheese to yield the sawdust appearance.
  • NOTE: Cooking time refers primarily to chilling time.

1 package lemon Jell-O gelatin
1 package orange Jell-O
2 cups boiling water
1 (15 ounce) can crushed pineapple, drained (reserve this juice)
1 bag miniature marshmallow
2 cups pineapple juice
1 cup sugar
2 eggs, beaten
5 tablespoons all-purpose flour
3 bananas, sliced in rounds
lemon juice
2 packages Dream Whip topping mix
8 ounces cream cheese, softened
toasted coconut

Steps:

  • 1st Step: Dissolve the lemon and orange Jello in 2 C.
  • of boiling water, then add the drained pineapple and mini-marshmallows.
  • Mix together well, pour into a 13x9 serving dish, and chill until firm.
  • 2nd Step: Add enough pineapple juice to the reserved juice that was drained from the crushed pineapple, to equal 2 C.
  • In a medium, heavy saucepan combine this juice with the sugar, beaten eggs, and the flour.
  • Whisk together until combined and cook over medium heat, stirring constantly, until thickened.
  • ***Caution:this mixture scorches easily.
  • Let cool and spread over the congealed Jello mixture.
  • 3rd Step: Toss the sliced bananas in a small amount of lemon juice and spread the slices evenly over the custard layer.
  • 4th Step: Mix the Dream Whip according to the package directions, then beat in the cream cheese until smooth.
  • Spread this mixture over the top of the sliced bananas and sprinkle with toasted coconut.
  • Chill for several hours before serving.

1 (3 ounce) package lemon flavored Jell-O® mix
1 (3 ounce) package orange flavored Jell-O® mix
2 cups boiling water
1 (20 ounce) can crushed pineapple, drained
1 (16 ounce) package miniature marshmallows
2 cups pineapple juice
1 cup white sugar
2 eggs, lightly beaten
5 tablespoons all-purpose flour
3 bananas, sliced
1 tablespoon lemon juice
2 (1.3 ounce) envelopes whipped topping mix
1 (8 ounce) package cream cheese, softened
1 cup shredded coconut, toasted

Steps:

  • In a large bowl, combine the lemon and orange gelatin powders and add the boiling water. Stir until the powders are dissolved, then stir the drained pineapple and marshmallows into the mixture and chill until firm.
  • While the gelatin mixture is chilling, whisk together the pineapple juice, sugar, eggs and flour in a medium saucepan and cook over medium heat until thick. Stir constantly and do not allow mixture to scorch. Remove from heat and let before spreading over the congealed gelatin mixture.
  • Toss the sliced bananas with the lemon juice to prevent browning of the fruit. Drain the fruit and layer the sliced bananas over the custard mixture.
  • Mix the whipped topping mix as directed on the packages and beat in the cream cheese until smooth. Spread over the bananas and sprinkle with the toasted coconut. Chill for several hours before serving.

2 1/4 pounds mixed ripe tomatoes, different shapes and colors
Sea salt and freshly ground black pepper
A good pinch dried oregano
Red wine or balsamic vinegar
Extra-virgin olive oil
1 clove garlic, peeled and grated
1 fresh red chile, seeded and chopped

Steps:

  • This is an incredible tomato salad but there are two things to remember if you want to wow your guests with something so simple. The first is that you should try to get a mixture of different, tasty, local (if possible) tomatoes in all different shapes, sizes and colors. Second, the flavor is brought out by salting the tomatoes, so don't skip this bit. Some people get worried about putting this much salt on their food, but the bulk of it will drip off, leaving you with really beautiful, intensely flavored tomatoes.
  • If you can get hold of some dried flowering oregano then do, as it has the most heavenly flavor. Feel free to use the dried stuff that you get in a little container, but it can taste a bit like sawdust when compared to the fruity, fragrant flavor you get from the flowering variety. Oregano is also great to grow in the garden.
  • Depending on the size of your tomatoes, slice some in half, some into quarters and others into uneven chunks. Straightaway this will give you the beginnings of a tomato salad that's really brave and exciting to look at and eat. Put the tomatoes into a colander and season with a good pinch of sea salt.
  • Give them a toss, season again and give a couple more tosses. The salt won't be drawn into the tomatoes; instead it will draw any excess moisture out, concentrating all the lovely flavors. Leave the tomatoes in the colander on top of a bowl to stand for around 15 minutes, then discard any juice that has come out of them.
  • Transfer the tomatoes to a large bowl and sprinkle over the oregano. Make a dressing using 1 part vinegar to 3 parts oil, the garlic and the chile. Drizzle the tomatoes with enough dressing to coat everything nicely.
  • This is a fantastic tomato salad, which is totally delicious to eat on its own. It's also great served with some balls of mozzarella or some nice, grilled ciabatta bread.

1 9-inch pie shell
1 1/2 cup flaked coconut
1 1/2 cup graham cracker crumbs
1 1/2 cup pecans, chopped
1 1/2 cup sugar
1 cup egg whites

Steps:

  • Cover pie shell with two layers of foil and bake in 450 degree F oven for 8 minutes. Remove foil and bake 4 to 5 minutes until golden brown. Cool on a wire rack.
  • Combine coconut, graham cracker crumbs, pecans and sugar in a large bowl. In another bowl, beat egg whites just until foamy; add to the coconut mixture. Mix well. Pour into prepared pie shell. Bake uncovered in 350 degree F oven for 35 minutes or until set.

1 sm box lemon jello & 1 small box orange jello
1 1/2 cups hot water & 2 cups cold water (dissolve jello in hot)
Drain 1 large can crushed pineapple(reserve 1 cup juice)
Chill jello until it begin to thicken. Add to jello 4 sliced bananas (to jello-add drained crushed pineapples before bananas. Add 1 cup mini marshmallows after bananas-push into jello.
2 . Mix 1 cup reserved pineapple juice
1/2 cup sugar
2 Tbs flour
1 well beaten egg
Cook together wnitl thick, cool, then spread over jello mixture
3 . 1 pkg dream whip-prepared, add to dream whip, 8 oz pkg cream cheese and blend with mixture, spread over custard layer

Steps:
