SAYURI'S THREE-SUGAR POUND CAKE



Sayuri's Three-Sugar Pound Cake image

My personal pound cake recipe that I developed over the years. This pound cake is very good and, as the name suggests, uses three different kinds of sugar.

1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
⅔ cup milk
3 teaspoons vanilla extract
¾ cup butter, softened
½ cup white sugar
¼ cup confectioners' sugar
¼ cup brown sugar
2 egg whites
1 egg yolk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking powder and baking soda; set aside. In a measuring cup combine the milk and vanilla; set aside.
  • In a large bowl, cream together the butter and white, confectioners' and brown sugars until light and fluffy. Beat in the egg whites, then the yolk. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  • Spread batter evenly into prepared pan. Bake for 50 to 60 minutes in the preheated oven, until a toothpick inserted in the center of the cake comes out clean. Cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

8 medium firm but ripe plums, halved and stoned
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 pinch ground aniseed
1 pinch ground cloves
1 pinch ground black pepper
180 g butter, at room temperature
3/4 cup caster sugar
1 teaspoon vanilla extract
4 eggs, lightly beaten (M)
1 3/4 cups plain flour
1/2 teaspoon sea salt
1 teaspoon baking powder
1/2 a cup icing sugar
lemon juice

Steps:

  • Cut each plum half into 3 wedges and set aside. Combine the sugar, cinnamon and other spices in a bowl and set aside.
  • Cake:
  • Beat the butter, sugar and vanilla until pale and light. Gradually beat in the eggs.
  • Combine the flour, salt and baking powder and gently mix into the butter mixture. Don't over beat or the cake will be tough.
  • Spread half of the batter in the base of the loaf tin (app. 25cm x 13cm and 7½ cm deep) lined with parchment paper, then scatter over half of the plums. Sprinkle half of the brown sugar mixture over the top. Repeat with the remaining batter, plums and sugar.
  • Bake in the oven at 150°C fan for about 1 h 10 minutes or until a skewer inserted into the centre comes out clean. Cover the top loosely with foil if getting too brown. Cool completely before removing from the tin.
  • Icing:.
  • Combine icing sugar with enough lemon juice to make a smooth, thick but pourable icing.
  • Serve dusted with icing sugar or drizzle with lemon icing.
